Steps:
- Combine paprika, thyme, cumin, cayenne pepper, onion powder, black pepper, and salt together in a bowl. Transfer spice mixture to a flat plate.
- Rub oil over each chicken breast until fully coated. Roll each piece of chicken in blackening spice mixture, making sure to press down so spice sticks on all sides. Let sit for 5 minutes while you preheat the air fryer.
- Preheat an air fryer to 360 degrees F (175 degrees C) for 5 minutes.
- Place chicken in the basket of the air fryer and cook for 10 minutes. Flip and cook an additional 10 minutes. Transfer chicken to a plate and let rest for 5 minutes before serving.

Steps:
- Preheat an air fryer to 360 degrees F (182 degrees C).
- Brush both sides of the chicken breast with olive oil and season with salt, pepper, and garlic powder on one side. Set chicken breast, seasoned side down, into the air fryer basket and sprinkle the other side with salt, pepper, and garlic powder.
- Air-fry for 9 minutes, flip, and cook until chicken breast is no longer pink in the center and the juices run clear, 9 more minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).
- Transfer chicken breast onto a plate and loosely cover with foil. Let rest for 5 minutes before serving.

- 1. PREP/PREPARE
- 2. The brine used in this recipe is the liquid from a jar of dill pickles. However, in these troubling times, going out for some pickles just to use the brine is unacceptable. So, here are some options. 1. Brine the chicken breast in some saltwater. 2. Add some salt and dried dill to a cup or so of water, boil, and then let come to room temperature. In either case place the brining solution in the fridge until nice and cold before adding the chicken breasts.
- 3. Gather your ingredients (mise en place).
- 4. Brine the chicken breasts for 2 - 3 hours.
- 5. Rub the chicken breasts with a bit of olive oil, and then sprinkle some spices on one side. I am using salt, pepper, paprika, and cayenne.
- 6. Add to the air fryer basket, spice side down, and then sprinkle the other side with more spices.
- 7. Set the air fryer to 350f (175c) and cook for 10 minutes.
- 8. Open the fryer and flip the chicken breasts.
- 9. Cook until an instant-read thermometer reads around 160f (70c), about 4 - 6 minutes.
- 10. Allow to rest for 3 - 4 minutes before serving.
- 11. PLATE/PRESENT
- 12. Slice and serve with your favorite sides. In this image I spooned on some of my favorite salsa, and served with warm tortillas, and fixings. Enjoy.

- Coat the chicken in the oil and set aside. In a bowl, combine the salt, garlic, paprika and mixed herbs with a good grinding of black pepper, then scatter onto a plate.
- Roll each oiled chicken breast in the seasoning and put in your air fryer basket. Cook at 180C for 18-20 mins, turning after 10 mins. To check it is cooked, pierce the chicken with a knife at the thickest part to see if the juices run clear. Or insert a temperature thermometer and it should read 70C. Serve with rice and greens or a salad.
