12 whole chicken wings
2 tablespoons garlic salt
2 tablespoons black pepper
2 tablespoons cayenne pepper
2 tablespoons fresh Greek oregano leaves
2 cups Blue Cheese Dressing, recipe follows
1/4 pound blue cheese
1 cup mayonnaise
1 tablespoon red wine vinegar
1 tablespoon lemon juice
2/3 cup evaporated milk
1/4 teaspoon garlic salt
1/4 teaspoon celery seed

Steps:

  • Rinse the chicken wings under cold running water, then drain and blot dry completely with paper towels. Place the wings in a large bowl and sprinkle with the garlic salt, pepper, cayenne, and oregano. Season just 1 side of the wings for mild, or for hotter wings, turn the wings to coat the other side with seasonings and then cover and marinate in the refrigerator for 24 hours.
  • Preheat a grill to medium-high.
  • Grill chicken wings, turning once, until the juices run clear when pierced with a fork. Serve immediately with a side of Blue Cheese Dressing.
  • Blend all ingredients together in a food processor. Transfer to a bowl, cover, and refrigerate until ready to serve.

4 cloves garlic, minced
3 green onions, chopped
1 tablespoon sugar
1 tablespoon Chinese five-spice powder
2 tablespoons fish sauce
2 tablespoons soy sauce
2 tablespoons sweet chili sauce
1 pinch salt to taste
16 chicken wings
2 limes, quartered

Steps:

  • Whisk together the garlic, green onion, sugar, five-spice powder, fish sauce, soy sauce, chili sauce, and salt in a bowl. Arrange the chicken pieces in a shallow, non-metallic dish. Spoon the sauce mixture over the chicken to evenly coat. Cover the dish with plastic wrap and refrigerate 8 hours or overnight.
  • Preheat oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.
  • Arrange the marinated chicken on the prepared baking sheet.
  • Bake in the preheated oven until crispy, about 45 minutes. Serve with lime wedges on the side.

3-1/2 pounds chicken wings
3 green onions, chopped
2 tablespoons sweet chili sauce
2 tablespoons reduced-sodium soy sauce
2 tablespoons fish sauce or additional soy sauce
4 garlic cloves, minced
1 tablespoon sugar
1 tablespoon Chinese five-spice powder
2 medium limes, cut into wedges

Steps:

  • Cut chicken wings into 3 sections; discard wing tip sections. Combine the onions, chili sauce, soy sauce, fish sauce, garlic, sugar and five-spice powder in a large container. Add wings and toss to coat. Cover and refrigerate 8 hours or overnight., Drain chicken, discarding marinade. Place wings in a greased 15x10x1-in. baking pan., Bake at 425° for 25-30 minutes or until no longer pink, turning every 10 minutes. Squeeze lime wedges over wings.

3 tablespoons paprika
1 tablespoon salt
1 tablespoon cayenne
1 teaspoon ground fenugreek
1 teaspoon ground ginger
1 teaspoon onion powder
½ teaspoon ground cardamom
½ teaspoon ground nutmeg
½ teaspoon garlic powder
¼ teaspoon ground cloves
¼ teaspoon ground cinnamon
¼ teaspoon allspice
12 chicken drumettes
½ cup flour
1 tablespoon baking powder
1 tablespoon cornstarch
2 tablespoons unsalted butter

Steps:

  • In a medium bowl, combine the paprika, salt, cayenne, fenugreek, ginger, onion powder, cardamom, nutmeg, garlic powder, cloves cinnamon, and allspice. Mix well.
  • Save two tablespoons of spice mix. Set aside.
  • Add the chicken drumettes to the bowl with the spice mixture and toss to coat evenly. Marinate in the fridge at least 30 minutes, up to overnight.
  • In a small bowl, combine the flour, baking powder, and cornstarch. Sprinkle the flour mixture over the marinated chicken. Toss them until well-coated.
  • Preheat the oven to 425˚F (220˚C).
  • Place the chicken on a wire rack set over a parchment paper-lined baking sheet. Bake them for 30-40 minutes or chicken is slightly browned.
  • In a small saucepan, melt the butter. Once the butter is melted, add the reserved 2 tablespoons spice mix and stir to combine.
  • Drizzle the spice butter mixture over the drumettes.
  • Enjoy!

  • Mix oregano, granulated garlic, paprika, sugar, 4 tsp. salt, and ½ tsp. MSG in a small bowl. Arrange chicken wings on a foil-lined rimmed baking sheet. Season all over with spice mix. Let sit at room temperature 30 minutes, or cover and chill up to 2 days.
  • Place racks in center and upper third of oven; preheat to 375°. Drizzle wings with oil and toss to coat. Bake on center rack, turning with tongs halfway through, until cooked through and skin is golden brown, 30–35 minutes.
  • Remove from oven. Heat broiler. Broil wings on upper rack, turning every 2–3 minutes, until skin is deeply browned and starting to char at the edges, 5–7 minutes (watch them closely).
  • Transfer wings to a platter, season with salt and a little more MSG. Top with herbs and lime and cucumber wedges.
