Toast 1/4 cup chopped salted peanuts, 2 tablespoons unsweetened coconut flakes and 1/4 teaspoon red pepper flakes in 3 tablespoons vegetable oil in a large skillet, 1 to 2 minutes. Add the broccoli rabe and 2 sliced garlic cloves; toss. Season with salt.

3-1/2 pounds broccoli rabe
6 garlic cloves, thinly sliced
2 tablespoons olive oil
1/2 teaspoon crushed red pepper flakes
1 teaspoon salt

Steps:

  • Fill a Dutch oven two-thirds full with water; bring to a boil. Trim ½ in. from broccoli rabe stems; discard any coarse or damaged leaves. Rinse broccoli rabe in cold water and cut into 2-in. pieces. Add to boiling water. Reduce heat; simmer, uncovered, until crisp-tender, 1-2 minutes. Drain., In a large skillet over medium heat, cook garlic in oil for 1 minute. Add pepper flakes; cook and stir 30 seconds longer. Add broccoli rabe and salt; heat through.

  • Chop 2 bunches broccoli rabe into 1-inch pieces. Cook in salted boiling water until crisp-tender, about 3 minutes. Drain well. Cook 4 smashed garlic cloves in 1/4 cup olive oil in a large skillet over medium-high heat, stirring, until golden, about 3 minutes. Add a pinch each of red pepper flakes and salt, then add the broccoli rabe; cook, stirring, until heated through, 2 to 3 minutes.
  • The sauce for these meatballs is slightly chunky. For a smoother sauce, puree with an immersion blender.

3 tablespoons freshly squeezed lemon juice
2 tablespoons naturally brewed soy sauce
2 tablespoons freshly chopped basil leaves
2 tablespoons extra-virgin olive oil
1 tablespoon balsamic vinegar
1 teaspoon finely grated lemon zest
1 pound firm tofu, rinsed, patted dry, and sliced 1/2 inch thick
2 pounds broccoli rabe, tough stalks trimmed
4 tablespoons extra-virgin olive oil
8 plump garlic cloves
1/2 teaspoon hot red pepper flakes
Coarse sea salt
Freshly milled black pepper
Lemon wedges, for garnish

Steps:

  • Preheat oven to 375 degrees F.
  • In a bowl, combine the lemon juice, soy sauce, basil, oil, vinegar, and lemon zest. Lay the tofu slices in a baking dish that can hold them in a single snug layer. Pour the marinade over the tofu. Bake for 30 minutes, or until the tofu is nearly dry and well browned.
  • To make the broccoli rabe, chop the tender stalks and greens into 2-inch pieces and soak them in a large basin of cold water.
  • In a heavy, wide saute pan over medium heat, warm the oil. Add the garlic and saute gently for 3 to 5 minutes, until golden. Add the red pepper flakes and tofu and saute for 1 minute. Scoop the greens from the water and add them to the pan. Raise the heat and turn the greens over in the oil with a pair of tongs. When the greens begin to simmer, reduce the heat to low and cover. Cook for 10 to 15 minutes, until the greens are tender.
  • Season with salt and pepper and serve drizzled with some of the liquor and garnished with the lemon wedges and garlic cloves.

8 ounces whole wheat rotini pasta
3 bunches broccoli rabe, trimmed
4 (4 ounce) links hot Italian sausage, cut into 1 inch pieces
1 tablespoon sausage drippings
2 garlic cloves, chopped
1 (14.5 ounce) can diced tomatoes
salt and ground black pepper to taste
½ cup grated Parmesan cheese
¼ teaspoon crushed red pepper flakes
1 teaspoon olive oil, or to taste

Steps:

  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the rotini, and return to a boil. Cook uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 6 minutes. Drain well in a colander set in the sink.
  • Place a steamer insert into a saucepan, and fill with water to just below the bottom of the steamer. Cover, and bring the water to a boil over high heat. Add the broccoli rabe, recover, and steam until just tender, about 2 minutes depending on thickness.
  • Place the Italian sausage into a large skillet over medium heat, and cook until browned and no longer pink inside, about 5 minutes. Remove sausage from pan and set aside; drain excess grease, leaving about 1 tablespoon of sausage drippings in the pan. Sprinkle in the garlic, and cook until it starts to brown, about 1 minute; stir in half the broccoli rabe. Cook and stir until the rabe has wilted, and add the remaining rabe and the diced tomatoes. Cook until all the rabe is tender, about 5 minutes; sprinkle with salt and black pepper.
  • Return the sausage to the skillet, and cook just until the meat is hot; sprinkle with Parmesan cheese, crushed red pepper flakes, and a drizzle of olive oil. Serve over hot rotini.

This dish uses one of my favorite techniques for cooking just about anything quickly: high-heat roasting. All you do is spread seasoned protein and vegetables out on one rimmed baking sheet and roast everything at the same time. Here I've paired shrimp with broccoli rabe, which cook in about 10 minutes flat.

3/4 pound broccoli rabe, tough bottom stems removed
3 tablespoons extra-virgin olive oil
1/2 teaspoon toasted sesame oil, optional
1/2 teaspoon coarse kosher salt
1/4 teaspoon crushed red chile flakes, or to taste
3/4 pound large shrimp, peeled
1 teaspoon orange zest
Orange wedges, for serving

Steps:

  • Heat oven to 425 degrees. In a large bowl, toss broccoli with 2 tablespoons olive oil, the sesame oil if using, 1/4 teaspoon salt and 1/8 teaspoon chile flakes. In a separate bowl, combine shrimp, remaining 1 tablespoon oil, the orange zest, remaining 1/4 teaspoon salt and remaining 1/8 teaspoon chile flakes.
  • Spread broccoli and shrimp in a single layer on a baking sheet. Roast, tossing once or twice halfway through, until shrimp are just opaque and broccoli is tender and golden around the edges, about 10 minutes. Serve with orange wedges.
