SAUSAGE & EGG CASSEROLE WITH SAGE
I like to make this ahead on the weekend so I have something hearty to pop in the microwave for breakfast during the week. Makes a smaller portion in 9x9" pan. For the frozen mixed vegetables I like to use the asian blend (broccoli, peppers, mushroom, green bean mix)

Steps:
- Spray 9x9" pan with non-stick cooking spray.
- Heat oven to 350 degrees.
- Sprinkle hash browns and vegetables in bottom of pan.
- Brown together sausage, onion, sage. Place on top of hash brown/vegi mixture.
- Whisk eggs, milk, salt and pepper. Pour over entire mixture.
- Sprinkle cheese on top.
- Bake covered for 30mins, uncover and bake for another 30mins or until center is done.
- Enjoy!

- Pour into pan. Refrigerate overnight.
- Bake at 350 degrees for 45 minutes.
- Note: 1 1/2 x the recipe will fill a 9"x13" pan (8 servings). Bake for one hour.
SAUSAGE EGG CASSEROLE
My sister made this recipe and it was delicious, very creamy in texture! Also freezes well. This recipe is very versatile. Instead of the turkey Italian sausage, you could use bulk breakfast sausage. You can also add any veggies you like. Artichoke hearts are particularly good. Rotel (diced tomatoes and green chiles) is also very good in this. Enjoy!

- In a large nonstick skillet, cook sausage, green pepper and onion over medium heat until meat is no longer pink; drain.
- In a large mixing bowl, beat eggs.
- Add the baking mix and milk.
- add the cottage cheese, shredded cheese, and chiles.
- Stir in the cooked sausage/onions/peppers.
- pour into a 13-in X 9-in X 2-in pan coated with nonstick cooking spray.
- Bake at 350F for 35-40 minutes or until a knife inserted near the center comes out clean.

- Heat a large skillet over medium-high heat and stir in sausage. Cook and stir until sausage is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
- Beat eggs in a large bowl; stir in milk, salt, and mustard. Fold bread cubes, Cheddar cheese, and sausage into egg mixture. Pour into a lightly greased 7x11-inch baking dish. Cover and refrigerate for 8 hours or overnight.
- Preheat oven to 350 degrees F (175 degrees C). Remove casserole from the refrigerator 30 minutes before baking.
- Bake in preheated oven until a knife inserted near the center comes out clean, about 40 minutes.

I took this dish to work one Friday, when it was my turn to bring breakfast... it was a huge hit! I had several requests for the recipe and I went home with an empty dish!

Steps:
- Brown sausage in a large skillet; drain, crumble, and set aside.
- Add butter to skillet and saute green onions and mushrooms until tender.
- In a large bowl, beat eggs until lemon colored.
- Mix in cottage cheese, shredded cheeses, chilies, sausage, mushrooms and onions.
- Cover and refrigerate over night.
- The next morning, preheat oven to 350F.
- Lightly grease a 9X13-inch baking dish.
- Sift together flour, baking powder, and salt; stir in melted butter.
- Stir flour mixture into egg mixture.
- Pour into prepared pan.
- Bake in preheated oven for 40-50 minutes, or until browned.
- Let stand 10 minutes before serving.
SAUSAGE EGG CASSEROLE
This makes a great breakfast when you prepare it the night before, or you can omit soaking overnight (this works especially well with fresh bread). I must confess, I had some Texas Toast in my freezer that I defrosted and used in place of buttered bread (it probably would have worked frozen too). I used regular milk in place of the cream. SPANISH COMFORT FOOD (EGG & SAUSAGE CASSEROLE)
A number of years ago in a village in Spain I was served a dish similar to this recipe and thought of it as true comfort food.It was baked in a clay oven. It's been a while but this is my version of it. It was served for breakfast but I think of it more as a one dish dinner meal. It is an easy recipe with minimal preparation. You can make it ahead, reheat adding the eggs for the last 10 minutes. It can be as spicy or as tame as you like simply by choosing a type of sausage that you like. If you can get Portuguese Linguica sausage they would be perfect. I used Spanish Corizo-a very robust sausage full of smoke & flavor, You may even try Ham slices instead of sausage. The cook time is for making the recipe straight through-for "do ahead" allow another 40 minutes

Steps:
- Preheat oven to 375°F
- Saute the onion & garlic in the vegetable oil until the Onion is translucent and the garlic is aromatic apprx 5 minutes
- Add peppers & celery, cook a further 2 minutes
- Add tomato sauce, sausage, potatoes & lemon juice
- Sprinkle in the Paprika
- Add drained peas & carrots & wine
- Bring to a simmer
- Transfer to a casserole dish with a lid
- You may now continue to finish the dish or refrigerate it until 1 hour before serving bringing it to room temperature before placing it in the oven, If you have made this as a "do-ahead" allow 30 minutes at 375F to heat it to simmering
- If you are continuing with the recipe without "doing ahead" place the casserole in the 375F oven and bring the contents to a bubbling simmer 5-10 minutes
- Make a depression for each egg, crack in the eggs, cover and place back in the oven
- Cook for apprx 10-15 minutes or until the eggs are done to your liking
- Have one or two eggs on top of the sausage/vegetable mixture on each plate or bring the whole caaserole to the table
