SPAGHETTI WITH POBLANO CHILE



Spaghetti with poblano chile image

I use to cook this recipe in a daily basis or Christmas dinner, it´s very easy, it gets along with other dishes and can get you out of a trouble.

Number Of Ingredients 9

300 gram(s) pasta (i prefer spaguetti or fusilli)
4 medium poblano chiles (i mean the fresh, dark green chile about 4 or 5 inches long and 2 to 3 inches in diameter)
1/8 medium onion
500 milliliter(s) sour cream
as needed milk
as needed powdered chicken bouillon
as needed salt
1 can(s) corn kernels (optional)
200 gram(s) manchego or mozzarella cheese (optional)

Steps:

  • In a large pot with salted boiling water, cook spaghetti according to package directions until al dente. Meanwhile, roast, peel and seed the poblanos, and cut in pieces.
  • Place in the blender: some milk (just enough to let it mix together), sour cream, powdered chicken bouillon, onion and poblano chiles. Mix until creamy and light green, keep adding milk if needed.
  • In another pot, place the cooked spaghetti, turn on the stove in a medium-low heat and add the poblano cream, mix carefully until incorporating it to the pasta. Add milk just to make it creamy and smooth consistency, if needed.
  • If you like, you can add the corn kernels, incorporate, and place the cheese over the pasta, cover for some minutes until melted and serve.

  • If you have a gas stove, place the poblanos directly over the flame until blackened on all sides, about 10 minutes. If you don’t have a gas stove, place them on a sheet tray under the broiler, turning for even blackening. This should also take about 10 minutes, depending on broiler strength. Note: turn the kitchen fan on. The air will get "spicy" from this process.
  • Place the blackened chiles in a bowl and cover the bowl tightly with plastic wrap. Let sit for 5 minutes. The plastic should get steamy.
  • Peel the blackened skin off the chiles, and remove the seeds, stems, and any visible ribs. This is important for cutting down on the heat.
  • Add the peeled chiles to a blender, along with the garlic, cream cheese, and chicken stock. Blend until smooth.

  • To prepare the chiles, place them directly over your stove's gas flame at its highest setting, turning constantly until charred on all sides, 5 to 7 minutes.
  • Once the chiles are charred, put the them in a medium bowl and cover with a large plate for a few minutes to soften and steam. This will make peeling off the burnt skin easier. Cover until cool enough to handle, then remove most of the skin with your fingers.
  • In a medium-sized skillet over medium heat, melt the butter. Add the pureed chile sauce to the pan and allow to simmer for 8 to 10 minutes, stirring occasionally.

  • Roast the peppers: Place the peppers on a rack over a stove-top burner and roast, turning constantly, until charred on all sides, 5 to 7 minutes. Place the peppers in a bowl and cover with plastic wrap. Set aside for a few minutes (this will give the peppers time to steam, so they peel more easily), then remove and peel each one, rubbing off the charred skin and discarding the stems (remove the seeds if desired). Do not rinse.
  • Place the peppers in a blender, along with the onion, garlic, parsley, milk and crema and puree well to form a sauce. Set aside.
  • In a pot, warm the butter until it is melted. Add the poblano sauce and bring to a simmer. Reduce the heat to maintain a gentle simmer and cook for 10 minutes to marry the flavors, stirring occasionally.
  • Meanwhile, cook the pasta. In a large pot of boiling liberally salted water, add the pasta with the bay leaves and cook the pasta a minute or two less than the packaging instructs.
