SPICY SHRIMP ROLLS WITH DIPPING BUTTER



SPICY SHRIMP ROLLS WITH DIPPING BUTTER image

Number Of Ingredients 10

1 pound medium shrimp, peeled & deveined
1 large or 2 small cloves garlic, minced
1 tsp crushed red chili pepper (+/- to taste)
1/2 tsp chopped fresh thyme
1/2 tsp salt
Pinch of oregano
juice of 1/2 lemon
1-1/2 sticks butter
2 Tbs olive oil
4 crusty Portuguese or French rolls, heated

Steps:

  • Sauté shrimp in hot olive oil with chili pepper till almost done. Reduce heat and add lemon juice first, then other ingredients. Heat until butter is melted & hot. Cut a pocket into each roll, by sticking a knife into one end & slicing the inside only. Press the inside open with fingers & stuff each "pocket" w/ 1/4 of the shrimp. Pour remaining butter in to ramekins for dipping.

1 1/2 quarts water
1/4 cup white vinegar
1/2 lemon, thinly sliced
2 cloves garlic, smashed
5 tablespoons Old Bay Seasoning
1/2 teaspoon peppercorn
1/2 teaspoon salt
1/4 teaspoon cayenne
4 bay leaves, crumbled
2 lbs raw shrimp in shells
1/2 lb butter
1 teaspoon salt
1 teaspoon cayenne, to taste
4 teaspoons Worcestershire sauce
2 teaspoons lemon juice

Steps:

  • In a large pot, combine water, vinegar, lemon, garlic, Old Bay,peppercorns, 1/2 tsp salt, 1/4 tsp cayenne and bay leaves.
  • Cover and bring to a boil, reduce heat and simmer 5 minutes.
  • Add shrimp, cover, return to a boil, cook 1-2 minutes and drain.
  • Melt butter in a smallpan, remove from heat and add remaining ingredients.
  • Serve shrimp with the butter sauce for dipping.

4 ounces dried thin chinese rice noodles (maifun)
12 sheets rice paper
24 medium cooked shrimp, cut in half lengthwise
1 cup fresh mint leaves
1 cup fresh cilantro leaves
1 cup fresh basil leaf
1 cup finely shredded lettuce or 1 cup green cabbage
1 cup mung bean sprouts
1 cup matchstick-size strips seeded English cucumber
1 cup matchstick-size strips peeled carrots or 1 cup jicama
2 tablespoons crunchy peanut butter
4 tablespoons hoisin sauce
2 tablespoons water

Steps:

  • Place rice sticks in large bowl; add enough hot water to cover.
  • Let stand until softened, about 15 minutes.
  • Drain.
  • Cut into 6-inch lengths; set aside.
  • Fill bowl with warm water.
  • Add 1 rice-paper sheet and turn until beginning to soften, about 30 seconds (sheet will still be stiff in a few spots).
  • Remove from water; drain on kitchen towel.
  • Lay four shrimp halves, and a pinch of other ingredients onto bottom third of sheet.
  • Leave about a half an inch free on the sides.
  • Fold bottom of rice sheet over filling, then fold in ends and roll into tight roll.
  • Place roll, seam side down, on plate.
  • Repeat with remaining rice-paper sheets.
  • Cover with damp paper towel and plastic wrap; chill.
  • Cut each roll diagonally into thirds.
  • Sauce: Heat peanut butter and hoisin in microwave or over medium heat, stir together, add a few tablespoons of water to get the desired consistency.
