While the South can't lay claim to the Bloody Mary (even cocktail experts can't agree on where or when it was first made), it's such a fixture at weekend brunches and afternoon tailgates that it might as well have originated here. Like many Southern recipes, the cocktail appears simple, but it's deceptively complex. Tomato juice and vodka are essential-from there, spices and seasonings vary as much as the person making the drink. We tested all sorts of add-ins (some traditional, some not so much) to make a spicy, pungent base that's just right when mixed with your favorite vodka and served over ice in a sturdy glass. As for garnishes, some bars and restaurants are all about the showmanship, from steamed oysters to boiled shrimp, but we prefer a simpler approach with celery, pickled vegetables, and-to gild the lily-a bacon salt rim. Maybe the Bloody Mary is more Southern than we thought.

3 thick-cut bacon slices
1/2 tablespoons kosher salt
1 1/2 tablespoons Old Bay seasoning
1 1/2 tablespoons ground coriander
1 teaspoon celery salt
1 (46-oz.) container plain vegetable juice (such as V8 Original)
1/3 cup drained roasted red peppers
1/2 cup roughly chopped scallion tops
1/4 cup drained cocktail onions
1 teaspoon lemon zest plus 1/4 cup fresh juice (from 1 large lemon)
1/4 cup fresh lime juice (from 2 limes)
2 tablespoons Old Bay seasoning
2 teaspoons hot sauce (such as Tabasco or Crystal)
2 teaspoons prepared horseradish
2 teaspoons Worcestershire sauce
1 teaspoon celery salt
1/4 teaspoon granulated sugar
1 lime wedge
1 lemon wedge
2 ounces vodka
7 ounces Spicy Bloody Mary Mixer
Bloody Mary Bacon Salt
Garnishes: pickled okra pod, celery stick, or olives and cocktail onions

Steps:

  • Cook bacon slices until crisp. Drain on paper towels and blot dry; then crumble (making about 1/4 cup). Pulse crumbled bacon, kosher salt, Old Bay seasoning, ground coriander, and celery salt in a mini food processor until ingredients are uniformly ground, 6 to 8 times. Store in an airtight container at room temperature up to 1 week.
  • Process all Spicy Bloody Mary Mixer ingredients in a blender until smooth. Refrigerate in an airtight container up to 4 days.
  • Rub a lime wedge on the rim of 16-oz. glass. Spread Bloody Mary Bacon Salt in a saucer; dip glass rim in salt. Fill glass with ice. Squeeze lime wedge and lemon wedge into glass, and add vodka. Top with Spicy Bloody Mary Mixer; stir to combine. Garnish with a pickled okra pod, celery stick, or bamboo pick threaded with olives and cocktail onions.

3 cups canned vegetable juice
2 tablespoons fresh lemon juice
1 tablespoon minced fresh cilantro
1 tablespoon Worcestershire sauce
1 teaspoon finely minced seeded canned chipotle chilies
1 teaspoon ground cumin
1 teaspoon sugar
2/3 cup chilled vodka
Ice cubes
6 celery stalks with leafy tops
6 fresh red chilies, slit

Steps:

  • Mix first 7 ingredients in pitcher. Chill mixture until cold, at least 2 hours or overnight. Mix in vodka.
  • Fill 6 tall glasses with ice. Pour Bloody Mary mixture over. Garnish with celery and chilies.

1 teaspoon sea salt
1 cup ice cubes
1 (1.5 fluid ounce) jigger vodka
¾ cup spicy tomato-vegetable juice cocktail (e.g., V-8)
2 dashes Worcestershire sauce
1 dash hot pepper sauce (e.g. Tabasco™)
salt and pepper to taste
1 stalk celery
2 stuffed green olives

Steps:

  • Salt the rim of a tall glass. To do so, pour salt onto a small plate, moisten the rim of the glass on a damp towel and press into the salt. Fill the glass with ice cubes.
  • In a cocktail mixer full of ice, combine the vodka, vegetable juice, Worcestershire sauce, hot pepper sauce, salt and pepper. Shake vigorously and strain into the glass. Garnish with a stalk of celery and olives stuck onto a toothpick.

My friend Lu Ratunil was the man behind the bar on Sundays at Good World, my favorite brunch spot when I was still the sort of person who went out to brunch. He considers himself a bit of a purist when it comes to bloody marys, explaining that ''since the drink has so many ingredients, the key is to balance them.''

Lemon wedge
Lime wedge
4 oz. tomato juice
2 dashes Tabasco
2 dashes Worcestershire sauce
Pinch of sea salt
Pinch of celery salt
Pinch of coarsely ground pepper (pepper too finely ground will bring more heat and less flavor)
1/4 teaspoon peeled and freshly shredded horseradish (avoid using prepared horseradish from a jar)
2 oz. vodka (not flavored)
Slice of seedless cucumber
Pitted green olive
Lemon wedge
Black pepper

Steps:

  • Squeeze lemon and lime wedges into a shaker. Add all other ingredients except vodka, and stir. Taste the mix, and adjust the seasoning if needed. Put the mix in the fridge, and let it sit overnight.
  • Pour vodka into the shaker. Add ice cubes, and shake.
  • Fill an 8-ounce glass about halfway with ice, and strain the shaker contents over it.
  • For garnish, I prefer a slice of seedless cucumber, also known as a hothouse or English cucumber, rather than celery. (This isn't a deal breaker, though.) Cut a 1/2-inch-thick slice of cucumber on the bias. Cut a slit in the slice, and place on the rim of the glass. Spear the pitted green olive with a toothpick, and stick it through the rind of the lemon wedge. Place the wedge on the rim of the glass. Crack a little freshly ground pepper on top.
