SPAGHETTI WITH MUSSELS AND TOMATOES
This simple pasta dish uses canned mussels that are marinated in a smoked paprika and fennel tomato sauce, making the sauce for this pasta nearly finished! Add salt to some halved cherry tomatoes to let them juice out slightly and combine it with the canned mussels and sauce, and a bit of pasta cooking water to complete the dish. It's as simple as that!

- Season the tomatoes with salt in a large bowl; let sit 15 minutes. Stir in the mussels, parsley, scallions, lemon juice and olive oil.
- While the tomatoes sit, cook the pasta in a pot of boiling, salted water according to the label. Drain, then toss with the tomato-mussels mixture, adding a splash of pasta cooking water to loosen, if needed. Serve with a lemon wedge.

- Cook spaghetti according to package directions. Meanwhile, in a large serving bowl, combine the tomatoes, cheese, basil, olives, vinegar, salt and pepper. Drain spaghetti; add to tomato mixture and toss to combine. , In a small nonstick skillet over medium heat, cook garlic in oil until tender. Pour over spaghetti mixture; toss to coat.

Steps:
- Bring large pot of water to boil.
- Heat 1/2 olive oil in large pot. Add 1/2 garlic & onion as well as the thyme.
- Add mussels and mix well.
- Add wine and cream. Cover with lid and steam 4-5 minutes. Discard any that do not open.
- In another pot add rest of oil, garlic and onion. Saute lightly. Do not brown.
- Add tomatoes and chili flakes. Saute till tomatoes release their juices. (about 2 min).
- Pour liquid from mussels over tomatoes and simmer about 3 minutes.
- Cook spaghetti in water until al dente about 3 minutes.
- Drain pasta and mix with tomatoes and mussels. season to taste with salt & pepper.
- Sprinkle with parsley and cheese.

- Place the mussels in a large pan. Cover it and cook them over high heat until they open, 2 to 3 minutes, shaking the pan. Remove the meat from the shells and discard the shells. Strain the liquid that remains at the bottom of the pan through a cheesecloth and reduce it over high heat if necessary. You will need about 1 cup liquid.
- Put the oil and garlic in a skillet and heat over medium heat. Add the tomatoes (if you are using canned tomatoes, discard the liquid first), and boil, uncovered, over medium heat for 5 minutes. Add 1/2 cup of the mussel juice and adjust the seasoning.
- Add the remaining mussel juice to rapidly boiling salted water and cook the spaghetti until tender, about 9 minutes.
- Add the mussels to the tomato sauce, reduce the heat to low and heat them gently for 5 minutes. Stir in the parsley.

- Bring a large pot of water to a rolling boil. Salt the water and drop in the pasta. Stir to separate the strands and cook until just under al dente, tender but firm to the bite, stirring occasionally with a wooden spoon. Drain the pasta in a colander, reserving 1/2 cup (120 milliliters) of the pasta cooking water.
- Meanwhile, in a large sauté pan over medium heat, combine 4 tablespoons (60 milliliters) of olive oil, 1 clove garlic, pepper flakes, and the parsley sprig and simmer until the garlic turns lightly golden and begins to softens. Raise the heat slightly and add the mussels to the pan. Cover the pan and sauté until the shells open, about 2 to 4 minutes, shaking the pan occasionally. Remove the pan from the heat.
- Using a fine-mesh sieve, strain the mussels over a bowl to get rid of any sand and grit, reserving the juices. Discard the unopened shells, garlic, and the parsley sprig. In a medium bowl, set aside a few mussels in their shells to garnish the plates when serving. Remove the meat from the remaining shells and place in the bowl. Discard the shells.
- In the same pan over moderate heat, combine the remaining olive oil and garlic and saute' until the garlic turns lightly golden and begins to soften. Add the tomatoes to the pan and stir occasionally for about 2 minutes or until the tomatoes begin to soften.
