Time 18m

Number Of Ingredients 11

1 ½ pounds (about 15) mini multi-colored potatoes
12 ounces green beans
3 tablespoons olive oil
2 tablespoons apple cider vinegar
1 clove garlic, crushed
1 teaspoon Dijon mustard
Zest from one lemon
1 teaspoon salt
¼ teaspoon pepper
¼ teaspoon oregano, plus more for garnish
¼ red onion, sliced

Steps:

  • Quarter the potatoes if you are using the ones that are about 2 inches. If you are using larger potatoes, chop them into cubes.
  • Put the cut potatoes in a medium pot and cover with water. Bring to a boil and cook for about 5 to 7 minutes until the potatoes are cooked but still firm.
  • Meanwhile, trim off the ends of the green beans and chop them into 2-inch pieces. Add them to a steamer basket and place it over a pot of boiling water. Steam them for about 8 minutes.
  • While the potatoes and beans are cooking, make the dressing: mix together the olive oil, vinegar, garlic, mustard, lemon zest, salt, pepper, and oregano.
  • Add the cooked potatoes and green beans to a bowl and add the sliced onions.
  • Top with the dressing and stir. Taste for seasonings adjust as necessary.
  • Garnish with extra oregano. Eat right away or chill and serve as a cold salad.

SPANISH GREEN BEANS WITH POTATOES

Spanish Green Beans With Potatoes image

Translated from Karlos Arguiñano's "Atrévete a cocinar". NOTES: (1) Green beans in Spain are longer and flatter. Once I had them cooked and before I ate them I mistook them for spinach pasta. I would only suggest this recipe if you can get these type of beans, or if you know how to adapt the recipe, because I'm thinking, given their size and shape, that they are prepared and cooked a bit differently than their rounder cousins. (2) When this author refers to a tbsp it means a soup-spoonful. The water was originally described as two tumbler-glasses full.

Time 42m

Yield 2 serving(s)

Number Of Ingredients 6

400 g green beans
1 (200 g) potatoes
2 garlic cloves
4 tablespoons olive oil
400 ml water
salt

Steps:

  • Boil water in saucepan.
  • Clean green beans, remove tips with knife and remove threads along the sides using a vegetable peeler. If they are broad, slice them in half lengthwise. If not, leave them as they are. Then cut all beans into 4 cm pieces.
  • Peel potato and cut them into stew chunks.
  • Add green beans and potato to saucepan, season with salt to taste and let simmer 30 minutes.
  • Peel garlic cloves, slice width-wise and fry in 4 tbsp oil in a small pan. When they are golden-brown, add them along with hot oil to green beans and let boil 2 minutes so that the flavors mix. Serve on plates.

The quasi-classic Spanish side dish known as judias verdes con jamon. I substituted bacon for the Serrano ham. From 500 All-Time Great Recipes.

Provided by COOKGIRl

Time 15m

Yield 4-5 serving(s)

Number Of Ingredients 7

1 lb fresh green beans or 1 lb frozen green beans

3 ounces bacon, cooked and crumbled (Serrano ham or Parma ham can be substituted)
salt
fresh ground black pepper

Steps:

  • In a large pot of salted water cook the green beans about 5-6 minutes, only until just tender but still with some "bite".
  • In a saucepan, heat the olive oil on medium heat and fry the onion for 5 minutes, until softened. Add the garlic and cook another minute. DO NOT burn the garlic!

  • Place fingerling potatoes in a large pot and cover well with water. Boil for 10 minutes or until you are able to stick a fork through potatoes. Using a slotted spoon, remove potatoes from boiling water and transfer to a plate for now. Do not discard water.
  • In the same cooking pot, with the water boiling, add green beans. Cook 4 minutes or so. Drain, and immediately place the green beans in the bowl with the iced water (ice bath) to stop cooking (this helps them keep their vivid green color too.) When cooled enough, remove green beans from ice bath and pat dry.
  • Cut fingerling potatoes in halves length-wise, and place them in a large mixing bowl. Add green beans, tomatoes, onions (or shallots), tuna (crumble it up a bit before adding), and garlic.
