An old fashioned diner type pie. Lower fat due to no egg yolks, but still so delicious! Recipe found on another website.

Steps:
- Combine milk, sugar, salt and cornstarch in a saucepan and cook until thick.
- Fold in stiffly beaten egg whites and 1 t vanilla.
- Let cool.
- Pour into baked pie shell.
- Place sliced bananas on top, then finish off with cool whip topping or whipped cream.

Steps:
- Mix 1/3 cup sugar and gelatin in the top of a double boiler set over simmering water.
- Slowly stir in milk and stir until sugar and gelatin are completely dissolved.
- Beat the egg yolks until light then blend a bit of the hot mixture into it.
- Add the egg yolk mixture to the gelatin mixture and cook, stirring constantly until thickened.
- Mix in vanilla and then chill until mixture mounds slightly when dropped from a spool.
- Beat eggs whites until they form soft peaks, gradually beat in the remaining 1/3 cup sugar until stiff peaks form.
- Fold the custard mixture into the eggs whites and spoon into 6 goblets and chill until firm.
- If desired, top with fresh fruit or chocolate or butterscotch sauce.
HOMEMADE SPANISH CREMA CATALANA RECIPE
A delicious homemade Crema Catalana recipe, topped with fresh fruit!

- Put the milk on the stove in a small saucepan, along with the citrus peels and the cinnamon stick. Slowly bring to a boil.
- Dissolve the cornstarch in a splash of water and set aside.
- While the milk is slowly heating, beat the egg yolks with the sugar, until the mixture turns pale yellow. Beat in the dissolved cornstarch and a spoonful of the hot milk.
- Remove the citrus peels and cinnamon stick from the hot milk, and lower the heat.
- Slowly add the egg yolk mixture to the milk, making sure to keep stirring so that the eggs don't scramble!
- Stir constantly over a low heat, until the mixture has thickened.
- Remove from the heat and pour the mixture into traditional clay dishes or ramekins.
- Allow the custard to cool, and then cover in plastic wrap and chill the crema catalanas for about four hours (preferably overnight).
- Before serving, I like to let mine come to room temperature (unless it's summer-- that would be too hot!). Then sprinkle a thin layer of sugar on top of each ramekin. Spread the sugar out by tilting the ramekins in all directions. Caramelize with a small kitchen blowtorch (though the truly authentic crema catalanas are made with a hot iron (see photo below).
- Top with fresh fruit (optional) and enjoy!

This is an authentic, really rich pie stuffed with spinach, onions, cheeses and herbs that are all enfolded by crispy, flaky phyllo dough.

- Preheat oven to 350 degrees F (175 degrees C). Lightly oil a 9x9 inch square baking pan.
- Heat 3 tablespoons olive oil in a large skillet over medium heat. Saute onion, green onions and garlic, until soft and lightly browned. Stir in spinach and parsley, and continue to saute until spinach is limp, about 2 minutes. Remove from heat and set aside to cool.
- In a medium bowl, mix together eggs, ricotta, and feta. Stir in spinach mixture. Lay 1 sheet of phyllo dough in prepared baking pan, and brush lightly with olive oil. Lay another sheet of phyllo dough on top, brush with olive oil, and repeat process with two more sheets of phyllo. The sheets will overlap the pan. Spread spinach and cheese mixture into pan and fold overhanging dough over filling. Brush with oil, then layer remaining 4 sheets of phyllo dough, brushing each with oil. Tuck overhanging dough into pan to seal filling.
- Bake in preheated oven for 30 to 40 minutes, until golden brown. Cut into squares and serve while hot.

- Preheat oven to 350°. Combine cracker crumbs and 1/4 cup sugar with melted butter. Using the bottom of a glass, press cracker mixture onto bottom and up the sides of a greased 9-in. deep-dish pie plate. Bake until set, 12-15 minutes. Cool completely on a wire rack., Meanwhile, sprinkle gelatin over cold water; let stand 5 minutes. Beat cream cheese and remaining sugar until smooth. Slowly beat in cream and vanilla. - Combine in a saucepan the sugar, flour, milk, vanilla and butter. Cook on med-high heat until mixture comes to a boil, stirring continuously. Once mixture reaches boil stage reduce the heat to medium and continue stirring till mixture thickens..
- Remove from heat. Beat the egg whites till they form stiff peaks. Add to cooked mixture and blend in the egg whites till well blended.
- Pour into a 9" baked pie shell and refrigerate until cold. Top the pie with Cool Whip whipped topping when serving.
