SPICY CORN CAKES



Spicy Corn Cakes image

Tod Man Khao Pod is a variation on the popular tod man plaa, or 'fish cakes' which are so common here in Thailand. This version uses corn kernels instead of fish, and is quite easy to make. Serve it with Slightly Pickled Cucumber Salad.

Number Of Ingredients 7

1 cup sweet corn kernels
1 tablespoon red :curry paste:
1/4 cup flour (japanese tempura flour or wheat flour)
1 egg
1/2 teaspoon white sugar
2 lime leaves, sliced very thin, then chopped
about 1/2″ of oil in the pan, for frying

Steps:

  • Remove the kernels of corn from the cob. The best way to do it is to remove by hand, peeling in a downward motion, one at a time. This preserves the whole kernel, and leaves them juicy and flavorful when you bite into them. If you're lazy, you can use a knife and slice them off. Or even lazier, just get frozen corn. Whole kernels do taste better, however, and don't explode when you fry them. In a bowl, add the corn, flour, egg, curry paste, sugar and lime leaves. Mix well. Drop by rounded spoonful (and smush a bit once in the pan to flatten) into hot oil. Cook on medium-high heat until golden brown, flipping once. It should take about one minute per side. Serve with Slightly Pickled Cucumber Salad.

3 1/2 cups corn kernels (from frozen is better than from canned)
1 cup celery, finely chopped
1/2 cup all-purpose flour
2 tablespoons rice flour
2 teaspoons baking powder
1 1/2 tablespoons red curry paste
1 tablespoon fish sauce
1 tablespoon light soy sauce
1/2 teaspoon salt
1 egg white, lightly beaten (optional)
3 tablespoons water
2 tablespoons fresh cilantro, chopped (optional)
oil (for frying in)

Steps:

  • Combine all ingredients except for the oil, mixing well.
  • Set aside for about 10 minutes to allow the baking powder to become activated Heat oil in large pan or flat-bottomed wok over medium to high heat.
  • Drop large teaspoonfuls of corn mixture into the oil.
  • Allow to fry about 3 minutes each, until golden, turning once or twice.
  • Remove corn cakes from oil and place on paper or cloth towel to wick excess oil away.
  • Arrange on plate and serve.

2 tablespoons flour
1 1/2 teaspoons baking powder
1 teaspoon sugar
1/2 teaspoon salt
1 cup cornmeal
1 cup boiling water
1/2 cup milk
1 cup fresh corn kernels (about 2 ears)
1 egg, slightly beaten
4 teaspoons snipped fresh chives
1/3 cup sour cream

Steps:

  • In a small bowl, combine the flour, baking powder, sugar and salt.
  • Measure the cornmeal into a med bowl. Stir in the boiling water, the mixture will be stiff. Add the milk, stirring until smooth. Next, stir in the corn kernels, egg and 3 t of the chives.
  • Add flour mixture to the cornmeal, stirring until combined.
  • Heat 2 T of the oil in large skillet over medium heat. Drop the batter by rounded T into the hot oil (you'll probably use about half of the batter) and cook the cakes for 3-4 minutes or until golden brown, turning once. Transfer the cakes to a serving platter and cover them to keep warm.
  • Add the remaining T of the oil and repeat the process with the rest of the batter. While the cakes cook prepare the garnish by stirring the remaining t of the chives into the sour cream.

Very pretty with either fresh cut or sweet kernel canned corn - frozen doesn't work as well because the kernels skins get tough when frozen. The sweet chili sauce makes the meal - get it; it's cheap & addictive.

2 cups corn kernels
2 garlic cloves, chopped
2 shallots, chopped
1 tablespoon cilantro, chopped
1 tablespoon fish sauce
1 teaspoon granulated sugar
1 teaspoon sea salt
1/4 teaspoon black pepper, freshly ground
2/3 cup all-purpose flour
2 eggs
2 tablespoons vegetable oil
2 green onions, minced
sweet chili sauce, to taste

Steps:

  • In food processor or blender, puree half the corn. Add garlic, shallots.
  • and cilantro. Chop coarsely. Add fish sauce, sugar, salt and pepper.
  • Puree. Add flour; blend 1 minute. Add eggs; blend 30 seconds. Pour into.
  • large bowl. Fold in all but 1 tablespoon of remaining corn.
  • Heat oil in non-stick skillet over medium-high heat until shimmery.
  • For each corn cake, drop about 2 tablespoons batter into pan. Cook in.

1 lb white fish fillet
1 red chili peppers or 1 green chili pepper, de-seeded and chopped finely
2 ounces green beans, chopped very finely
2 spring onions, chopped finely
2 tablespoons coriander leaves, and roots chopped finely
1 tablespoon Thai fish sauce
4 -5 fresh kaffir lime leaves, finely shredded or 1 tablespoon fresh lime juice
1/2-1 tablespoon Thai red curry paste, more if you like it really hot
oil (for frying)

Steps:

  • Cut the fish into chunks, put in your food processor with the rest of the ingredients, except the oil, and blend using the on/off technique until you have a minced texture but not a paste.
  • Remove from the food-processor bowl to another dish.
  • Take approx a dessert spoon full of the fish mix, with wet hands form into balls then flatten them with the palm of your hand into cakes.
  • Leave them in the fridge, covered, to firm up for an hour or more.
  • When ready to cook, heat up the oil and fry the little cakes about 1 minute on each side.
  • Drain on paper kitchen towel.

2 tablespoons garlic, peeled and chopped

Steps:

  • Preheat oven to 350*F.
  • Spread corn out in a single layer on a lightly oiled baking sheet.
  • Roast corn for 12 to 15 minutes. Cool and divide into 2 batches.
  • While corn is cooking, prepare chopped ingredients(cilantro, garlic, jalapeno,and bell pepper). Combine 1 batch of corn with eggs, cornstarch, chopped ingredients, salt, and pepper. Purée in a food processor. Fold in remaining corn by hand.
  • Heat corn oil to medium high in a skillet. Drop in 12 heaping tablespoons of batter and fry until golden brown, turn over and fry other side till golden brown. Serve with a dipping sauce if desired. Enjoy!
