SPICED UP POTATO CHIPS

Spiced Up Potato Chips image

Provided by Ree Drummond : Food Network

Time 40m

Yield 10 to 12 servings

Number Of Ingredients 7

5 pounds Yukon gold potatoes, unpeeled
2 teaspoons garlic salt
2 teaspoons paprika
2 teaspoons black pepper
1/4 teaspoon cayenne pepper
1/4 teaspoon kosher salt
Vegetable oil, for frying

Steps:

  • Scrub the potatoes under water until totally clean. Use a mandolin or Japanese slicer to slice the potatoes as thinly as possible. As you slice them, submerge them in cold water and set aside. Mix together the garlic salt, paprika, black pepper, cayenne and salt in a small bowl and set aside.
  • In 2 heavy Dutch ovens, heat some vegetable oil to 375 degrees F (use a thermometer to keep the temp right!). Lay the potatoes on a baking sheet lined with paper towels, and blot them with more paper towels to dry completely.
  • Lower batches of potatoes into the oil using a spatula. They will fry very quickly, about 1 1/2 minutes; remove with a spatula when they're nice and golden and crisp. Immediately sprinkle on the spice mix. Repeat with the rest of the potatoes!

GOLDEN SPICED ROAST POTATOES

Golden spiced roast potatoes image

Add a golden glow to your roast potatoes by par-boiling them first with a touch of turmeric

Provided by Angela Nilsen

Categories     Dinner, Side dish

Time 2h5m

Number Of Ingredients 5

2 ¼kg floury potatoes , preferably Desiree or King Edward
½ tsp turmeric
6 tbsp light olive or sunflower oil
½ tsp paprika
Maldon sea salt

Steps:

  • Preheat oven to 190C/gas 5/fan 170C. Peel the potatoes and cut into big chunks. Put them in a large saucepan of boiling salted water, sprinkle in the turmeric and give a good stir. Bring back to the boil, then cover and simmer the potatoes for 4 minutes.
  • Pour the oil into a roasting tin and put in the oven to heat through for 5minutes. Drain the potatoes well in a colander and give a gentle shake to rough up the surfaces a bit - but not too much or they'll break up. This rougher surface will give you crisper potatoes.
  • Carefully tip the potatoes into the hot fat in the roasting tin, tossing with a big metal spoon to coat. Scatter with a light sprinkling of paprika and roast, without turning, for about 11⁄4 hours or until golden and crisp. Sprinkle the potatoes with Maldon sea salt flakes and freshly ground black pepper and serve immediately

PORCHETTA-SPICED ROASTED POTATOES

Porchetta-Spiced Roasted Potatoes image

The flavors of Italian porchetta - garlic, fennel, rosemary, sage, thyme and black pepper - infuse the olive oil that coats these potatoes for an intensely fragrant, golden and crisp side dish. The herb seasoning is added halfway through roasting to prevent it from burning, as well as to maintain the herbs' fresh and vibrant flavors. These potatoes can accompany any large roast, such as beef, pork, turkey and chicken, and also pair beautifully with fish like salmon and cod. With the addition of some mayonnaise and chopped fresh celery, leftovers can be turned into a zesty potato salad.

Provided by Kay Chun

Categories     vegetables, side dish

Time 40m

Yield 6 to 8 servings

Number Of Ingredients 11

5 tablespoons extra-virgin olive oil
3 pounds baby potatoes (such as creamer, baby white or new potatoes), halved
Salt
1 tablespoon minced garlic
1 tablespoon ground fennel or 1 tablespoon whole fennel seeds, ground
1 teaspoon dried thyme
1 teaspoon finely chopped fresh rosemary
1 teaspoon finely chopped fresh sage
1/2 teaspoon freshly ground black pepper
1/2 teaspoon red-pepper flakes
Chopped parsley, for garnish

Steps:

  • Heat oven to 425 degrees. On a rimmed baking sheet, combine 2 tablespoons of the oil and potatoes, and season with salt; toss to evenly coat. Spread in an even layer and roast until light golden, 20 minutes.
  • Meanwhile, in a small bowl, combine the remaining 3 tablespoons oil, garlic, fennel, thyme, rosemary, sage, black pepper and red-pepper flakes, and season to taste with salt; mix well.
  • Spoon the herb mixture over the potatoes and toss until evenly coated, using a spatula to lift up the potatoes if necessary. Continue roasting until the potatoes are fragrant, golden brown and tender when pierced with a fork, 10 to 15 minutes longer.
  • Transfer potatoes to a serving platter and garnish with parsley. Serve warm.
