1 (12 ounce) can Spam (shredded)
1 cup shredded cheddar cheese
1 medium green bell pepper (finely chopped)
2 -3 tablespoons ketchup
2 -3 tablespoons milk

Steps:

  • Mix all ingredients well- let chill.
  • Use enough milk and ketchup to moisten ingredients for spreading consistency.

1 (12 ounce) can Spam
2 hard-boiled eggs, chopped
1/4 sweet onion, chopped
2 tablespoons pickle relish (optional)
1 -2 tablespoon mayonnaise

Steps:

  • Grate the spam. (I usually just use my pastry cutter).
  • Combine all ingredients except the mayo.
  • Add just enough mayonnaise to hold ingredients together.
  • Use for sandwich spread or on a bed of lettuce or on crackers for an appetizer.

Turn your leftover holiday turkey into this delicious turkey salad. Simple to throw together, it does not take a ton of turkey to make. Much tastier than a sliced turkey sandwich too. The turkey salad has a creamy mayo base with a bit of crunch from celery. We loved the slightly sweet and tart contrast added from the dried cranberries. Make a sandwich with this turkey salad or serve with crackers.

  • Combine turkey, cranberries, celery, and eggs.
  • Add remaining ingredients and toss, gently.

¾ pound cooked turkey meat
2 stalks celery
2 green onions
½ red bell pepper
3 tablespoons mayonnaise
2 tablespoons prepared Dijon-style mustard
1 tablespoon cider vinegar
1 teaspoon white sugar
¼ teaspoon salt

Steps:

  • Place cooked turkey meat, celery, green onions and red bell pepper in a blender or food processor. Finely chop using the pulse setting.
  • Transfer the turkey mixture to a medium bowl. Mix in mayonnaise, prepared Dijon-style mustard, cider vinegar, white sugar and salt. Cover and refrigerate 8 hours, or overnight, before serving.
