One Pan Spanish Chicken with Chorizo, Tomato and Potatoes image

A one-pan dinner, chock full of flavour thanks to the chorizo! The active prep / cook time is only around 20 minutes so this is a super fast meal for midweek!

4 chicken thigh fillets (, skin on and bone in (about 8oz/250g each) (Note 1))
8 - 12 baby potatoes (, scrubbed and skin on, halved (or 3 medium potatoes, cut into 4) (Note 2))
2 chorizo ((5 - 6 oz / 150 - 200g in total), cut into 1/3cm / 1/8" slices (Note 3))
2 cloves garlic (, minced)
1 small red capsicum ((bell pepper), cut into slices)
1 small red onion (, halved and cut into slices (or ordinary onion))
1 can (15oz/400g) crushed tomatoes
1 tbsp dried oregano
1/2 to 1 punnet cherry tomatoes ((8oz / 250g) (Note 4))
2 tbsp lemon juice ((Note 5))
1 1/2 tbsp paprika
1/4 - 1/2 tsp cayenne or chilli powder ((adjust to taste for spiciness))
1 1/2 tsp salt
Black pepper
Fresh oregano leaves

Steps:

  • Preheat oven to 350F/180C.
  • Combine the Rub ingredients in a small bowl. Slather over the chicken.
  • Boil or microwave the potatoes until slightly undercooked.
  • Heat the oil in a large, deep fry pan or oven proof casserole dish over high heat.
  • Add the chicken, skin side down, and cook unit light brown - about 1 to 1 1/2 minutes. Then turn and cook the other side until a slightly deeper brown - about the same time. Remove into a big bowl.
  • Add the chorizo and fry until light brown on each side - about 1 minute (each side). Remove into the same bowl as the chicken.
  • If the pan is looking dry (depends on fattiness of chicken and chorizo), add 1 tbsp of olive oil. I did not need this.
  • Add the garlic, capsicum (bell pepper) and onion and sauté for 2 minutes until the capsicum is slightly charred. It will be extra charred from the dark brown residue from the chorizo and chicken.
  • Add the canned tomatoes and oregano and stir to combine, scraping the bottom of the pan. Then add the potato, chicken, chorizo and cherry tomatoes. Nestle the chicken in so it is half submerged in the tomato.
  • Bring to simmer, then cover with a lid (I use a lid from a large pot) or foil and bake for 30 to 40 minutes until the chicken is cooked through and dark brown.
  • Serve, garnished with fresh oregano leaves if desired.

3/4 pound skinless, boneless chicken thighs, cut into 1/2-inch chunks
1/2 pound sweet or hot Italian sausage, cut into 1/2-inch chunks
Kosher salt and freshly ground pepper
1 teaspoon dried marjoram or oregano
1/3 cup extra-virgin olive oil
2 medium onions, diced
3 cloves garlic, chopped
2 bay leaves
3/4 cup tomato puree
12 ounces spaghetti, broken into 3-inch pieces
Grated manchego or parmesan cheese, for garnish (optional)

Steps:

  • Bring a large kettle or pot of water to a boil. Season the chicken and sausage with 2 teaspoons salt, 1 teaspoon pepper and the marjoram. Heat the olive oil in a heavy-bottomed pot over high heat. Add the chicken and sausage and brown on all sides, about 5 minutes. Transfer to a plate with a slotted spoon.
  • Add the onions, garlic, bay leaves and tomato puree to the pot. Reduce the heat and cook, stirring, until the oil turns deep red and the onions are tender, 6 to 8 minutes. If the onions are sticking, add a splash of water and scrape the bottom of the pan with a wooden spoon.
  • Add the spaghetti to the onion mixture and stir-fry until golden, about 6 minutes. Add the chicken and sausage and enough boiling water to cover the pasta by 1/2 inch. Simmer, stirring once or twice, until the pasta is al dente and the sauce thickens, about 10 minutes. Season with salt and pepper and garnish with cheese, if desired.

1 tablespoon olive oil or 1 tablespoon other cooking oil
3 lbs of meaty chicken pieces
2 cups chopped onions
3 teaspoons fresh garlic
2 green peppers, chopped
1 1/2 lbs kielbasa, cut in 1/2 inch pieces
4 cups water
4 teaspoons chicken bouillon
1/8 teaspoon curry powder
2 cups uncooked long-grain white rice
1 (10 ounce) package frozen green peas
1 (4 1/2 ounce) jar sliced mushrooms

Steps:

  • Preheat oven to 350°F.
  • Grease a 9x13x2-inch pan.
  • In frying pan, add oil and heat 2 minutes on medium-high temperature.
  • Add chicken pieces, a few at a time, and brown each piece.
  • Remove from frying pan and drain on two layers of paper towels.
  • To the frying pan, add onion, garlic, peppers and sausage in skillet.
  • Cook over medium-high heat until vegetables are lightly browned.
  • To remove grease, pour ingredients into a colander and run under hot water for 1 minute; drain well.
  • Add to casserole dish.
  • Spread mushrooms evenly over vegetable and sausage layer.
  • Add water, rice, chicken bouillon, basil, curry powder, paprika, rice and green peas.
  • Gently stir ingredients to mix well.
  • Place chicken pieces on top of casserole.
  • Cover casserole.
  • Bake 35 to 40 minutes.
  • Reduce oven temperature to 300°F, uncover casserole, and continue baking another 20 to 30 minutes until rice is tender.
  • Remove from oven and serve.

4 cups chicken stock
1/2 teaspoon saffron threads
3 tablespoons extra-virgin olive oil
6 ounces chorizo, sliced
6 ounces merguez (lamb sausage), sliced
6 ounces garlic sausage, sliced
1 large onion, finely chopped
1/2 cup red bell pepper, finely chopped
3 cloves garlic, minced
1 teaspoon Spanish smoked paprika
1 1/2 cups Spanish short-grain rice
1/2 cup tomato purée, fresh or canned
Salt
Freshly ground black pepper
1/2 tablespoon chopped flat-leaf parsley

Steps:

  • Heat stock in a saucepan. Add saffron and set aside. Heat oil in a 12- to 14-inch paella pan or cast-iron skillet. Add sausages and sauté on medium heat until lightly browned. Remove.
  • Add onion, bell pepper and garlic to same pan. Sauté until soft. Stir in paprika and rice. Stir in tomato purée. Strain stock and add. Return sausages to pan. Stir once, season liquid to taste and cook, uncovered, on medium about 25 minutes, until liquid is absorbed and rice is tender.
  • Remove from heat and place sheet of parchment paper on surface for 10 minutes. Remove parchment, scatter parsley on top and serve, making sure to include any crusty bits that cling to pan with each portion.

2 pounds skinless, boneless chicken breasts, cut into 2 inch pieces

3 cloves garlic, crushed
1 teaspoon crushed red pepper flakes
2 cups uncooked short-grain white rice
1 pinch saffron threads
1 bay leaf
½ bunch Italian flat leaf parsley, chopped
1 quart chicken stock
2 lemons, zested
2 tablespoons olive oil
1 Spanish onion, chopped
1 red bell pepper, coarsely chopped
1 pound chorizo sausage, casings removed and crumbled
1 pound shrimp, peeled and deveined

Steps:

  • In a medium bowl, mix together 2 tablespoons olive oil, paprika, oregano, and salt and pepper. Stir in chicken pieces to coat. Cover, and refrigerate.
  • Heat 2 tablespoons olive oil in a large skillet or paella pan over medium heat. Stir in garlic, red pepper flakes, and rice. Cook, stirring, to coat rice with oil, about 3 minutes. Stir in saffron threads, bay leaf, parsley, chicken stock, and lemon zest. Bring to a boil, cover, and reduce heat to medium low. Simmer 20 minutes.
  • Meanwhile, heat 2 tablespoons olive oil in a separate skillet over medium heat. Stir in marinated chicken and onion; cook 5 minutes. Stir in bell pepper and sausage; cook 5 minutes. Stir in shrimp; cook, turning the shrimp, until both sides are pink.
  • Spread rice mixture onto a serving tray. Top with meat and seafood mixture.

4 chicken breast halves with skin and bone left intact, about 2 pounds
Salt to taste, if desired
Freshly ground pepper to taste
2 large Italian-style link sausages about 1/2 pound
2 tablespoons olive oil
1/2 pound small mushrooms, rinsed and drained
2 ounces prosciutto, cut into thin strips, about 3/4 cup
1/2 cup finely chopped onion
1 teaspoon finely minced garlic
1 bay leaf
1/2 teaspoon dried thyme
1 teaspoon loosely packed thread saffron
2 cups dry white wine
1 cup canned crushed tomatoes
1 cup fresh or canned chicken broth
2 dozen small littleneck clams
24 small pimento-stuffed green olives

Steps:

  • Sprinkle the breast halves with salt and pepper.
  • Prick the sausages all over with the tines of a two-pronged fork.
  • Heat the oil in a large, heavy skillet and add the breast pieces, skin side down. Cut each sausage in half crosswise and add the pieces to the skillet. Cook the chicken pieces 5 minutes and turn. As the chicken cooks, turn the sausage pieces often. Continue cooking about 2 minutes, then scatter the mushrooms over all. Cook, stirring occasionally, about 5 minutes longer. Carefully pour off the fat from the skillet, discard fat.
  • Sprinkle the prosciutto, onion and garlic over all and stir to blend. Add the bay leaf, thyme and saffron. Stir in the wine, tomatoes and broth. Bring to a boil, cover closely and cook about 5 minutes. Add the clams and olives, cover and continue cooking until the clams open, 5 to 10 minutes. Remove bay leaf and serve the dish with rice.
