- Combine salt, ginger, nutmeg and cinnamon; rub over roast. Place roast, fat side up, on a rack in a shallow roasting pan. Insert a thermometer. Bake, uncovered, at 325° for 2-1/2 hours or until thermometer registers 160°. Cover and let stand 15 minutes before slicing. , In a medium skillet, combine the first six spiced apples ingredients; bring to a boil. Reduce heat and simmer, uncovered, until slightly thickened. Add apples; simmer, uncovered, until apples are just tender, stirring gently. Serve with sliced pork roast.

SPICED ROAST PORK WITH FENNEL AND APPLE SALAD
The chile paste for this pork is added in two stages: Initially it acts as a marinade and permeates the interior of the roast. After a second addition is applied, it's roasted over high heat to create a spicy, toasty bark.

- Pork:
- Cook chiles, star anise, fennel seeds, coriander seeds, cumin seeds, peppercorns, and cloves in a dry small skillet over medium heat, stirring often, until slightly darkened and fragrant, about 2 minutes. Let cool. Set one-fourth of spice mixture aside.
- Blend garlic, vinegar, ¼ cup oil, and ¼ cup water in a blender until smooth. Add remaining toasted spices and blend, adding splashes of water if needed to help turn the blades, until chile paste is mostly smooth; some texture is okay.
- Season pork with 1 tsp. kosher salt per pound (check the butcher's sticker on the package to see the weight of what you purchased). Smear half of chile paste all over pork; transfer to a wire rack set inside a rimmed baking sheet or a roasting pan and let sit at room temperature at least 2 hours, or cover and chill up to 12 hours.
- Finely grind reserved spice mixture in a spice mill or with mortar and pestle. Transfer to a small skillet; stir in remaining ¼ cup oil. Set over medium heat and cook, stirring, until spices have darkened slightly and are fragrant, about 1 minute. Let spice oil cool, then transfer to an airtight container. Cover and set aside.
- Preheat oven to 275°F. Roast pork until paste is darkened and looks dried out and an instant-read thermometer inserted into the center registers 120°F, 1½-2 hours, depending on the size. Make sure to take the temperature in more than one spot as there will be thick and thin parts of the roast. Let rest 2 hours.
- Preheat oven to 500°F. Rub pork with reserved chile paste and roast until marinade has formed a fragrant crust and an instant-read thermometer inserted into the thickest part registers 130°F, 8-12 minutes. Transfer pork to a cutting board and let rest 15 minutes. Thinly slice and transfer to a platter. Spoon reserved spice oil over pork; sprinkle with sea salt.
- Salad and assembly:
- Toss fennel bulb and fronds, apple, lime zest and juice, chiles, and cilantro in a large bowl; season salad with salt. Drizzle oil over and toss to coat. Serve pork with salad.

- Cut eight to ten 1-in. slits in top of roast; insert garlic slices. In a large nonstick skillet coated with cooking spray, brown roast on all sides. Transfer to a roasting pan. , In a small bowl, combine the mustard, vinegar, thyme and sage; brush over roast. In a small saucepan, combine the broth, apple juice and jam. Cook and stir over medium heat until jam is melted; pour over roast. Arrange apples around roast., Cover and bake at 350° for 1 to 1-1/4 hours or until a thermometer reads 145°, basting occasionally. - In a small bowl, combine the first 4 ingredients; set aside.
- Cut slits in top of roast; insert the garlic strips.
- Combine flour, salt, sugar, pepper and mustard; rub over roast.
- Place the roast on a rack, in a shallow roasting pan.
- Bake, uncovered at 350°F, or until a meat thermometer reads 160°F.
- Brush applesauce mixture (this mixture can be doubled if desired) over the roast during the last half hour of baking.

- Mix the first five ingredients. Cut tenderloin crosswise into eight slices; pound each with a meat mallet to 1/2-in. thickness. Sprinkle pork with seasoning mixture., In a large nonstick skillet, heat butter over medium heat. Add apple; cook and stir 3-4 minutes or until crisp-tender. - Preheat the oven to 350 degrees. Rub kosher salt all over the pork roast. Warm the oil in a skillet over medium heat. Brown the roast on all sides and then set aside. Mix the pepper into the apple butter and then generously rub and cover the roast on all sides with the mixture. Place in a baking dish and roast until internal temperature is 145 degrees.
- Cooking time was 70-80 minutes, however I did allow the uncooked roast to rest at room temperature for about an hour prior to cooking it. If you are cooking a cold roast straight from the fridge, it will take a little while longer. Enjoy!

- In a small bowl, combine lemon zest and spices. Take half of this spice mixture, move it into another bowl and add olive oil. Season pork with salt and pepper and rub with the oil spice mixture. Allow to rest for 45 minutes to one hour before roasting.
- Heat oven to 375°. In a roasting pan or deep baking dish, toss apple and onion wedges with lemon juice and the remaining spice mixture. Add 1/2 cup water, and place pork roast on top. Roast until internal temperature reaches 145°. Remove roast to cutting board and tent with foil, allowing to rest for 5–10 minutes.
- While pork is roasting, combine apple cider and maple syrup into a small to medium saucepan and cook over medium high heat, bringing to a boil. Allow to simmer for a few minutes to reduce slightly. Remove from heat and set aside.
- Set aside a few apple and onion wedges for plating. In a mini-food processor or blender, blend the remaining roasted apples and onions along with the pan drippings until smooth. Add puree into the apple cider mixture and heat over medium-low heat to warm. Season with salt and pepper to taste.
