Poached Eggs with Yogurt and Spicy Butter image

Ingredients

1 cup Greek yogurt
1 small clove garlic, finely grated (1/4 teaspoon)
1 tablespoon minced fresh chives
Kosher salt and freshly ground pepper
2 tablespoons unsalted butter
1/2 teaspoon smoked paprika
Pinch of cayenne pepper
2 large eggs
Chive blossoms, for serving (optional)

Steps:

Combine yogurt, garlic, and chives in a small bowl. Season with salt and pepper. Melt butter in a small saucepan. Add paprika and cayenne; remove from heat. Cover to keep warm.
Fill a large, shallow saucepan with 2 inches water; bring to a boil, then reduce heat to a simmer. Break 1 egg into a coffee cup and slowly slide into water. Repeat with remaining egg. Cook until whites are set but yolks are still soft, about 3 minutes. Using a slotted spoon, transfer eggs to a paper towel-lined plate.
Divide yogurt mixture between plates. Top with eggs; drizzle with butter mixture. Sprinkle with pepper and chive blossoms; serve.

For tomato sauce, in a large skillet heat 1 tablespoon of the oil over medium heat. Add garlic; cook for 1 minute. Stir in tomatoes, salt, crushed red pepper, and black pepper. Bring to boiling; reduce heat. Boil gently, uncovered, for 12 to 15 minutes or until tomato juices begin to thicken, stirring and crushing tomatoes occasionally with the back of a spoon.
Crack one of the eggs into a small bowl or cup. Slip the egg into the tomato mixture. Repeat with the remaining eggs, allowing each egg an equal amount of space in the tomato mixture. Reduce heat to medium-low. Simmer, covered, about 5 minutes or until egg whites are completely set and yolks begin to thicken but are not hard.
Drizzle eggs with the remaining 1 tablespoon olive oil before serving. Sprinkle with fresh basil and serve with flatbread.
