1 clove garlic, peeled
Kosher salt
1 1/2 pounds vine-ripened tomatoes, preferably heirloom varieties, roughly chopped
8 ounces cucumbers, peeled, seeded and roughly chopped
2 scallions (white and green parts), roughly chopped
1/2 green bell pepper, cored, seeded and roughly chopped
1/4 jalapeno, stemmed and roughly chopped (with seeds if you like the heat)
1/4 cup roughly chopped fresh flat-leaf parsley
2 tablespoons roughly chopped fresh mint
Freshly ground black pepper
2 tablespoons extra-virgin olive oil, plus more for garnish
1 tablespoon sherry vinegar
1 1/2 cups chilled low-sodium tomato juice
4 ice cubes
4 tablespoons cubed cucumber, for garnish, optional

Steps:

  • On a cutting board, lightly sprinkle the garlic with a pinch of salt and smash it into a paste with the flat side of a large knife.
  • Mix the smashed garlic, tomatoes, roughly chopped cucumbers, scallions, bell peppers, jalapenos, parsley and mint in a large bowl. Add salt and pepper to taste. Stir in the olive oil and sherry, and toss well.
  • Add half of the vegetable mixture to a blender and pulse. Add half of the tomato juice and 2 ice cubes. Pour into a large bowl. Repeat with the remaining ingredients. Refrigerate for at least 1 hour for the flavors to come together.
  • Divide among chilled soup bowls, drizzle with olive oil, garnish with cubed cucumbers, if using, and serve.

SPANISH GRILLED HAM AND CHEESE WITH GAZPACHO



Spanish Grilled Ham and Cheese with Gazpacho image

1 pound tomatoes, roughly chopped
1/2 English cucumber, roughly chopped
1/2 large or 1 small red bell pepper, roughly chopped
1 clove garlic, smashed
3 tablespoons extra-virgin olive oil
1 tablespoon sherry vinegar
Kosher salt and freshly ground pepper
2 cups shredded Monterey jack cheese (about 8 ounces)
8 slices sourdough sandwich bread
3 ounces thinly sliced serrano ham
4 tablespoons unsalted butter

Steps:

  • Combine the tomatoes, cucumber, bell pepper, garlic, olive oil, vinegar, 3/4 teaspoon salt and a few grinds of pepper in a blender. Puree on high speed until creamy, 1 to 2 minutes. Refrigerate until ready to serve.
  • Divide half the cheese among 4 bread slices. Evenly top with the ham and remaining cheese and bread slices. Melt 1 tablespoon butter in a large nonstick skillet over medium heat. Add 2 of the sandwiches and cook, pressing with a heavy skillet, until golden brown on the bottom, 3 to 4 minutes. Flip the sandwiches, adding another 1 tablespoon butter to the pan. Cook, pressing with the skillet, until browned on the other side and the cheese is melted, about 3 minutes. Remove to a plate and sprinkle lightly with salt. Wipe out the skillet and repeat with the remaining 2 tablespoons butter and sandwiches.
  • Season the gazpacho with salt and pepper, if necessary. Divide among small bowls. Serve with the sandwiches.

6 slices firm, thinly sliced close-textured bread, such as Pepperidge Farm
3 tablespoons sweet butter, softened
3 thin slices honey-cured ham
1/4 pound sliced Gruyere cheese, white cheddar, or Swiss

Steps:

  • To assemble the sandwiches, butter both sides of each bread slice. Lay ham and cheese on one slice and cover with the another slice. Trim the crusts off the sides.
  • Heat a saute pan over medium-low heat, then fry the sandwiches until the cheese starts to melt and the sandwiches are golden brown, about 3 minutes on each side. You may need to add more butter to the pan.
  • Remove the sandwiches to paper towels to drain, let them cool for 1 minute, then cut into quarters diagonally and serve 3 quarters each per serving.

GRILLED SHRIMP GAZPACHO



Grilled Shrimp Gazpacho image

2 pints pico de gallo, spicy, fresh
2 cups fresh vegetable mix (broccoli, cauliflower, peppers, etc.)
20 colossal boiled shrimp, shells removed
Salt and freshly ground black pepper
1 cup fresh cilantro sprigs, torn into bite size pieces
1 lime, cut into wedges

Steps:

  • Preheat grill, grill pan or nonstick pan over medium-high heat. Pour the pico de gallo into a blender and blend until smooth, about 30 seconds. Add the vegetable mix to blender and pulse until well chopped. Pour the mixture in a bowl and season with salt and pepper, stir and pour the gazpacho into 4 soup bowls.
  • Season the shrimp with salt and pepper and grill until warmed through, about 1 minute per side. Place the shrimp evenly over the gazpacho and add cilantro. Serve with fresh lime wedge.

1 medium red bell pepper, chopped
1 small onion, chopped
1 medium cucumber, peeled, seeded, and chopped
2 large garlic cloves, minced and mashed to a paste with 3/4 teaspoon salt
3 tablespoons red-wine vinegar, or to taste
1 tablespoons olive oil
Ice water or tomato juice for thinning soup
Croutons and finely diced tomato, green bell pepper, and cucumber, for garnish

Steps:

  • In a blender puree chopped tomatoes, bell peppers, onion, and cucumber, garlic paste, vinegar, oil, and salt and pepper, to taste. Chill soup well, preferably overnight.
  • Thin soup with ice water or tomato juice and serve topped with croutons and finely diced vegetables. Correct seasoning.

4 slices bread
6 ounces manchego cheese, thinly sliced
4 ounces jamon serrano (or prosciutto)
4 medjool dates, pitted and chopped

Steps:

  • Line a baking sheet with waxed paper.
  • Spread butter on bread slices.
  • Place two slices of bread on baking sheet, buttered side down; top with half of the sliced cheese and ham, dividing evenly; sprinkle with the dates.
  • Top with remaining cheese and the two remaining bread slices; buttered side up. Refrigerate for 30 minutes (or up to 8 hours covered and wrapped in plastic; peeling plastic wrap away before continuing).
  • Heat panini press and cook sandwiches according to manufacturer's directions. ½ cup shredded extra-sharp Cheddar cheese
¼ cup shredded Swiss cheese
1 tablespoon butter
2 slices white bread
2 thin slices ham

Steps:

  • Mix the shredded cheeses together in a small bowl.
  • Melt butter in the bottom of a fry pan over medium heat. Add one slice of bread. Top the piece of bread with about 1/2 of the cheese mixture and the ham slices. Top with the second piece of bread.
  • Place 1/2 of the remaining cheese on top of the second slice of bread and carefully turn the sandwich over to grill the cheese. Cook about 3 to 4 minutes, or until the cheese on the bottom is slightly crispy. While it is cooking, add the remaining cheese on what is now the top piece of bread.
  • Flip the sandwich and cook another 3 to 4 minutes to crisp the cheese on the second side. Remove to a plate, slice in half, and enjoy!
