STUFFED PUMPKIN DINNER



Stuffed Pumpkin Dinner image

This recipe is a great way to use a pumpkin up after scooping out the seeds to bake. It is so delicious and fancy enough to serve to guests.-Christin Holt, Kingsburg, California

Number Of Ingredients 13

1 large pumpkin (5-1/2 to 6 pounds)
1 teaspoon salt, divided
1-1/2 pounds ground beef
3/4 cup finely chopped onion
1 small green pepper, chopped
1-1/2 cups cooked rice
1 can (8 ounces) tomato sauce
1/2 cup finely chopped fully cooked ham
2 eggs, beaten
1 garlic clove, minced
1 teaspoon dried oregano
1/2 teaspoon pepper
1/2 teaspoon cider vinegar

Steps:

  • Wash pumpkin; cut a 6-in. circle around top stem. Remove top and set aside; discard seeds and loose fibers from inside. Place pumpkin in a large Dutch oven. Fill with boiling water to a depth of 6 in.; add 1/2 teaspoon salt. Cover and simmer for 30 minutes or until the pumpkin is almost tender but holds its shape. Carefully remove and drain well; pat dry. , In a large skillet, cook the beef, onion and green pepper over medium heat until meat is no longer pink and vegetables are tender; drain well. Cool slightly; place in a large bowl. Add rice, tomato sauce, ham, eggs, garlic, oregano, pepper, vinegar and remaining salt. , Place pumpkin in a shallow sturdy baking pan. Firmly pack beef mixture into pumpkin; replace top. Leaving pan uncovered, bake at 350° for 1 hour. Let stand for 10 minutes. Remove the top; if desired, use paper towel to remove excess moisture from top of meat. Slice pumpkin into wedges.

I saw an episode of Live with Kelly & Michael just before Thanksgiving 2012 where his fiancée, Nicole Murphy, made her Pumpkin Crunch Pudding. I liked the concept, but wanted a crust to it, so after several different tries, this is the version my family likes best.

1 - roll refrigerated sugar cookie dough
15 ounce(s) can pumpkin puree (not pumpkin pie filling)
3 large eggs
5 ounce(s) can evaporated milk
1/2 - of a 14 oz can sweetened condensed milk
1/2 cup(s) granulated sugar
1/2 cup(s) brown sugar, firmly packed
2 teaspoon(s) pure vanilla extract
1 teaspoon(s) cinnamon
1/2 teaspoon(s) freshly grated nutmeg
1/4 teaspoon(s) ground ginger
2 stick(s) butter, melted
1 box(es) spice cake mix
1/2 cup(s) chopped pecans
- whipped cream

Steps:

  • Preheat oven to 350°F. Press cookie dough into a greased 13 x 9 pan.
  • In large bowl, whisk together pumpkin, eggs, evaporated milk, sweetened condensed milk, sugars, vanilla, cinnamon, nutmeg and ginger. Pour pumpkin mixture over cookie dough in baking dish.
  • Melt butter. Evenly sprinkle cake mix over the pumpkin mixture. Pour butter over cake mix. Sprinkle with pecans. Bake for 1 hour at 350°F.
  • Remove from oven. Let cool to room temperature then refrigerate until well chilled. Pudding is best served cold.
  • Top with a dollop of whipped topping and a sprinkle of cinnamon.

3 large eggs
1 cup whole milk
1/2 cup sugar
1/2 cup packed brown sugar
1 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
1/2 teaspoon salt
1/2 teaspoon ground ginger
1/2 teaspoon ground cloves
1 can (15 ounces) solid-pack pumpkin
1 unbaked pastry shell (9 inches)
Whipped topping and additional cinnamon

Steps:

  • Preheat oven to 350°. In a large bowl, lightly beat eggs. Beat in the milk, sugars, cinnamon, nutmeg, salt, ginger and cloves. Stir in the pumpkin just until blended. Pour into pastry shell. , Bake until a knife inserted in the center comes out clean, 50-60 minutes. Cool on wire rack. Chill until serving. Garnish with whipped topping and sprinkle with cinnamon. Refrigerate leftovers.
