SPICED CLEMENTINE SYRUP

Per 3 cups fresh clementine juice
1 cup water
2/3 cup dark brown sugar
1 vanilla bean, sliced lengthwise
1 teaspoon whole allspice
1 3-inch chunk fresh ginger, peeled.

Steps:

  • In a large pan with a heavy bottom, combine clementine juice with other ingredients by stirring gently. Bring to a boil, then reduce heat to low and simmer for 20 minutes. Remove from heat, strain the liquid (discard the solids) and allow to cool before making the punch.

Here's a cocktail that's both a tribute to my mother (who loved whiskey sours laced with amaretto) and to my favorite flavors of the Christmas season: clementines, cinnamon and cloves. Juice the clementines a day in advance to save yourself some trouble on the holiday.

Number Of Ingredients 7

1 1/2 ounces bourbon, preferably Elijah Craig 12-year-old
1/2 ounce Pierre Ferrand Dry Curaçao
1/4 ounce spiced brown sugar syrup (see recipe)
Juice of 1 clementine (about 1 ounce), plus ribbon of peel for garnish
1 egg white (optional)
1/2 teaspoon Luxardo Amaretto (enough to rinse inside of coupe glass)
2 dashes Angostura bitters

Steps:

  • In a shaker filled with ice, combine the bourbon, curaçao, brown sugar syrup and clementine juice (and egg white, if using). Shake vigorously for 30 seconds.
  • In a chilled coupe glass, swirl enough amaretto to coat the inside. Strain shaken drink into coupe. Top with the bitters. Garnish with the ribbon of clementine peel.

SPICED APPLE SYRUP WITH CLEMENTINE & CLOVES

1 mace blade
2 whole cloves
small strip fresh ginger
1 clementine , zest finely peeled with a vegetable peeler
100g golden caster sugar

Steps:

  • Heat the apple juice with the whole spices, ginger, zest and sugar. Bring to the boil, then simmer for 10 mins.
  • Remove from the heat and leave to cool, then strain the syrup into small bottles.

8 whole cloves

1-inch piece fresh ginger, peeled and coarsely chopped

Steps:

  • Combine the sugar, 1 cup water, allspice, cloves, cinnamon and ginger in a small saucepan. Bring to a boil and cook until the sugar is completely melted. Remove from the heat and let steep for 1 hour. Strain into a small bowl, cover and refrigerate until cold.

1 cup sugar
1/4 cup thinly sliced peeled ginger
4 green cardamom pods
3 whole star anise
6 clementines or mandarin oranges
1/2 cup pomegranate seeds (optional)

Steps:

  • Bring water, sugar, ginger, cardamom, and star anise to a boil in a small saucepan over medium-high heat, stirring until sugar has dissolved, then simmer, uncovered, stirring occasionally, 10 minutes.
  • Remove from heat and let steep, covered, 15 minutes. Strain syrup through a sieve into a bowl, discarding solids. Chill, covered, until cold, at least 2 hours.
  • Cut peel from clementines, including all white pith, with a sharp knife, then cut fruit into 1/4-inch-thick rounds and put in a serving bowl. Add syrup and chill, covered, at least 1 hour. Just before serving, sprinkle with pomegranate seeds (if using).

One handful clementine peels (with a paring knife, remove as much pith as possible).

Steps:

  • To a large punch bowl, add all the ingredients, plus reserved clementine peels. Stir gently, then add a large block of ice.
  • For each serving, add as much seltzer as you like (it's strong) and a little grated nutmeg.
