ABBA'S GINGER TURKEY BURGERS
In my voyage to healthier eating, I have started using ground turkey instead of beef. In doing so... I had to make it tasty too. I do not use salt. For those that choose to season, well, that's on you.

Steps:
- In a bowl, combine ground turkey, scallions, bread crumbs, 1 TB of the soy sauce, ginger, and garlic. Season to taste with salt and pepper. Mix well.
- Divide turkey mixture into 8 equal portion . Shape into patties.
- Heat oil in a skillet over medium heat until hot.
- For the sauce, in a small saucepan combine orange juice, lemon juice, and the remaining 1 TB soy sauce. Let bubble until reduced by half.
- Add 4 of the patties and cook for 7 to 8 minutes. Turn patties over and cook another 8 minutes or until done (165 degrees F). Repeat with remaining 4 patties. Keep the first batch warm in a warm oven.
- Whisk in the margarine & lemon basil to sauce. Pour over burgers.
- Serve with rice.

SOY-SCALLION TURKEY BURGERS WITH GINGER-CURRY MAYO
Steps:
- Quick sautee chopped scallions and garlic with a tsp. of olive oil or cooking spray. Cook for about 1 minute. Add to ground turkey along with the soy sauce and salt and pepper to taste. Set aside to marinate while making the mayonnaise. Mix curry, ginger and mayonnaise together. Chill in the refridgerator while grilling burgers. Form burgers into 4 1/2 inch patties and grill (burgers can also be sauteed in a pan or broiled) until cooked through (about 5-10 minutes per side). Serve on buns with Ginger-Curry Mayonnaise and lettuce and tomato.
SESAME-GINGER TURKEY PATTIES
Very good, flavorful patties. You could also use ground pork instead of the turkey. We like these by themselves, but they are very good on a bun with some grilled pineapple.

- Whisk together the soy sauce, sesame oil, scallion, garlic and ginger.
- Place ground turkey in a medium bowl, mix in sauce and gently combine using your hands.
- Cover bowl and place in fridge for 20-30 minutes.
- Form into 4 patties, and grill turning once, 4-5 minutes per side.

CURRY TURKEY BURGERS
Looking for something a bit different from your ordinary beef burger? Give lean ground turkey burgers a pop of flavor by adding curry powder and mango chutney. We enjoy ours on a sesame seed bun with leaf lettuce, Sriracha mayo, and occasionally, a slice of onion.

Steps:
- Combine ground turkey, mango chutney, bread crumbs, dried onion, curry powder, ginger, garlic powder, and salt in a bowl; mix well. Quarter the mixture, and shape into patties about 1/2-inch thick.
- Move patties to the freezer for 20 minutes to help them hold their shape better on the grill and not fall apart.
- Prepare an outdoor grill for medium-high heat, and lightly oil the grate.
- Cook turkey burgers on the preheated grill over direct heat until no longer pink in the center and the juices run clear, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Serve immediately.

SCALLION SESAME TURKEY BURGER
I found this in some random cookbook. One of the best turkey burgers ever. Full of flavor. Make an extra for lunch the next day, reheats beautifully.

Steps:
- Mix togeter, gently. the turkey, sesame seeds, soy, scallions, cilantro, garlic, sesame oil, 1 teaspoon of salt, and bread crumbs.
- Form into patties.
- I usually mix all this together and make patties in the morning and leave in the refrigerator till I'm ready for them.
- Sometimes that is the next day.
- Brush with a little oil before grilling if desired.
- Grill on the George Foreman, in a grill pan.
- If you're using the outside grill increase the breadcrumbs a bit to insure they don't fall apart.
