Dinner couldn't be simpler with Ina Garten's Garlic Sauteed Spinach recipe from Barefoot Contessa on Food Network. It's an easy, go-to side dish for your table.

1 1/2 pounds baby spinach leaves
2 tablespoons good olive oil
2 tablespoons chopped garlic (6 cloves)
2 teaspoons kosher salt
3/4 teaspoon freshly ground black pepper
1 tablespoon unsalted butter
Lemon
Sea or kosher salt, optional

Steps:

  • Rinse the spinach well in cold water to make sure it's very clean. Spin it dry in a salad spinner, leaving just a little water clinging to the leaves.
  • In a very large pot or Dutch oven, heat the olive oil and saute the garlic over medium heat for about 1 minute, but not until it's browned. Add all the spinach, the salt, and pepper to the pot, toss it with the garlic and oil, cover the pot, and cook it for 2 minutes. Uncover the pot, turn the heat on high, and cook the spinach for another minute, stirring with a wooden spoon, until all the spinach is wilted. Using a slotted spoon, lift the spinach to a serving bowl and top with the butter, a squeeze of lemon, and a sprinkling of sea or kosher salt. Serve hot.

2 teaspoons chili powder
1 teaspoon salt-free lemon-pepper seasoning
1/2 teaspoon ground cumin
4 salmon fillets (4 ounces each), skin removed
1 tablespoon canola oil
Lemon wedges, optional

Steps:

  • Combine the dill, chili powder, lemon-pepper and cumin; rub over fillets. , In a large nonstick skillet coated with cooking spray, cook salmon in oil over medium-high heat for 5-6 minutes on each side or until fish flakes easily with a fork. Serve with lemon if desired.

2 (5 1/2 ounce) salmon fillets, skinned
1 teaspoon freshly ground mace
1 teaspoon crushed black pepper
1 teaspoon flaked sea salt
1/2 lemon, juice of
1 ounce butter
2 garlic cloves, crushed
8 ounces baby spinach leaves
1/2 lemon, juice of
1 pinch of freshly grated nutmeg
freshly ground salt and black pepper

Steps:

  • Heat the butter in a large saucepan. Once melted, add the garlic, then the spinach, stirring well.
  • Mix in the lemon juice, season with the nutmeg, salt and freshly ground pepper. Cover the pan and turn off the heat.
  • Set aside for 5 minutes until the spinach is slightly wilted.
  • Meanwhile, preheat the broiler. Season the salmon fillets with the mace, black pepper and sea-salt.
  • Place the salmon on the hot broiler and broil for 2 minutes, without moving.
  • Turn the salmon fillets over and cook for a further 2 minutes, until a white residue appears around the edge of the salmon. Once this appears, remove the salmon and rest for 1 minute.
  • Squeeze the lemon juice over the salmon just before serving. Serve the salmon with the spinach.

2 tablespoons ghee (clarified butter) or vegetable oil
1 bunch scallions, coarsely chopped
2 dried chiles de árbol or 1/2 teaspoon crushed red pepper flakes
2 garlic cloves, finely chopped
2 teaspoons yellow mustard seeds
4 bunches flat-leaf spinach, stemmed, very coarsely chopped
Kosher salt, freshly ground pepper

Steps:

  • Heat ghee in a large skillet over medium-high heat. Add scallions, chiles, garlic, and mustard seeds. Cook, stirring often, until garlic begins to brown and mustard seeds pop, about 1 minute. From Cooking Light December 2007. Don't let the mix of spices fool you, this one is a keeper. The smell and flavor is amazing. Definitely a restaurant quality dish. The spinach... I just found a new favorite way to prepare fresh cooked spinach. I hope you enjoy as much as I did! Served with garlic mashed potatoes. Note: I forgot to add the fresh cilantro; looking forward to making this again and tasting it with the cilantro garnish.
