BISCUITS FOR 2
I created this recipe in a larger quantity to enter in the Kentucky State Fair. It won first place! Since biscuits are best fresh out of the oven, I sized my recipe down to yield four-perfect for two. I make them whenever biscuits fit into the menu. -Bessie Hulett, Shively, Kentucky

Steps:
- Preheat oven to 450°. In a small bowl, combine the flour, baking powder and salt; cut in shortening until mixture resembles coarse crumbs. Add milk, tossing with a fork until a ball forms. , Turn onto a lightly floured surface; knead 5-6 times. Roll or pat to 1/2-in. thickness; cut with a 2-1/2-in. biscuit cutter. Place on a greased baking sheet. Brush tops with 1 tablespoon butter. Bake until golden brown, 9-11 minutes. Brush with remaining butter. Serve warm.

SMALL BATCH BUTTERMILK BISCUITS

Steps:
- Preheat the oven to 450 and line a quarter sheet baking pan with parchment paper.
- In a small bowl, whisk together the flour, salt, baking soda, and baking powder.
- Cut the butter into small pieces and add it to the flour mixture, cutting it in with a pastry cutter or two knives. When all of the pieces of fat are the size of rice and are coated in flour, pour in the buttermilk. Knead it slightly, and add additional buttermilk 1 tablespoon at a time if the biscuit dough seems dry or crumbly.
- Tip the dough out onto a floured counter, and knead it 3 or 4 times to bring it together.
- Pat it out to 1" thick. Dip your 3" biscuit or cookie cutter in flour and cut out 4 biscuits. Gather up the scraps and gently pat them out in order to cut out more biscuits.
- Arrange the biscuits on the pan, evenly spaced. Bake for 9-10 minutes, or until lightly golden on top. If you want, brush with extra melted butter as they come out of the oven.

Steps:
- Heat oven to 425 degrees.
- Score top of meat, cutting 12 squares or diamonds, 1 inch deep.
- Insert clove in each square.
- Place meat in ungreased baking pan, 8X8X2 inches, pushing meat to one side of pan.
- Mix preserves, 1 teaspoon water and the mustard; spoon on meat.
- Stir baking mix and 1/4 cup water with fork to a soft dough.
- Turn onto floured cloth-covered board, smooth dough into ball and knead 5 times.
- Roll dough 1/2 inch thick.
- Cut into five 2-inch biscuits, place in pan with meat.
- You can also just drop the dough by spoonfuls into the pan.
- Bake until biscuits are golden brown and meat is hot, 15-20 minutes.
