MAPLE SOY GLAZED SALMON

Steps:
- Combine maple syrup, soy sauce, sriracha and garlic in a small bowl, pour into a gallon sized resealable bag and add the salmon. Marinate 20 to 60 minutes, turning once in a while.
- Preheat oven to 425°F. Lightly grease a baking sheet with nonstick spray. Remove the fish from the marinade and pat dry with paper towels. Pour the marinade in a small saucepan.
- Place the fish on the baking sheet and cook 8 to 10 minutes. Meanwhile, bring the marinade to a simmer over medium heat and reduce until it thickens into a glaze. Spoon over fish just before eating.

EASY ONE PAN MAPLE GLAZED SALMON
This Easy One Pan Maple Glazed Salmon is the perfect main dish for salmon lovers! Salmon fillets caramelized in a maple glaze, on the table in 20 minutes!

Steps:
- Preheat your oven to 375 degrees Fahrenheit.
- Heat a large cast iron (or other oven-safe skillet) over medium-high heat and add the oil.
- Season the salmon fillets on both sides with salt and pepper and add to the hot pan, top side down.
- Let brown until caramel-coloured on the first side (about 2 minutes) and then flip to brown on the other side.
- While the salmon is browning, whisk together the maple syrup, soy sauce, sesame oil, garlic, ginger and Sriracha in a small bowl and pour it over the salmon fillets.
- Add the whole pan to the preheated oven, uncovered, and cook for about 7-10 minutes, or until the salmon is cooked through and flakes with a fork.
- Spoon the maple glaze over the salmon again before serving. Garnish with sesame seeds and chopped chives, if desired.

SOMEN NOODLE SUSHI WITH WASABI OIL AND SOY SYRUP

- In a large mixing bowl combine first 6 ingredients. Check for seasoning. Using a sushi mat, place one sheet of nori, shiny side down. Lay down a thin layer of noodle mix on the bottom third of the nori. Arrange cucumber and peppers on the noodles and roll tightly. Moisten the top edge of the nori to "glue" the roll.
- Plating: Slice sushi with straight cuts and some on the bias. Drizzle soy syrup and wasabi oil on a large, white plate. Garnish with gari, sliced scallions and sesame seeds.
- Wasabi Oil: In a stainless steel bowl, whisk wasabi, mirin, and sugar. Add water until a loose puree is achieved. Whisk in oil. For extra spicy, use less oil.;
- Soy Syrup: Combine all and reduce at a simmer until a syrup consistency is achieved, about a 70 percent reduction. Let cool.
SOY-MAPLE SALMON WITH CAULIFLOWER AND PISTACHIOS
Not only is salmon family friendly, it cooks quickly so there is time for a short marinade to infuse it with even more flavor while getting the rest of the meal together. - Preheat the oven to 400 degrees F. Mix the soy sauce, maple syrup, orange juice, 2 garlic cloves and 2 tablespoons water in a large bowl; add the salmon and turn to coat. Cover and refrigerate 20 minutes.
- Meanwhile, put the cauliflower and broth in a microwave-safe bowl; cover loosely with plastic wrap and microwave until tender, 6 minutes.
- Coat a rimmed baking sheet with cooking spray. Drain the fish, season with salt and pepper and place on the prepared baking sheet. Bake until slightly golden around the edges, 8 to 10 minutes.
- Meanwhile, heat the olive oil and remaining garlic clove in a large skillet over medium-high heat; cook, breaking up the garlic with a spoon, until softened, about 2 minutes. Add the cauliflower and broth, the cranberries, pistachios, orange zest, parsley, 1/4 teaspoon salt, and pepper to taste and stir to heat through. Serve with the fish.
