SPICY SLOW-COOKED BEANLESS CHILI

Steps:
- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
- Stir tomato sauce, diced tomatoes, onion, jalapeno peppers, chili powder, cayenne, salt, garlic, and black pepper together in the crock of a slow cooker; add ground beef and stir.
- Cook on High for 6 1/2 hours (or on Low for 10 hours).

SLOW COOKER CHILI
One of my most popular recipes and for good reason! This is the best chili I've ever tasted! Slow cooking it allows for the flavors to meld and the most tender beef. Try it tonight and see why everyone loves this! Recipe makes about 12 cups.

Steps:
- Heat olive oil in a large and deep non-stick skillet over medium-high heat.
- Add onion and saute 3 minutes, then add garlic and saute 30 seconds longer. Pour onions into a 6 or 7 quart slow cooker (I like this one HERE).
- Return skillet to medium-high eat, add beef and cook stirring occasionally until beef has browned.
- Drain most of fat from beef, leaving about 2 Tbsp in with beef (this is optional, I think it ads flavor but you can drain it all if you'd prefer). Pour browned beef into slow cooker.
- Stir in diced tomatoes, tomato sauce, beef broth, chili powder, cumin, paprika, cocoa powder, sugar, coriander and season mixture with salt and pepper to taste.
- Cover with lid and cook on low heat for 5 - 6 hours.
- Stir in dark and light red kidney beans and allow to heat through, about 2 minutes. Serve warm with desired toppings.

SPICY & PAREVE CROCK-POT CHILI
We eat this on Shabbat morning instead of the typical Cholent. It's vegetarian and has a lot of flavor -- beware of the heat!

- Soak the dried beans in water overnight as per package instructions. (Add 1 tsp baking soda to the beans so they're less likely to cause stomach upset!).
- Rinse beans and put in crock pot.
- Add all the other ingredients to the crock pot, and add enough water to cover contents.
- If you desire a more "meaty" consistency, add vegetarian ground meat. (I often make without, which just means beans become the more dominant flavor.).
- Cook on "high" for at least 8 hours. Can subsequently be turned to "low" for use on Shabbat day.
- Serve with rice and cheddar cheese, if desired. Yum!

Steps:
- Brown ground beef with onion and garlic. (if using stew meat or buffalo meat only brown the meat, do not fully cook!).
- Drain meat if necessary.
- Combine meat/onion/garlic mixture with the remainder of the ingredients and put in slow cooker.
- Cook on low for 8 to 10 hours.
- Remove bay leaf prior to serving.
- I use Frontier Co-op spices that I purchase at my local health food co-op. I find their spices are extremely fresh and their 90,000 hu cayeene is great for slow-cooking recipes!
- If making this as a vegetarian chili, simply skip the meat and add more beans. I love to add black beans. Yum!
- Serve over rice or eat as is.

- Ground the beef in a pan until cooked through. Drain and add to the crock pot.
- Add the pinto beans, kidney beans, beef broth and diced tomatoes to the crock pot.
- Dice the onion, green pepper, jalapeno.
- Heat a pan with the olive oil and add the onion, green pepper and jalapeno until the onion started to caramelize/brown.
- Add the chili powder, oregano and cumin. Mix. Next add the tomato paste and mix. Add to the crock pot.
- Cook for 4 hours on high, 6-7 hours on low.

OUR FAMILY FAVOURITE CROCK POT CHILI (OAMC)
I finally got around to putting this recipe on Recipezaar! This is our family's favourite recipe. It is very kid friendly (no heat) so feel free to add something to spice it up if you like it spicy. - Brown ground beef, (I like to do a huge batch of ground beef using Tish's recipe#31008 and it works perfectly) place into a Ziploc bag and throw into the freezer.
- The night before serving, defrost overnight.
- (I usually don't, but some people argue that cooking frozen meat in the crock pot is not safe.).
- Throw everything into the crock pot and cook for 3-4 hours on high or 6-7 hours on low.
- Garnish with cheddar cheese and serve.
- I will sometimes serve this on buns as sloppy Joe's.
- **If desired you can make the entire recipe and freeze already made, then heat to serve. This recipe freezes great!**.
