CHEESY BAKED EGGS FOR ONE
Easy to make Cheesy Baked Eggs are a great way to start the day! Made with two eggs, cream or milk, cheese and seasonings.

Steps:
- Heat the oven to 400 degrees F (200 degrees C).
- Coat the inside of an 10-ounce oven safe ramekin with the butter.
- Whisk together the eggs and cream in a small bowl.
- Stir in the cheeses, salt, and pepper.
- Pour into the ramekin and bake for 15-18 minutes or until eggs are set.
- Let cool 5 minutes and enjoy.

EASY CHEESY BAKED EGGS
This is an easy baked eggs recipe from my Grandpa Douglas' mother, Marguerite. We made this the other day and it was fabulous! This would be a 6 out of 5 if possible to rate it that.

Steps:
- Preheat the oven to 325 degrees F (165 degrees C). Grease an 8x8-inch pan.
- Cover the bottom of the prepared pan with 1/2 of the sharp Cheddar cheese.
- Mix together heavy cream, dry mustard, salt, and paprika in a bowl. Pour 1/2 of the mixture over the cheese in the prepared pan.
- Break eggs over the top, making sure not to break yolks. Cover with remaining cream mixture and top with remaining sharp Cheddar cheese.
- Bake in the preheated oven until eggs are set, about 20 minutes. Serve immediately.

- In a large bowl, combine cottage cheese, 1 1/2 c sour cream, 2 c mozzarella cheese, parmesan cheese, and green chilies.
- Grease bottom and sides of a deep-dish pie plate or small round baking dish.
- Place one tortilla in pie plate and cover with 1/3 of cheese mixture.
- Repeat the layers, ending with a tortilla.
- Bake at 350 degrees 20-30 minutes, or until cheeses melt and begin to bubble out from between the tortillas.
- Remove from oven and garnish the top with olives, scallions, and tomatoes.
- Cut into wedges and serve with remaining sour cream.

CRISPY EGGPLANT PARMESAN STACKS
Eggplant rounds are breaded and baked, then stacked and layered with Ragu® Old World Style® Traditional Sauce and mozzarella cheese, then baked again until hot and cheese has melted.

- Preheat oven to 425 degrees F (220 degrees C).
- Sprinkle both sides of eggplant rounds generously with salt; place on baking sheet for 15 minutes to draw out moisture. Use paper towels to blot moisture from each side of the eggplant slices. Sprinkle lightly with salt and pepper.
- Whisk eggs in a shallow bowl. Place panko bread crumbs in a second bowl. Dip each side of the eggplant slices in the whisked eggs, then press into the panko crumbs to coat each side. Place slices on a cooling rack on a baking sheet.
- Spray the tops of eggplant generously with cooking spray. Bake 8 minutes in preheated oven. Turn each slice, and spray the other side with cooking spray. Bake an additional 8 to 10 minutes. Remove from oven and let cool slightly.
- Reduce oven temperature to 350 degrees (175 degrees C).
- To make the stacks: Cover a baking sheet with parchment paper. Place a large slice of eggplant on the parchment. Top with a spoonful of Ragu® Old World Style® Traditional Sauce and a slice of mozzarella. Place another slice of eggplant on the first; repeat the layering process until you have about 5 or 6 slices in a stack. Top with a generous layer of parmesan cheese.
- Bake stacks until the cheese has melted, 10 to 15 minutes. Remove from oven and let cool for a few minutes. Serve warm.

- Cut Smokie lengthwise in half, being careful to not cut through to opposite side.
- Heat oil in nonstick skillet on medium heat. Add pepper and Smokie, cut sides down; cook 2 to 3 min. on each side or until Smokie is heated through and pepper is lightly browned, occasionally pressing pepper with back of spatula to flatten.
- Spread cut sides of bun with mustard. Place Smokie and pepper on bottom half of bun.
