Doctoring Canned Baked Beans image

Shortcut this recipe by draining off the excess liquid from the top of the can and baking for 30 minutes.

2 (28 ounce) cans Bush's Baked Beans, original recipe preferred
five to six slices of bacon, diced
1 small onion, diced finely
2 tablespoons water
1/4 to 1/3 cup brown sugar
1/4 cup ketchup
1 1/2 tablespoons mustard powder (or to taste)
1 tablespoon molasses
1 teaspoon white or apple cider vinegar
1/4 teaspoon ground ginger, optional

Steps:

  • If you don't have brown sugar on hand, just add white sugar and a 1/2 teaspoon more molasses.
  • Beans will thicken as they cool and become quite thick if refrigerated. Reheat with a little water, if desired.

1 cup dried kidney beans
1/2 cup dried cannellini beans
1/2 cup dried Great Northern or navy beans
2 sprigs fresh thyme
1 tablespoon cumin seeds
1 tablespoon olive oil
1 large onion, chopped
1 carrot, chopped
1/2 pound smoked slab bacon, in 1/2-by-1-inch nuggets
1 jalapeno pepper, seeded and chopped
2 cloves garlic, chopped
1/2 cup crushed canned tomatoes
4 ripe plum tomatoes, diced
1/4 cup maple syrup
1/4 cup light brown sugar
1 bay leaf
Grated rind of 1 orange
1/2 tablespoon crushed black peppercorns
1/3 cup chopped fresh cilantro leaves
1/4 cup cider vinegar, or more, to taste
Salt to taste

Steps:

  • Place all beans in a bowl, cover with water to a depth of 2 inches, add thyme and soak at least 4 hours.
  • Heat a heavy 3-quart casserole. Add cumin seeds, and cook, stirring, until they dance around and smell toasty. Remove them.
  • Add the oil, onion, carrot and bacon to casserole, and saute over medium heat 10 minutes, until the bacon is golden. Stir in the jalapeno, garlic and toasted cumin seeds.
  • Preheat oven to 250 degrees.
  • Drain beans, and add them along with the canned and fresh tomatoes, maple syrup, brown sugar, bay leaf, orange rind and crushed peppercorns. Stir in all but 1 tablespoon of the cilantro, and add 3 cups of water. Cover, and bring to a slow simmer. Place in the oven, and cook 2 hours.
  • Add vinegar and salt to taste. Return to the oven 2 1/2 hours longer, until the liquid has been absorbed but the beans are still moist. Adjust seasonings, adding more vinegar and salt if needed. Sprinkle with remaining cilantro, and serve.

1 teaspoon olive oil
2 1/2 cups chopped onions
2 garlic cloves, peeled and finely chopped
2 tablespoons freshly grated ginger
1 teaspoon cayenne pepper
2 cups carrots, peeled and finely sliced
2 cups apples, peeled, cored and sliced
1/2 cup tomato paste
1/2 cup Dijon mustard
2 tablespoons Worcestershire sauce
1/2 cup molasses
2 tablespoons balsamic vinegar
1 (15-ounce) can tomato sauce plus 1 can water
1/2 cup raisins
1 whole dried chile pepper
1 bay leaf
2 pounds dried pinto beans, cooked according to package directions

Steps:

  • Add the oil to the Cook and Carry system inner cooking pot over medium-high heat and fry the onion for 3 minutes.
  • Add the garlic, ginger and cayenne, and cook for just 30 seconds, stirring, to release the volatile oils.
  • Stir in the carrots and apples until they are well coated with spices. Add the rest of the ingredients, stir thoroughly and bring to a full boil. Place the inner cooking pot into the insulated transport container and allow to cook for 4 hours.

5 slices bacon, chopped
1 large onion, chopped
3 cloves garlic, chopped
1 tablespoon ground chili powder
1 tablespoon Neely's Dry Rub Seasoning
1 pound dried small white navy beans, rinsed and picked over
8 cups water
1 cup dark beer
1 cup Neely's Barbecue Sauce
1/4 cup dark brown sugar
1/4 cup mild molasses
2 tablespoons Worcestershire sauce
2 tablespoons soy sauce
Dash hot sauce
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 325 degrees F.
  • Cook the bacon in a large Dutch oven over medium heat until most of the fat is rendered. Add the onion and garlic and saute until soft. Stir in the chili powder. Add the dry rub, beans, water, beer, barbecue sauce, brown sugar, molasses, Worcestershire, soy sauce, hot sauce, and salt and pepper, to taste. Cover the pot with a lid and bring to a low simmer. Transfer the pot to the oven and bake until the beans are tender, about 2 1/2 to 3 hours. Serve in a bowl or straight from the pot.

Says the sweetness and fire create a super depth of flavor. It's not strong enough to overwhelm the sweet home-style of baked beans.

4 slices bacon, or more to taste, cut into bite-size pieces
1 small onion, chopped
2 (28 ounce) cans baked beans
½ cup ketchup
½ cup brown sugar
2 tablespoons Worcestershire sauce
2 tablespoons prepared yellow mustard
2 tablespoons minced jalapeno pepper
1 tablespoon chili powder
1 tablespoon mustard powder

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cook and stir bacon in a large skillet over medium-high heat to render some fat, 2 to 3 minutes. Stir onion into the rendered fat and cook until the bacon is crisp and the onion is tender, 7 to 10 minutes.
  • Stir baked beans, ketchup, brown sugar, Worcestershire sauce, prepared mustard, minced jalapeno pepper, chili powder, and mustard powder together in a large bowl; add bacon mixture and stir. Pour the mixture into a 13x9-inch baking dish.
  • Bake in the preheated oven until the liquid has thickened, 45 to 55 minutes.

4 cans (14.5 ounces each) pinto beans, drained and rinsed
1 TBS olive oil
1 medium to large onion, diced
8 strips of bacon, chopped
4 garlic cloves, minced
6 heaping TBS of Gulden's brand spicy brown mustard
3 tsp chili powder
1 ½ tsp ground cumin
1 can (14.5 ounces) crushed tomatoes with juice
1/3 cup packed light-brown sugar
2 ½ cups water
1 ½ TBS cider vinegar
Salt and pepper

Steps:

  • 1. Drain and quickly rinse the pinto beans. Do not stir or over work them. Since they are already cooked, the less they are handled, the better they will hold up. Set the beans aside to finish draining while you prepare the rest of the dish. (NOTE: Don't be tempted to substitute pork and beans for the pinto beans. The pintos hold up better during additional cooking time.) 2. In a 5 to 6 quart casserole dish or saucepan, heat oil over medium-high heat. Add bacon and cook for 5 to 7 minutes until crispy, then add onions and cook until translucent, stirring often. (NOTE: If you have a clean pair of kitchen scissors, save yourself some time and cut the bacon into small pieces using the scissors. The scissors will cut cleanly and quickly through the bacon fat 3. Add garlic and cook just until fragrant, stirring constantly, no more than 1 minute. 4. Add the next five ingredients (mustard through sugar). Gently stir until well combined for 1 minute, and then add the beans. 5. Slowly incorporate the water ½ a cup at a time until the consistency appears watery, but not drowning. Bring to a boil, then cover and reduce heat to low. Simmer on low, stirring occasionally, for 1 hour. If beans become dry during the first 30 minutes of cooking time, add water 1/4 cup at a time to maintain watery consistency. 6. Uncover after 1 hour and cook until thick, about 15 to 30 minutes more. Slowly stir in vinegar and add salt and pepper to taste. 7. Serve warm with your favority barbeque recipe!

1 can (10 ounces) diced tomatoes and green chiles, undrained
1 can (8 ounces) tomato sauce
1 poblano pepper, chopped
1/4 cup packed brown sugar
1 envelope taco seasoning
TOPPINGS: chopped fresh cilantro, shredded cheddar cheese and sour cream

Steps:

  • Select saute or browning setting on a 6-qt. electric pressure cooker; adjust for medium heat. Cook bacon until crisp, 4-5 minutes. Add onion and garlic; cook until tender, 5-6 minutes longer. Add broth to pressure cooker. Cook 30 seconds, stirring to loosen browned bits from pan. Press cancel., Add water, soup mix, tomatoes and green chiles, tomato sauce, poblano pepper, brown sugar and taco seasoning. Lock lid; close pressure-release valve. Adjust to pressure-cook on high for 90 minutes. Let pressure release naturally., If desired, select saute setting and adjust for low heat. Simmer, stirring constantly, until desired consistency.
