Healthy Southwestern Pizza image

This southwest pizza with corn and black beans is an easy weeknight pizza that everyone loves. With a sweet and spicy homemade sauce, it's baked in a hot oven until the crust is golden, then drizzled with sour cream. It's simple to make, and will have dinner on the table in 30 minutes!

1 cup fire roasted tomatoes
2 tablespoons honey
1 ½ teaspoons sriracha (or to taste)
½ teaspoon balsamic vinegar
2 12-inch pizza crusts
½ cup frozen corn (thawed)
½ cup cooked black beans (rinsed)
¼ cup thinly sliced red onion
1 cup grated mozzarella
Sour cream and chopped cilantro (to serve)

Steps:

  • Add the pizza sauce ingredients to a blender and blend on high until smooth. Pour the sauce into a small pot over medium-high heat and bring the sauce to a boil. Reduce the heat, place the lid halfway on (to prevent splatters), and simmer the sauce for 10-15 minutes, stirring frequently, until it has thickened.
  • Preheat your oven to 450 degrees Fahrenheit. Form the pizza dough into two crusts and place them on parchment paper-lined baking sheets
  • Divide the pizza sauce between the 2 pizza doughs, spreading it almost to the edges.
  • Top the pizzas with corn, black beans, red onion, and mozzarella cheese.
  • Bake the pizzas for 10-12 minutes, or until the crust is golden. Serve with some minced cilantro and sour cream on the side.

2 tablespoons vegetable oil
1 small yellow onion, diced
1 red bell pepper, diced
1 yellow bell pepper, diced
1 green bell pepper, diced
One 10-ounce can diced tomatoes with green chiles
One 4.5-ounce can chopped green chiles
8 ounces processed cheese, cubed
4 ounces Cheddar cheese, shredded
4 ounces mozzarella, shredded
4 ounces fontina, shredded
2 ounces Parmesan cheese, grated
Whole milk, as needed
1 teaspoon fresh oregano, torn `
1 small jalapeno pepper, diced
1 cup sliced pepperoni, chopped
2 Roma tomatoes, small dice
2 tablespoons fresh basil leaves, torn
Pizza-flavored chips, for serving

Steps:

  • Heat the oil in a saucepan over medium heat. Add the onion and peppers and cook, stirring, until softened, about 5 minutes. Add the canned tomatoes and green chiles and bring to a simmer. Reduce the heat and stir in the processed cheese until smooth. Remove the pan from the heat and stir in the Cheddar, mozzarella, fontina and Parmesan until melted. If it is too thick, add room temperature milk to thin it out; if milk is needed, add it slowly, stirring in between additions to make sure you achieve the desired consistency.
  • Stir in the oregano, most of the jalapeno (saving a pinch or two for garnish), 3/4 cup of the pepperoni and half of the tomatoes.
  • Transfer the queso to a serving dish. Garnish with the remaining pepperoni, jalapenos, and tomatoes, as well as the basil leaves. Serve with pizza-flavored chips.

1 (10 ounce) package prebaked thin crust pizza crusts
2 cups cooked chicken breasts, shredded
1 teaspoon vegetable oil
1 small red bell pepper
1 small green bell pepper
1 small red onion
3 tablespoons southwest seasoning, mix (could substiute taco seasoning)
2/3 cup prepared monterey jack cheese, salsa con queso dip
1/2 cup shredded Mexican blend cheese

Steps:

  • Preheat oven to 450 degrees.
  • Place pizza crust top side down on a baking sheet, bake 4-5 minutes or until crust is golden brown and crisp.
  • Remove from oven, and turn crust top side up.
  • Shred chicken, and add oil to heat over medium heat 1-3 minutes or until shimmering.
  • Cut bell peppers and onion into thin slices.
  • Add bell peppers, onion, and seasoning mix to a mixing bowl, toss to coat.
  • Add vegetable mixture to skillet, cook 2-3 minutes or until tender.
  • Add chicken, cook 1 minute, or until heated through. Remove skillet from heat.
  • Spread salsa con queso dip over crust to within 1 inch of edges.
  • Top evenly with chicken mixture, sprinkle with cheese.
  • Bake 7-8 minutes or until cheese is melted.
  • Remove from oven, and cut into wedges.
