3 inches piece peeled fresh ginger, grated
1/2 cup coarsely chopped fresh mint leaves
1/2 cup fresh lime juice
6 cups sparking water or 6 cups club soda
1/2 cup sugar
1 pinch salt
1 pinch fresh ground black pepper

Steps:

  • In a blender, blend together all the ingredients, except ice. Strain and serve over lots of ice. If the kids aren't around you can also add gin or vodka too!

6 fluid ounces coconut milk
3 limes, juiced
2 tablespoons almond-flavored syrup (such as Torani®)
1 cup club soda, or as needed
4 pinches ground nutmeg
4 lime wheels
4 sprigs fresh mint
cocktail umbrellas

Steps:

  • Place a few ice cubes in a pitcher; add pineapple juice, coconut milk, lime juice, and almond-flavored syrup and stir until chilled. Strain mixture and pour into 4 glasses.
  • Top each glass with club soda; mocktail will foam up.
  • Dust each mocktail with nutmeg. Garnish with a lime wheel, sprig of mint, and umbrella.

1 cup honey
2 tablespoons minced fresh gingerroot
2 cups club soda, chilled
1 cup lemon juice
Lemon slices and fresh mint, optional

Steps:

  • In a saucepan, bring the water, honey and ginger to a boil. Remove from heat; cover and steep for 10 minutes. Strain, discarding ginger. Cool., Transfer to a pitcher; stir in soda and lemon juice. Serve over ice. Garnish with lemon slices and fresh mint, if desired.

  • For mint ice cubes, combine the water, mint and lemon juice; pour into 2 ice cube trays. Freeze until set. In a pitcher, combine the lemons and sherbet; slowly stir in ginger ale. Add the mint ice cubes.
