SPICY CHICKEN CHOW MEIN
This was quite good, easy enough to make and didn't take very long before it was done. I used a pkg. coleslaw mixture with carrots and cooked longer than suggested as I like my cabbage on the wilted side (the carrots still had a slight crunch to them). I also used chicken tenders. All I had on hand was spaghetti and it worked quite nicely. I guess I liked it more than I thought as I had 2 big servings.

Steps:
- Cook vermicelli as pkg. directs, omitting salt. Drain; rinse with cold water and drain well. Coat chicken with 1 Tb soy sauce and garlic.
- Heat large frying pan, preferably nonstick, over high heat. Add 1 Tb oil; coat pan.
- Add chicken; stir-fry 2-3 minute or until lightly browned and cooked through. Mix in cabbage, green onions & tops and carrots. Cook and stir 30 seconds. Mix in vermicelli, oyster sauce and remaining 1 Tb soy sauce; cook and stir 2 minute or until all is hot.
- Remove from heat: mix in chili oil.

SPICY CHICKEN CHOW MEIN

- Heat oil in skillet over medium-high heat. Add chicken pieces and cook until brown. Put in crock pot. Add remaining ingredients, except cornstarch and water; stir to combine. Cover; cook on low 6 to 8 hours.
- Turn to high. In small bowl, stir cornstarch into cold water until dissolved. Stir into liquid in crock pot. Place cover slightly ajar on crock pot. Cook until thickened (15 to 30 minutes). Serve with cooked rice or Raman noodles with chow mein noodles, if desired.
CHICKEN CHOW MEIN - EASY!
From BBC's Chinese Food Made Easy, the best recent TV cookery show. Very simple to make, and tasty! I added a little more five-spice than the original recipe. Omit the chilli sauce if you wish, or add a little more to give it extra zing. If you don't have groundnut oil (peanut oil), use vegetable oil, NOT olive oil, which is too strong flavoured. Serves two as a main course, or four as a side dish.

- Cook the noodles in boiling water until al dente. Drain, rinse under cold water and drain again. Drizzle with a little sesame oil and toss.
- Place chicken in a bowl and toss with dark soy, five-spice powder and chilli sauce. Dust with cornflour.
- Heat a wok until smoking before adding the groundnut oil. Add chicken and cook, stirring, until golden brown and cooked through.
- Add red pepper, stir fry for a minute, then add onion and beansprouts, cooking for a further 30s. Stir in the noodles and season with light soy sauce, a dash of sesame oil and black pepper, to taste.
CLASSIC CHICKEN CHOW MEIN
This recipe comes from a cookbook called Cooking for Today Simple Chinese Recipes. The recipe says that you can use pork in place of chicken and to use Chinese egg noodles. I also add more green beans and have never used the chili sauce.

Steps:
- Cook noodles according to directions. Drain and toss with 1 T of the oil.
- Slice meat into thin shreds.
- Trim green beans and cut into bit size pieces.
- Heat 3 T of oil in a preheated wok or skillet. Add the noodles and stir-fry for 2-3 minutes with 1 T soy sauce. Remove to a serving dish and keep warm.
- Heat remaining oil and stir-fry beans and meat for about 2 minutes. Add sugar, wine, remaining soy sauce and half of green onions. Blend the meat mixture well and pour on top of noodles. Sprinkle with sesame oil and remaining green onions. Serve hot or cold with optional chili sauce.

- Put all the chicken ingredients, apart from the chicken, in a large pan with 1 litre water. Bring to the boil, add the chicken, then simmer for 20-25 minutes or until the chicken is cooked. The meat should come off the bone with little effort. Lift the chicken onto a plate and leave to cool, then shred into strips. Discard the skin, bones and cooking liquid.
- Mix the marinade ingredients in a medium mixing bowl, add the shredded chicken and marinate for 1 hour or longer.
- Soak and cook the noodles according to the packet instructions, run under cold water for 2-3 minutes to remove the starch, then keep chilled until ready to serve. To assemble the ban mein, put the cold noodles in a bowl or on a platter and arrange the marinated chicken on top. Spoon over some of the sesame paste followed by the beansprouts and cucumber in a mound in the middle of the bowl. Sprinkle the peanuts around the outside, spoon over as much of the chilli oil as you want, then decorate with the coriander leaves, sliced chilli and sesame seeds. Serve cold.
