HEALTHY SWEET POTATO DIP WITH SPICED PITA CHIPS



Healthy Sweet Potato Dip with Spiced Pita Chips image

Here's a vibrantly colored and creamy dip that's a great alternative to hummus. We included instructions for making homemade pita chips but you can skip that part and use store-bought instead.

Yield 4 to 6 servings (2 cups dip)

Number Of Ingredients 12

2 medium sweet potatoes (about 1 1/4 pounds total)
3 whole-wheat pitas, split
2 tablespoons extra-virgin olive oil
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper
2/3 cup plain low-fat Greek yogurt
1 tablespoon light brown sugar
1 teaspoon fresh lemon juice
1/4 teaspoon garlic powder
1/4 teaspoon ground cumin
1/8 cayenne pepper
1 tablespoon chopped fresh chives

Steps:

  • Position an oven rack in the center of the oven and preheat to 400 degrees F. Line a rimmed baking sheet with foil and set a wire rack inside the baking sheet.
  • Prick each of the sweet potatoes 5 times with a fork and place on the rack, keeping space in between to allow the heat to circulate. Bake the sweet potatoes until a paring knife can easily go through without resistance, about 45 minutes. Remove from the oven and allow to cool completely. Keep the oven heated to 400 degrees F.
  • Line a baking sheet with parchment. Dividing evenly, brush both sides of each pita half with the olive oil using a pastry brush, and season the inner side of the pitas with the smoked paprika and 1/4 teaspoon salt. Cut each seasoned pita into 6 wedges, then arrange in a single layer on the prepared baking sheet. Bake until lightly golden and crisp, 6 to 8 minutes. Allow to cool completely.
  • Once the sweet potatoes are cool, scoop the flesh (about 1 1/2 cups total) into a food processor and add the yogurt, brown sugar, lemon juice, garlic powder, cumin, 2 teaspoons salt and several grinds of black pepper. Process until combined, scraping down the side of the processor bowl to make sure yogurt is fully incorporated. Transfer the dip to a serving bowl and gently fold in the chives. Serve at room temperature along with spiced pita chips.

3 cups potatoes, cooked and mashed with
2 tablespoons milk
1/2 teaspoon salt
3 tablespoons butter
1/2 teaspoon baking powder
1 cup flour (amount is approximate)

Steps:

  • When potatoes are cool enough to handle, add salt and butter; mash.
  • Chill.
  • Mix baking powder with a small amount of flour and add to potatoes.
  • Add enough flour so that the dough can be rolled very thinly on a floured board.
  • Roll only a small portion at a time.
  • Cut into quarters and bake on a hot (400F), lightly greased griddle, browning lightly on both sides.

1 large kumara, peeled and diced into cubes (sweet potato)
2 tablespoons olive oil
1 pinch sea salt
6 leaves romaine lettuce, chopped
8 cherry tomatoes, halved
4 radishes, sliced
1/4 cup feta cheese, crumbled
1/4 cup pine nuts, toasted
1 -2 tablespoon olive oil, to taste
1 -2 tablespoon balsamic vinegar, to taste
fresh ground black pepper, to taste

Steps:

  • Pre-heat the oven to 350°F.
  • Place the kumara in a baking dish and drizzle with 2 tablespoons olive oil. Sprinkle on a pinch of salt. Roast for 25 minutes or until soft. Set aside to cool.
  • Divide lettuce, tomato halves and radish slices between two chilled plates. Top each with half of the cooled kumara.
  • Sprinkle on crumbled feta and pine nuts.
  • Drizzle with olive oil and balsamic vinegar. Sprinkle with freshly ground black pepper.

2 medium sweet potatoes (about 400g), peeled and cut into 2cm cubes
3 tbsp olive oil, plus extra for drizzling
1⁄2 tsp chilli flakes, plus extra to serve (optional)
1 tsp smoked paprika
3 garlic cloves, unpeeled
2 tbsp tahini
1 lemon, juiced
vegetable crudités, breadsticks or crackers and pitted olives, to serve

Steps:

  • Heat the oven to 200C/180C fan/gas 6. Tip the sweet potatoes onto a baking tray and drizzle over 1 tbsp olive oil. Sprinkle over the chilli flakes, if using, and the paprika, then toss to coat in the spiced oil. Spread out to a single layer. Trim away the root of the garlic cloves, then nestle these among the sweet potatoes. Roast for 30-35 mins until the potatoes have softened, tossing halfway through.
  • Remove the tray from the oven and leave to cool completely. Tip the sweet potatoes into a food processor and squeeze in the garlic from its skin. Add the tahini and lemon juice, then blitz for 1 min until the potatoes have broken down.
  • With the motor running, gradually pour in the remaining olive oil. Continue to blitz for up to 4 mins, or until you have a smooth paste. Pour in 50-60ml cold water to loosen, blitz again to combine, then season to taste. Spoon the hummus into a bowl and swirl with the back of a teaspoon, then drizzle over a little more olive oil and scatter with extra chili flakes, if you like. Serve with your choice of veg crudités, breadsticks or crackers and olives for dunking.

An easy, creamy soup with just a hint of curry flavor. This recipe uses sweet potato because it is available in the US. In New Zealand they use kumara which is related to the sweet potato. It is a purplish root vegetable that, when peeled and cooked, is a yellow green color and is an important part of the Maori (native New Zealanders') diet.

4 tablespoons butter
2 garlic cloves, minced
1 medium onion, chopped
1 teaspoon fresh ginger, grated
1/2 teaspoon curry powder (or more to taste)
1 lb sweet potato, peeled and diced
1 cup vegetable stock or 1 cup chicken stock
3 cups milk
salt & freshly ground black pepper
1/4 cup cream or 1/4 cup coconut milk
fresh cilantro or scallion, minced

Steps:

  • In a large saucepan sauté onion, garlic, ginger and curry in butter over medium heat until onion is softened, about 5 minutes. Add the sweet potato and cook 1 or 2 minutes without browning. Add the stock and cover. Cook about 10 minutes, until tender.
  • Puree the soup with an immersion blender, if available. If not pour solids into a regular blender and puree. Return to pot and thin with milk. Only add enough milk until soup reaches desired consistency.
  • When ready to serve, ladle soup into serving bowls. Swirl in a tablespoon of cream or coconut milk into each bowl. Sprinkle a pinch of fresh minced cilantro or minced scallion on top.

2 cups water, tepid (about 99F/37C)
2 teaspoons salt
5 cups 4 grain bread flour (mixed from wheat, rye, barley, and oats)

Steps:

  • To roll out: 1 1/4 cups plain white flour Crumble the yeast in a mixing bowl.
  • Pour on the water.
  • Stir to dissolve the yeast. Add salt and bread flour.
  • Knead to an elastic dough.
  • Turn out the dough onto a floured work surface. Cut into 3 parts.
  • Form each part into a sausage and cut it into 8 pieces.
  • Form each piece into a round ball.
  • Cover and let rise for about 30 minutes.
  • Roll out each ball into a very thin circle. N.B.
  • Do not knead! Roll and turn the cake several times.
  • When it is very thin, about 2 mm (1/12"), prick very closely with a fork.
  • Make a hole in the middle of each cake. Place two cakes on each baking sheet. Bake at once at 275M-0C/525M-0F oven for 3 - 4 minutes.
  • Cool on a rack.
