ITALIAN POT ROAST

¼ cup extra virgin olive oil
3 pound chuck roast, rolled and tied
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 cups carrots, cut into one-inch pieces
1 ½ cups celery cut into one-inch pieces
2 cups onions, cut into large dice
4 tablespoons tomato paste
4 whole garlic cloves
¼ cup dark red wine, such as merlot or burgundy
2 bay leaves
8-ounce jar sundried tomatoes in oil, oil drained
1 28-ounce can crushed tomatoes
2 cups beef broth
4 sprigs fresh thyme
1 tablespoon dry oregano
1 tablespoon dry basil

Steps:

  • Preheat oven to 350 degrees F.
  • In a large Dutch oven, heat olive oil over medium high heat.
  • Pat roast dry and sprinkle on salt and pepper. Once the oil is shimmering hot, sear the meat on both ends and all the way around the outside. Total time about 15 minutes to sear the whole roast.
  • Remove the roast to a plate and add the carrots, celery and onions and cook for five minutes, stirring often.
  • Add the tomato paste and garlic and cook for two more minutes.
  • Add wine to deglaze. Cook until the wine evaporates.
  • Add the bay leaves, sundried tomatoes, crushed tomatoes, broth, thyme, oregano and basil and stir. Add the beef back in along with any liquid on the plate, cover and place in the oven for three hours, turning the beef over once about 1 ½ hours into the roasting time.
  • After the full three hours, remove the meat, let it rest under a sheet of loose foil for 10 minutes.
  • Remove and discard bay leaves and thyme sprigs then slice the beef and serve with the sauce.
  • The string should be left on while slicing to hold the roast together. OK to cut off after sliced and plated.

1 boneless beef chuck roast (3 to 4 pounds)
1 can (28 ounces) diced tomatoes, drained
3/4 cup chopped onion
3/4 cup Burgundy wine or beef broth
1-1/2 teaspoons salt
1 teaspoon dried basil
1/2 teaspoon dried oregano
1 garlic clove, minced
1/4 teaspoon pepper
1/4 cup cornstarch
1/2 cup cold water

Steps:

  • Cut roast in half. Place in a 5-qt. slow cooker. Add the tomatoes, onion, wine, salt, basil, oregano, garlic and pepper. Cover and cook on low for 5-6 hours or until meat is tender. , Remove meat to a serving platter; keep warm. Skim fat from cooking juices; transfer to a small saucepan. Combine cornstarch and water until smooth. Gradually stir into pan. Bring to a boil; cook and stir until thickened, about 2 minutes. Serve with meat.

1 lb fingerling potatoes
1 lb carrots, cut into 1-inch pieces
2 yellow onions, coarsely chopped4 cups beef broth or beef bone broth1 28-oz BPA-free can diced tomatoes, with juices
1 16-oz jar sliced pepperoncini, drained, half of liquid reserved
1 tspx07Italian seasoning (TRY: Simply Organic Italian Seasoning)
1 tbsp paprika (TRY: Simply Organic Paprika)
¼ tsp ground cayenne pepper, optional (TRY: Simply Organic Ground Cayenne Pepper)
6 cloves garlic, peeled
1 tx07bay leaf (TRY: Simply Organic Bay Leaves)
chopped fresh flat-leaf parsley

Steps:

  • Sprinkle roast with salt and pepper. In a large heavy skillet on medium, heat oil. Add roast and cook until browned on both sides, about 6 minutes. Transfer roast to a 6-quart slow cooker. Add potatoes, carrots, onions, broth, tomatoes, pepperoncini with reserved liquid, Italian seasoning, paprika, cayenne (if using), garlic and bay leaf. Cover and cook on low for 8 to 10 hours or on high for 4½ to 5 hours. Discard bay leaf. Use a slotted spoon to transfer meat and vegetables to a platter; drizzle with cooking liquid and sprinkle with parsley. Note: This roast can also be served as a stew. Simply break up the cooked roast into smaller chunks. Divide the roast, vegetables and cooking liquid among bowls and sprinkle servings with parsley. 1/2 to 1 teaspoon salt
1/2 teaspoon garlic powder

1 (9 ounce) package condensed mincemeat
1 cup water
1 tablespoon tapioca
1/2 cup brandy
1 teaspoon salt
1/2 teaspoon ground ginger

Steps:

  • Preheat oven to 325 degrees F.
  • Crumble mincemeat & put in saucepan.
  • Add water & stir until mincemeat is moistened completely.
  • Add brandy, salt, ginger & tapioca.
  • Bring to boil, stirring constantly.

1 (4 ounce) can sliced mushrooms
1 onion, diced
1 1/2 ounces spaghetti sauce mix

Steps:

  • READ ALL THE WAY THROUGH FIRST.
  • Season roast with garlic salt.
  • Place in slow cooker.
  • Add mushrooms and onion.
  • Combine seasoning mix and tomato sauce.
  • Pour over all. Cover and cook on low 8-10 hours or high, 4-5 hours.
  • To thicken gravy:.
  • Make a paste of 2 tablespoons flour.
  • Add 2 tablespoons tomato paste.
  • Stir into meat drippings in slow cooker.
  • Cover and cook on high 30 minutes or until thickened.
  • Serve over hot pasta.

1 cup water, mix
1/4 cup catsup
1/4 cup dry red wine
2 teaspoons dijon-style mustard
1 teaspoon Worcestershire sauce
1/8 teaspoon garlic powder

Steps:
