SPECIAL SCOTTISH SWEDE
This is a more modern Scottish recipe. Makes a nice change from mashed potatoes and is a great accompaniment to most beef, pork, or lamb dishes

Steps:
- Boil the swede until tender (about 20 minutes) and drain.
- Meanwhile, fry the onion in the oil and after 2 minutes add the drippings and apples.
- Cook for 10 minutes over medium heat.
- Mash the swede and add to the pan.
- Season and stir well.
- Sprinkle a little grated nutmeg on top and serve.
- For the Vegetarian option please use butter.

NEEPS & TATTIES SOUP

- Melt the butter in a large saucepan over a medium heat. Add the coriander and the vegetables, fry for 4-5 mins, then cover with 400ml water and bring to the boil. Cook until all the vegetables are soft - around 20-25 mins.
- Season with salt, pepper and nutmeg, then add the milk. Transfer to a blender or blitz with a stick blender until smooth, then return to the pan to heat through. (For a really smooth consistency, push the mixture through a sieve after blending.) Check the seasoning and add a little more salt and nutmeg, if you like.
- Meanwhile, heat the cooked haggis or black pudding in a frying pan until sizzling. Serve the soup in bowls and top with the haggis or black pudding, a swirl of double cream and the celery leaves.

HONEY-ROASTED SWEDE WITH CHILLI & CUMIN
This versatile root vegetable can be roasted like a potato - with a drizzle of honey and sprinkling of spice you get a very special side dish

Steps:
- Heat oven to 200C/180C fan/gas 6. Toss the swede in olive oil in a shallow roasting tin, then season. Roast in the oven for 35-40 mins, tossing occasionally, until the swede is golden and soft.
- Stir in the honey and cumin seeds, and continue to roast for 10 mins until just starting to catch. Remove and stir through the chilli and coriander to serve.

- As simple as it can be. Peel and chop the turnips (or swedes if that's what you call them) and put them in a big pan with boiling water. Add salt and pepper and simmer for up to 2 hours. Remember to replace the water as often as you need to. The neeps will be ready anytime after around 20 - 40 minutes, depending on your cooker and the size of chunks you cut your vegetables into, as well as your preference. We like long boiled darker mashed neeps here..
- When cooked, the neeps will be easy to put a knife into and simply mash them with a little butter until the lumps are all out. Some people add a little milk, but I prefer mine without.
- If you want to keep them hot while you are making a full meal ready, just put a knob of butter on the top, cover with tin foil and put in the oven on a low heat.
