MUSCOVADO SOY BISCUITS

1 1/2 cups organic soy flour, plus 1/2 cup for topping
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 cup chilled organic butter (1 stick), cut into pieces, plus 3 tablespoons, softened
1/2 to 3/4 cup organic apple juice
1 tablespoon ground cinnamon
1/2 cup packed light-brown muscovado sugar
Honey Butter for Muscovado Soy Biscuits

Steps:

  • Preheat oven to 400 degrees.with rack in center. In a medium bowl, sift together 1 1/2 cups flour, baking powder, baking soda, and salt. Add 1/2 cup chilled butter; using a pastry blender or your hands, combine until mixture is crumbly. Stir in enough apple juice to form dough moist enough to drop from a spoon.
  • In a small bowl, stir together 1/2 cup flour, cinnamon, and sugar. Add remaining 3 tablespoons butter; mix until well combined.
  • Drop a heaping tablespoon of dough on a parchment-lined baking sheet; crumble 1/2 teaspoon of topping into center. Top with another heaping tablespoon of dough; sprinkle on 1/2 teaspoon of topping. Repeat with remaining ingredients, spacing 2 inches apart. Bake until lightly browned, about 10 minutes. Serve with honey butter.

These biscuits have layers of flaky goodness with so much flavor, and most importantly they are dairy-free. The biscuits go great with butter and jam, sorghum, or sausage gravy.

2 cups all-purpose flour
1 tablespoon baking powder
1 tablespoon sugar
1 teaspoon salt
3 tablespoons vegan butter (such as Earth Balance®)
3 tablespoons coconut oil
1 cup cold unsweetened almond milk, or as needed

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a baking pan with parchment paper or a nonstick silicone baking mat, such as SILPAT™.
  • Whisk together flour, baking powder, sugar, and salt in a large bowl. Cut in vegan butter and coconut oil with a pastry blender or a fork until the mixture resembles coarse crumbs.
  • Slowly add cold almond milk and stir until dough just comes together. It may not be necessary to use all the milk; dough will be wet and sticky.
  • Turn dough out onto a lightly floured surface and knead (fold over) 15 times. Gently roll or pat dough to a 1- or 1 1/2-inch thickness. Cut biscuits with a small biscuit cutter or a small bourbon glass. Gently re-roll the dough scraps and cut remaining biscuits.
  • Place biscuits on the prepared baking sheet. Be sure they are touching each other and the sides of the pan; don't be afraid to squish them in--this helps them to rise high.
  • Bake in the preheated oven until tops are golden brown, 12 to 15 minutes.

1 c soy flour
1 tsp baking powder
1/2 tsp salt
1 1/2 c sharp cheddar cheese
1 large egg
1/4 c plain greek yogurt
2 Tbsp melted butter
1 Tbsp garlic powder or roasted garlic powder

Steps:

  • 1. Add soy flour, baking powder, and salt in a medium bowl. Mix until incorporated.
  • 2. Add Cheese to mixture, mix well
  • 3. Mix egg and yogurt and add to mixture above! (I use my hands at this stage).
  • 4. Grab about 1 tablespoonful and kind of flatten them into disc. I got 17 out of this batch, you may get more or less depending on size. I added all the calories and carbs then divided by 17.
  • 5. spread the butter on each one and sprinkle with your choice of spices or cheese!
  • 6. bake at 350 degrees for 12-15 minutes! the bottoms get crispy and the biscuit stays soft..my step-daughter said they taste a little like red lobsters biscuits! ENJOY!!!!!
