This pimiento and cheese spread is a spicy, modern version of my mother's delicious recipe. Serve it stuffed in celery or spread on crackers or a sandwich. -Elizabeth Hester, Elizabethtown, North Carolina

12 ounces sharp white cheddar cheese
8 ounces reduced-fat cream cheese, softened
2 teaspoons Worcestershire sauce
2 teaspoons white vinegar
1/4 teaspoon white pepper
1/4 teaspoon garlic powder
1/4 teaspoon cayenne pepper
1 jar (4 ounces) diced pimientos, undrained
Assorted crackers and vegetables

Steps:

  • Shred cheese; transfer to a large bowl. Add cream cheese, Worcestershire sauce, vinegar, pepper, garlic powder and cayenne; beat on low speed until blended. Drain pimientos, reserving 2 tablespoons juice. Stir in pimientos and reserved juice. Serve with crackers and vegetables.

  • Puree 1/3 cup sliced pimientos (drained) in a blender or food processor until smooth. Transfer to a large bowl. Add 3 cups finely grated sharp cheddar and beat with a mixer until combined. Beat in 1/4 cup mayonnaise.

Two 7-ounce jars canned, sliced pimientos, drained
Three 10-ounce bricks sharp Cheddar, finely grated
1 cup mayonnaise
White sandwich bread

Steps:

  • Place the drained pimientos in a blender or food processor and puree until smooth. Using an electric mixer, combine the pimientos and cheese, beating until smooth. Beat in the mayonnaise. Spread on slices of white sandwich bread while the mixture is room temperature. Trim the bread crusts and cut the sandwiches into triangles.

3 tablespoons reduced-fat mayonnaise
2 ounces reduced-fat cream cheese
2 tablespoons chopped pimientos (well drained)
1 cup grated yellow cheddar cheese (4 ounces)
coarse salt and ground pepper

Steps:

  • In a food processor, pulse reduced-fat mayonnaise with reduced-fat cream cheese and chopped pimientos (well drained) until combined.
  • Using a flexible spatula, scrape down sides of bowl. Add cheddar cheese; season with coarse salt and ground pepper. Pulse until spreadable and slightly chunky.

4 ounces Spanish Tetilla cheese, or ripe Italian fontina, rinds removed
2 ounces cream cheese
2 ounces Caña de Cabra or other soft goat cheese
1 teaspoon hot Spanish paprika
1 teaspoon sweet Spanish paprika
1 tablespoon hot sauce
Zest and juice of 1/2 lemon
1/2 teaspoon Worcestershire sauce
2 scallions, trimmed and minced
3 tablespoons finely chopped, drained piquillo peppers
Salt and ground black pepper to taste

Steps:

  • Mash the cheeses together until smooth. Work in the paprikas, hot sauce, lemon zest and juice and Worcestershire sauce. Fold in piquillo peppers and scallions. Season with salt and pepper.
  • Store in refrigerator until ready to use. Spread will keep up to two days.

1/2 small shallot, grated
2 ounces cream cheese, softened
6 tablespoons Hellmann's mayonnaise
6 tablespoons Miracle Whip
2 teaspoons Worcestershire sauce
1/4 teaspoon kosher salt
3 -5 dashes hot sauce
6 ounces mild cheddar cheese, shredded
6 ounces sharp cheddar cheese, shredded
3 ounces parmesan cheese, shredded
3 ounces monterey jack pepper cheese, shredded

Steps:

  • Drain peppers, reserving liquid, then finely chop if whole.
  • Process shallot, cream cheese, mayonnaise, Miracle Whip, Worcestershire, salt, hot sauce, and 2 Tbsp. pepper liquid in a food processor until very smooth. Add cheeses and pulse until just combined. Add peppers and pulse until just combined. Serve with crackers alongside.

Steps:
