Spicy Chicken Breasts image

This is a great skinless, chicken breast recipe that can be served over salad greens or as an entree! If serving over salad greens, cut chicken into strips and top with your favorite salsa or dressing.

2 ½ tablespoons paprika
2 tablespoons garlic powder
1 tablespoon salt
1 tablespoon onion powder
1 tablespoon dried thyme
1 tablespoon ground cayenne pepper
1 tablespoon ground black pepper
4 skinless, boneless chicken breast halves

Steps:

  • In a medium bowl, mix together the paprika, garlic powder, salt, onion powder, thyme, cayenne pepper, and ground black pepper. Set aside about 3 tablespoons of this seasoning mixture for the chicken; store the remainder in an airtight container for later use (for seasoning fish, meats, or vegetables).
  • Preheat grill for medium-high heat. Rub some of the reserved 3 tablespoons of seasoning onto both sides of the chicken breasts.
  • Lightly oil the grill grate. Place chicken on the grill, and cook for 6 to 8 minutes on each side, until juices run clear.

Whenever our daughters come home from college, this is the dish they always request. My husband enjoys it so much I usually prepare it a couple time a month.

Number Of Ingredients 12

2 boneless skinless chicken breast halves, julienned
2 tablespoons vegetable oil, divided
1 celery rib, sliced
1 medium carrot, julienned
1 medium green pepper, julienned
1/4 cup chicken broth
1 tablespoon soy sauce
1/2 teaspoon salt, optional
1/2 teaspoon cornstarch
1/4 to 1/2 teaspoon crushed red pepper flakes
1/4 teaspoon hot pepper sauce
Hot cooked rice, optional

Steps:

  • In a skillet over medium-high heat, saute chicken in 1 tablespoon oil for 5-7 minutes or until juices run clear. Remove chicken and set aside. Saute celery, carrot and green pepper in remaining oil for 5-7 minutes or until tender. Return chicken to pan. Combine broth, soy sauce, salt if desired, cornstarch, red pepper flakes and hot pepper sauce; add to skillet. Bring to a boil; cook for 1 minute to thicken. Serve over rice if desired.

1/4 cup butter
4 boneless skinless chicken breasts (1 1/2 - 2 pounds)
2 teaspoons cornstarch
1/3 cup balsamic vinegar
3 tablespoons sugar
1/4 teaspoon cayenne pepper, to taste
1 1/2 teaspoons chili powder, to taste
1/2 teaspoon salt
2 teaspoons garlic, minced or pressed
2 cups peeled diced peaches (fresh or frozen)
1/3 cup toasted walnut halves

Steps:

  • Melt butter in a large skillet, add chicken, saute over medium heat until golden brown on both sides, remove with a slotted spoon.
  • Add cornstarch to the pan and stir to combine with the pan juices.
  • Add vinegar, sugar, pepper, chili, salt, garlic and peaches and cook over medium heat until thick and bubbly.
  • Add chicken and walnuts and cook until chicken is no longer pink inside.
  • Place chicken on a serving plate and top with sauce.
