SPICY DOUBLE DARK CHOCOLATE CAKE
Steps:
- Preheat the oven to 350 degrees F. Line a regular cupcake pan with 12 cupcake liners.
- Sift the flour, baking powder and baking soda into a small bowl. Add the pudding mix, wheat germ, pepper and salt to the flour mixture and set the bowl aside.
- In a bowl of an electric stand mixer with a paddle attachment, cream the sugar and shortening together, until the mixture is fluffy, about 5 minutes. Scrape down the bowl and then slowly add the eggs, one egg at a time, scraping the sides of the bowl after each addition. Add the vanilla extract.
- While adding the eggs, put 2 3/4 cups water in a saucepan and bring to a boil. Remove from the heat once the water boils. Put the cocoa powder in a medium bowl and pour the boiling water over, whisking until smooth.
- Turn off the mixer and add the liquid cocoa to the batter. Let the mixture come together then add the dry ingredients to the batter. Remove the bowl from the electric mixer and scrape the bowl to incorporate all the ingredients. Fold in the chopped dark chocolate.
- Fill the prepared liners three-quarters full with batter and bake until a toothpick comes out clean, 18 to 20 minutes. Let the cupcakes cool completely.
- To assemble: Fill the center of the cupcakes with the Cherry Filling and top with the Pistachio Mascarpone Frosting.
- Mix the cherries and cognac together in a bowl and let sit for 10 to 15 minutes.
- Cream the cheese with the compound and extract (don't over mix). Add the powdered sugar to taste.
SPECIAL DARK COCOA
This is something I came up with one evening after see a story about a company that was doing quite well selling cocoa with chili peppers in it. This recipe does use dark cocoa powder not the regular cocoa powder.

- Combine cocoa, sugar, cinnamon, chili powder and water in a saucepan. Bring to a boil over medium heat, whisking constantly.
- Add milk, continuing to whisk constantly till heated thoroughly, But do not boil.
- Remove from heat and stir in the vanilla; serve in mugs.
- Can garnish with cinnamon sticks and whipped cream.

- Put all ingredients together in a jar or container and shake to mix. Once ingredients are mixed, use a sifter to blend and break down lumps. Store in jar or container.
- Add (to taste) to a hot cup of your favorite milk or milk substitute and enjoy!
- This recipe is not overly sweet, so if you like a sweeter cocoa be sure to add more sugar. The cayenne gives the drink a nice little kick!

SPICY COCOA STEAK RUB

- Make the rub by mixing together the cocoa powder, chipotle powder, salt, garlic powder, brown sugar, smoked paprika, cayenne and black pepper in a small bowl. Generously sprinkle the steaks with the rub and set aside.
- Heat the oil and butter in a large cast-iron skillet over medium-high heat. When the butter has melted and the oil is hot, add the steaks to the skillet and cook as desired, about 4 minutes per side for a perfect medium-rare. Remove from the skillet and let rest for 5 minutes.
- For the salad: Meanwhile, add the greens, tomatoes and radishes to a bowl. Add the lemon juice, olive oil and a pinch of salt and pepper. Toss together, making sure everything is coated in the oil and lemon. Add to the center of a platter and top with the Parmesan.
- Slice the steak and add to the platter with the salad, then serve.
