SPARKLING PARADISE
Recipe from the PARADISE Mango Rum liqueur insert. YUMMY!! Paradise Mango Rum liqueur is slightly different from your traditional mango rum as this has the appearance of mango nectar - I might suggest adding some if you aren't using or can't find Paradise Mango Rum Liqueur in your area yet. It is only recently being imported to the States and somewhat limited in other parts of the world (from the Phillipines). Ours was a gift and delicious!

- Into a cocktail glass,pour Paradise Mango Rum and soft drink, then stir.
- Garnish and enjoy!
- *Note - If you can't find Paradise Mango Rum liqueur, Cruzan will work great here and is inexpensive to boot. To make it a bit more like the liqueur, you might want to add a splash of mango nectar! Delicious either way!

SPARKLING PARFAITS
Steps:
- For the champagne flutes: Bring 1 cup water to a boil in a saucepan. In a medium bowl, whisk together the boiling water, honey and gelatin. Refrigerate until the mixture is cooled slightly but still liquid, about 30 minutes.
- Stir in the champagne. Pour the mixture into 6 champagne flutes. Let set for 20 more minutes in the fridge. Place a raspberry in the bottom of each flute. Let sit in the fridge until fully set, about 3 hours.
- For the whipped cream: Begin to beat the heavy cream with an electric mixer in a large bowl. Gradually add the sugar and keep beating until you have soft peaks of whipped cream.
- To serve: Top the champagne flutes with whipped cream and gold sugar sprinkles.

- Ina large saucepan melt the butter,add the flour for 2 minutes to start the roux. slowly add the red wine and chicken stock stirring constantly.When mixture is smooth add the jelly, hot sauce and creole mustard.Put in slow cooker set on high.
- In a large sauce pan saute onions,peppers, and scallion tops for 6 minutes or until onions are translucent. Add garlic,parsley,thyme,bay leaf,cayenne pepper and salt cook for 2 more minutes.Turn off the heat and let cool for 10 minutes.In a large bowl combine the ground beef and pork then add the cooled vegetables,beaten eggs and milk.combine everything and mix well.Add the bread crumbs and crushed red pepper flakes blend into meat mixture.Make into balls, size is your choice, add a little oil to a large sauce pan or skillet. Do not let meatballs touch other, brown on all sides. Remove and set on a paper towel to drain.Add the meatballs to the sauce in the crock pot for 2 hours on high or if your crock pot is too hot cook on low.Serve from cooker.
