MINI MEATLOAF MUFFINS
Easy Mini Meatloaf Muffins made with ground beef or ground turkey and topped with homemade bbq sauce. Easier and healthier than traditional meatloaf.

Steps:
- Preheat oven to 350 degrees F.
- In a large mixing bowl (using your hands or a large spoon), combine ground beef, breadcrumbs, onion, 1 Tbsp barbecue sauce, mustard, chili powder, garlic powder, salt, pepper and egg.
- Divide the mixture among the 12 cups in a standard muffin tin, pressing them down to fill the cup. Bake for 15 minutes.
- In the meantime, in a small bowl mix together all of the ingredients for the sauce.
- Remove the meatloaf from oven and use a paper towel to soak up any grease on the meatloaf.
- Generously spoon sauce over each mini meat loaf. Return to oven for an additional 10-15 minutes or until the meat is cooked through.
- Serve with mashed potatoes and any extra sauce.

THE BEST MEATLOAF RECIPE
A zippy simple mini meatloaf recipe that I consider the best meatloaf recipe ever! It's a true family favorite that makes a great freezer meal for nights when you're too busy to cook.

- Preheat oven to 360 degrees F. Place all the veggies and garlic in the food processor and pulse until it's the consistency of apple sauce.
- Place the veggie pulp in the bowl with the bread crumbs, herbs and spices, ground meats, egg, milk and Worcestershire.
- Toss together, then mix thoroughly by hand, but don't squeeze the mixture too much!
- Separate the mixture into 8 equal portions-I like to do this by cutting the mixture in the bowl. This ensures consistency in size. Shape each portion into a loaf, and place them on a rimmed cookie sheet lined with parchment paper.
- Mix all the ingredients for the glaze in a small bowl.
- Brush the loaves with glaze, leaving extra on the top. Place in the oven and bake until a meat thermometer reads 160 degrees F-approximately 30 minutes.
- Tint with foil and let rest 5 minutes out of the oven before serving. *For one large classic meatloaf, shape all the mixture into a loaf measuring 10x5x4 inches. Bake approximately 1 1/2 hours to 160 degrees F.

- Preheat oven to 350 degrees F (175 degrees C).
- In a large bowl, combine the egg, milk, cheese, oats and salt. Add the ground beef, mixing well, and form this mixture into eight miniature meatloaves. Place these in a lightly greased 9x13 inch baking dish.
- In a separate small bowl, combine the ketchup, brown sugar and mustard. Stir thoroughly and spread over each meatloaf.

CLASSIC SPICY MEATLOAF

- Preheat oven to 350 degrees F (175 degrees C).
- Heat butter in a large heavy skillet over medium heat; cook and stir onion, green onions, carrot, celery, and garlic until fragrant, about 5 minutes. Cover skillet with a lid and cook, stirring occasionally, until carrot is tender, about 5 more minutes. Stir 1/3 cup ketchup, Worcestershire sauce, salt, and pepper into vegetable mixture; cook until warmed through, about 1 minute.
- Mix ground beef, sausage, vegetable mixture, bread crumbs, parsley, and eggs in a large bowl; form into a loaf and place in a rectangular baking pan with 2-inch high sides. Cover loaf with remaining 1/3 cup ketchup.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

SPICY MINI MEATLOAVES

- Mix together beef, breadcrumbs, spring onions, garlic, eggs, cumin, Tabasco, coriander and some seasoning until combined. Be careful not to over-mix or the meatloaves will be tough.
- Divide the mixture into 8. Use your hands to shape each one into a small oval, like a mini meatloaf. Arrange 3 cherry tomatoes on top of each, then drizzle over the chilli sauce, if using. Cook or freeze in airtight plastic containers.
- To cook, heat oven to 200C/180C fan/gas 6. Place the meatloaves on a lightly greased, shallow baking tray and bake for 25-30 mins until the meat is cooked through.
- To cook from frozen, heat oven to 180C/160C fan/gas 4. Place the meatloaves on a baking tray and loosely cover with foil. Cook for 30 mins, then remove the foil increase the temperature to 220C/200C fan/gas 7 and cook for a further 25 mins.

- Preheat the oven to 375 degrees F. Pulse the bread in a food processor until finely ground; transfer to a large bowl. Add the onion and carrot to the food processor and pulse until finely chopped. Transfer to the bowl with the bread and add the turkey, beef, egg and 1/2 teaspoon each curry powder, salt and pepper. Mix by hand until just combined. LITTLE MOZZARELLA-STUFFED MEATLOAVES

- Preheat the oven to 425 degrees F. Line a baking sheet with parchment paper or foil.
- Break the meatloaf mixture into a large bowl and use your hands to lightly work in the onion, bread crumbs, egg, parsley, Worcestershire sauce, mustard, salt, Italian seasoning, garlic powder, and pepper until evenly mixed. Take care not to overwork the mixture.
- Space the pancetta slices, if using, a few inches apart on the prepared pan and put the cutter on top of 1 piece. Divide the meatloaf mixture into 4 equal portions. Press a piece of cheese into the center and then press the meat around it to enclose it completely. Put a portion in the cutter and press gently so that it covers the pancetta evenly, and makes a neat, flat disk. Repeat with the remaining meatloaf mix to make 4 little loaves. Remove the cutter.
- Whisk the glaze ingredients in a small bowl, and then spread about 1 tablespoon of the mixture over the top and sides of each meatloaf. Bake for 10 minutes, then reduce the heat to 325 degrees F. and bake until cooked through, about 15 minutes more. To serve, ladle some hot marinara sauce into the centers of 4 plates, and set the meatloaves on top.
MINI MEATLOAVES
Simple basic weeknight dinner. There's a mixture of pork and turkey to keep it meaty and flavorful. But you can use all ground turkey if you like. The football shape is perfect for a game night.

- Preheat the oven to 450 degrees F. Line a baking sheet with parchment paper or aluminum foil.
- Gently combine the pork and turkey by hand in a large bowl. Stir together the oats, 2 tablespoons of the ketchup, 1/2 tablespoon of the mustard, the soy sauce, oregano, egg whites, onions, 1/2 teaspoon salt and 1 teaspoon pepper in a small bowl until combined. Add the oat mixture to the meat mixture and combine by hand until just incorporated.
- Form the meatloaf mixture into 4 small football-shaped loaves, about 4 inches long and 1 1/2 inches thick, and place on the prepared pan. Stir together the remaining 2 tablespoons ketchup and 1/2 tablespoon mustard in a small bowl. Brush some of the ketchup mixture on each meatloaf.
- Bake until fully cooked, about 20 minutes. Garnish with additional fresh oregano if desired, and serve.
MINI MEATLOAVES
An updated retro favourite that makes a cheap and easy family meal

- Heat oven to 200C/fan 180C/gas 6 and heat 1 tsp oil in a large frying pan. Add the onion and carrot and soften for 10 mins. Scrape into a large bowl, then add the breadcrumbs, 5 tbsp of the passata, the Worcestershire sauce, egg, mince, half the thyme and some seasoning. Mix well.
- Brush 4 large ramekins or 6 muffin tins with the remaining oil. Press the mince mixture into them, then pour the remaining passata over the top. Top each with a tomato half, sprinkled with a pinch of sugar, salt and pepper and the remaining thyme. Bake for 50 mins until cooked through, then serve with Chive mash (recipe below).
