BLACK BEAN 'N' PUMPKIN CHILI

Black Bean 'n' Pumpkin Chili image

My family is crazy about this slow cooker chili because it uses ingredients you don't usually find in chili. Believe it or not, I discovered that pumpkin is what makes the dish so special. Cook up a big batch and freeze some for later; it tastes even better reheated. -Deborah Vliet, Holland, Michigan

SPICY PUMPKIN CHILI

The pumpkin is a great surprise in this chili! It makes the whole house smell good and tastes great! Garnish with cheese and jalapenos if desired. This recipe can be made on stovetop too. Cooking time would be reduced to 30-45 minutes for chili to simmer.

SPICY BLACK BEAN & CHORIZO CHILI

Spicy Black Bean & Chorizo Chili image

This was my first introduction to Chorizo sausage. When I make home-made chili, this is the recipe I use. Adapted from a recipe I got from some magazine years ago. Usually buy my chorizo, but have also made my own. I like that you don't have to be so exact when chopping the ingredients, since it's going to be pureed anyway.

  • Over medium-high heat in a small pot, toast the dried chiles until fragrant, about two to three minutes. Add 2 cups beef stock, cover and simmer for 10-15 minutes until the chiles soften and are pliable.
  • Add the dried chiles and beef stock used to simmer the chiles to a blender with the chipotle peppers and adobo sauce. Blend until smooth. Set aside.
  • Heat oil in a large, heavy-bottomed stock pot or Dutch oven over medium heat. Cook half of the chorizo until browned, using a wooden spoon to break up the chorizo. Remove from the pot and then repeat with the other half of the chorizo. Once the second half is browned, remove that chorizo from the pot as well. Remove excessive drippings so that there’s about 2 tablespoons of liquid left in the pot.
  • Add the onion to the pot. Cook until softened, about four to five minutes. Add the garlic and cook for 30 seconds, stirring constantly.
