BANANAS IN BROWN SUGAR AND RUM
Be very careful to stand away from the stove when you add the rum -- the flames will be brief but dramatic.

Steps:
- Peel bananas, and carefully cut in half lengthwise.
- In a medium saute pan over medium heat, melt 1 tablespoon butter. Add 2 tablespoons brown sugar, and swirl until dissolved.
- Add 2 bananas, cut side down, and cook for about 2 minutes on each side, turning very carefully.
- Pouring from a measuring cup, with the pan off the heat, add 1/4 cup rum. Stand back from stove, and return pan to heat. Shake the pan, allowing rum to ignite. Let the alcohol burn off, and again shake the pan, to coat the bananas. Cook until glazed and translucent, about 1 minute longer.
- Remove bananas to warm plates, divide sauce between them, and repeat with remaining 2 bananas.
- Garnish each banana with a little dab of creme fraiche or sour cream, and serve immediately.
SPICED BANANAS WITH RUM MASCARPONE CREAM
Taken from The Student cookbook - great summer recipe. Best cooked on the barbecue, these also make a tasty, warming snack when grilled - especially with a shot of leftover rum! :)

- 1. Put each banana on a double piece of foil. Drizzle over the lemon juice and sprinkle 1 tablespoon of sugar on each.
- 2. Mix together the butter and cinnamon until creamy then dollop on the bananas.
- 3. Wrap each banana tightly in foil and cook on the barbeque or under a medium grill for 10 minutes.
- 4. Meanwhile, make the rum mascarpone cream. Mix the cheese, rum and sugar together.
- 5. Unwrap the bananas and eat immediately with a dollop of the rum mascarpone cream.

CURRIED BANANA WITH RUM RAISIN MASCARPONE
Steps:
- Melt the butter in a pan over medium low heat. Add the bananas, rum, curry, cinnamon and 2 tablespoons of honey. Cover the pan for about 10 minutes. Remove from the heat.
- Next, mix the mascarpone and whipped egg white in a large bowl. Add the remaining 2 tablespoons of honey and the rum-soaked raisins. Combine with the curried bananas, and top with pecans.

- Melt butter in a skillet over medium heat. Add bananas and saute until they turn brown, about 3 minutes. Sprinkle brown sugar over the bananas and cook until the sugar melts, about another 3 minutes. Remove from heat and pour rum into skillet; ignite with a match and let the flames die out.
- Divide ice cream among 4 serving dishes and spoon bananas over. Serve immediately.

- Slice the bananas (circles) and place in a microwave dish.
- Mix together the cashew nuts, peanuts, coconut, sugar, cinnamon and nutmeg in a small bowl.
- Pour the orange juice and rum over the bananas, then sprinkle with the nut and sugar mixture.
- Dot the top with butter or margarine,.
- Microwave for 4 minutes or until the sauce is bubbly.
- Spoon in serving bowl and add a scoop of ice cream or top with Whipped cream.
- Freshly grated nutmeg makes all the difference to this dish. More rum can be added if preferred. Chopped mixed nuts can be used instead of peanuts.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 8x3 inch loaf pans. Whisk together the flour, baking powder, and baking soda; set aside.
- Mash the bananas, eggs, sugar, cinnamon, salt, nutmeg, and cloves together in a large bowl with a fork until well combined. Stir in the melted butter and vanilla extract, then fold in the flour mixture until a batter forms and no dry lumps remain. Pour into the prepared loaf pans.
- Bake in preheated oven until a toothpick inserted into the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes, then remove from the pan, and allow to cool completely on a wire rack.
