EVERYTHING-SPICED SHRIMP, BROCCOLI AND POTATOES



Everything-Spiced Shrimp, Broccoli and Potatoes image

1 1/4 pounds small red potatoes, quartered
Kosher salt
4 cups small broccoli florets (about 9 ounces)
6 ounces (heaping 2/3 cup) chive-onion cream cheese
Freshly ground pepper
1 1/4 pounds peeled and deveined large shrimp
1 tablespoon extra-virgin olive oil
2 tablespoons everything seasoning, plus more for topping
2 tablespoons unsalted butter
2 tablespoons chopped fresh chives

Steps:

  • Put the potatoes in a large pot, cover with water by 2 inches and season generously with salt. Bring to a boil, then reduce the heat and simmer until the potatoes are tender when pierced with a knife, 12 to 15 minutes. Add the broccoli and cook until bright green and crisp-tender, about 1 more minute. Reserve 3 tablespoons cooking water, then drain the potatoes and broccoli.
  • Stir the cream cheese and reserved cooking water in a large bowl until smooth. Add the potatoes and broccoli and toss until evenly coated. Season with salt and pepper.
  • Toss the shrimp with the olive oil and everything seasoning in a medium bowl. Heat a large nonstick skillet over medium-high heat until very hot. Add the butter and let melt. Add the shrimp in a single layer and cook, turning halfway through, until browned, 3 to 4 minutes.
  • Stir the chives into the potato mixture. Divide the potato mixture and shrimp among plates. Sprinkle with more everything seasoning.

For those who don't want their shrimp boil to be too hot, this recipe is more savory than spicy hot. If desired, serve with cocktail sauce, hot sauce, Old Bay® seasoning, or other condiments.

2 cups boiling water
4 cubes chicken bouillon
8 cups water, or more as needed
1 large onion, quartered
1 head garlic
3 bay leaves
3 whole cloves
4 tablespoons butter
1 tablespoon kosher salt
1 tablespoon coriander seeds
2 teaspoons dill seeds
2 teaspoons white mustard seeds
2 teaspoons celery seeds
1 teaspoon whole allspice berries
1 teaspoon whole green peppercorns
1 lemon, halved
9 small red potatoes, or more to taste
3 ears corn, shucked and cut into thirds, or more to taste
16 ounces raw shrimp, headless and shells on
4 cups ice cubes

Steps:

  • Combine boiling water and bouillon cubes in a large pot and stir until dissolved. Add 8 additional cups of water, onion, garlic, bay leaves, cloves, butter, salt, coriander seeds, dill seeds, mustard seeds, celery seeds, allspice, and peppercorns and bring to a boil, about 5 minutes. Reduce heat to medium and simmer for 20 minutes.
  • Squeeze lemon juice into the pot and add lemon to the pot as well. Add potatoes and cook for 14 minutes. Add corn and cook 6 minutes more. Add shrimp and cook until opaque, about 3 minutes. Remove pot from heat.
  • Add ice cubes to the pot with the shrimp boil and let sit for 5 minutes.
  • For a traditional shrimp boil, place several layers of newspaper on the dining table. Use a slotted spoon to transfer shrimp, potatoes, and corn onto the center of the table for everyone to reach, grab, and enjoy. For a tidier take, place several layers of newspaper on a baking sheet. Place shrimp, potatoes, and corn on top of the sheet and place the sheet on the dining table for everyone to serve themselves. If you are a neat freak, place shrimp, potatoes, and corn in a serving dish to pass at the table.

8 quarts water
1/4 cup Old Bay seasoning
1/4 cup kosher salt
1 head garlic, halved through the equator
1 tablespoon chile flakes
1 bunch parsley, tied
1 1/2 pounds new potatoes, cleaned
8 to 10 large blue crabs, cleaned
2 pounds (about 2 dozen) jumbo shrimp, heads removed, shell-on
Melted butter, to serve
Toasted bread, to serve
Lemon wedges, to serve

Steps:

  • Bring the water to a boil in a very large stockpot. Add the Old Bay, salt, garlic, chile flakes and parsley and boil for 10 minutes to infuse. Add the potatoes and cook another 10 minutes. Add the crabs; cook 10 minutes more, or until the crabs are cooked through. Carefully remove the crabs with tongs; then add the shrimp and cook for 2 to 3 minutes, or until just opaque. Drain immediately. Serve the crab, shrimp and potatoes with melted butter, toasted bread and lemon wedges.

SPICY BOILED CRABS, SHRIMP, POTATOES, CORN, AND GARLIC

24 live blue crabs
two 3-ounce packets Zatarain's crab boil or 5 tablespoons Old Bay seasoning
1 tablespoon cayenne
1/2 cup table salt
3 lemons, quartered
2 onions, halved
1 1/2 pounds small potatoes (about 2 inches in diameter)
2 heads of garlic (not separated into cloves)
6 ears of corn, shucked
2 tablespoons Old Bay Seasoning*, or to taste, for sprinkling over boiled seafood
2 pounds large shrimp (about 30, preferably with heads)
Accompaniments:Horseradish Cocktail Sauce and French bread

Steps:

  • In a 7- to 8-gallon kettle bring 5 gallons water to a boil.
  • While water is coming to a boil, in a deep sink rinse crabs in 2 or 3 changes of water. (Do not fill sink too full or crabs may crawl out.)
  • Add Zatarain's crab boil or 5 tablespoons Old Bay seasoning, cayenne, salt, lemons, and onions to boiling water and boil 5 minutes. Add potatoes and garlic and boil until tender, about 15 minutes. Transfer potatoes and garlic with a large sieve to a large platter and keep warm, covered with foil. Add corn to boiling water and cook until tender, about 5 minutes. Transfer corn with tongs to platter and keep warm, covered with foil.
  • Return water to a boil. Transfer about 6 crabs carefully with long tongs to sieve, holding them down in sieve with tongs, and turn crabs out into boiling water. Add remaining crabs in same manner. Return water to a boil and cook crabs until just cooked through, about 10 minutes. (To determine doneness, remove a claw and crack it with the handle of a dinner knife. Use Knife to extract meat from claw.) Transfer crabs with sieve to another large platter and sprinkle with 1 tablespoon Old Bay seasoning.
  • Return water to boil and cook shrimp until just cooked through, about 2 minutes. Transfer shrimp with sieve to large platter with crabs and sprinkle with remaining tablespoon Old Bay seasoning.
  • Serve crabs, shrimp, and vegetables with horseradish cocktail sauce and French bread.

CRAWFISH AND SHRIMP POT WITH SPICED SWEET POTATOES

Plentiful throughout the Gulf Coast, crawfish and shrimp are Choctaw staples and traditional seasonings like filé, the spice ground from dried sassafras bark, and spicy chiles are a perfect accompaniment. Here, the crustaceans rest on a bed of spicy sweet potatoes, in a dish that calls back to traditional feasts and community gatherings. The sassafras adds a grassy, slightly sour note, and the berries bring more color and tang. You can vary the shellfish depending on the season and your locale in this festive dish, which is easily doubled to serve a crowd.

1 tablespoon red-pepper flakes, plus more as needed
1 tablespoon coarse sea salt, plus more as needed
2 pounds crawfish
1 pound head-on jumbo shrimp
2 tablespoons sunflower oil
1 cup chopped yellow onion
1 small orange or purple sweet potato, unpeeled, cut into 1/2-inch cubes
2 tablespoons New Mexico red chile powder or chipotle chile powder
1 tablespoon filé powder
1/2 cup fresh or thawed frozen blackberries
1/2 packed cup sliced dandelion greens (or other dark greens such as arugula or spinach), plus whole leaves reserved for garnish

Steps:

  • Add the red-pepper flakes, salt and 3 quarts water to a large pot. Bring to a boil over high heat. Add the crawfish and shrimp, return to a boil, then lower the heat and simmer until the shellfish is deep red, about 10 minutes, skimming off any foam that rises to the surface. Turn off the heat, cover and let stand for 10 minutes.
  • Meanwhile, prepare the vegetables: In a large skillet, heat the oil over medium-high. Add the onion and sauté until it begins to soften, about 3 minutes. Add the sweet potato, chile powder, filé powder and 2 cups of the shellfish cooking water and bring to a boil. Reduce the heat to medium and simmer until the sweet potatoes are tender, stirring occasionally, 8 to 10 minutes. Stir in the blackberries and sliced greens and cook for 1 to 2 minutes. Using the back of a fork or the tip of a wooden spoon, mash the blackberries gently and season the mixture to taste with coarse sea salt and red-pepper flakes.
  • Spoon the vegetables onto individual plates or a large platter. Strain the crawfish and shrimp mixture, then arrange the cooked shellfish on top of the vegetables. Garnish with the reserved leaves.

¼ cup seafood seasoning (such as Old Bay®), or to taste
1 pound small red potatoes
2 pounds king crab legs
2 cups chopped carrots
1 ½ cups chopped celery
12 pearl onions
1 pound spicy sausage links, cut into rounds
4 ears corn, husked
2 pounds unpeeled shrimp

Steps:

  • Bring 6 quarts water to a boil in a large stewing pot; add seafood seasoning. Cook potatoes in the seasoned water for 15 minutes.
  • Bring a separate pot of water to a boil; add seafood seasoning to taste. Cook crab legs until meat is tender, about 10 minutes.
