CREAMY BEEF AND SHELLS
A quick/easy ground beef recipe, this is a pasta dish that will be on your dinner table all week long! So creamy and so comforting!

Steps:
- In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Heat olive oil in a large skillet over medium high heat. Add ground beef and cook until browned, about 3-5 minutes, making sure to crumble the beef as it cooks; drain excess fat. Set aside. Add onion to the skillet, and cook, stirring frequently, until translucent, about 2-3 minutes. Stir in garlic and Italian seasoning until fragrant, about 1 minute. Whisk in flour until lightly browned, about 1 minute. Gradually whisk in beef stock and tomato sauce. Bring to a boil; reduce heat and simmer, stirring occasionally, until reduced and slightly thickened, about 6-8 minutes. Stir in pasta, beef and heavy cream until heated through, about 1-2 minutes; season with salt and pepper, to taste. Stir in cheese until melted, about 2 minutes. Serve immediately.

- In a large skillet, cook beef over medium heat until no longer pink; drain. Set aside cheese sauce packet from dinner mix. Add shells and water to skillet. Bring to a boil; cover and simmer for 10-12 minutes or until pasta is tender. , Stir in the salsa, beans, chili powder, salt and contents of cheese sauce packet. Remove from the heat; cover and let stand for 5 minutes.

- Preheat oven to 350°. Cook pasta according to package directions for al dente. Drain and rinse in cold water., Meanwhile, in a large skillet, cook beef and pork over medium heat until no longer pink, breaking into crumbles, 8-10 minutes; drain. Add carrot, green onions and garlic; cook 1 minute longer. Stir in chiles, 1 cup cheese, half of the fried onions and the cilantro. In a large bowl combine picante sauce, tomato sauce and water; stir 1 cup picante mixture into pan., Spread 1 cup remaining picante mixture into a greased 13x9-in. baking dish. Fill pasta shells with meat mixture; place in baking dish, overlapping ends slightly. Top with remaining sauce. Cover and bake 30 minutes. Uncover; top with remaining cheese and remaining fried onions. Bake until cheese is melted, 5-10 minutes.

- Cook the pasta according to the package directions.
- Heat the milk and butter in a large saucepan over medium heat. Add the cheeses and stir until melted. Stir in the pepper, salt and seasoned salt. Drain the pasta, and stir it into the cheese sauce. Serve immediately.
SOUTHWESTERN BEEF SHELLS & CHEESE
Steps:
- Finely chop onion and bell pepper. Brown ground beef with onions and peppers.
- Drain beef, add Ro*Tel, reduce heat to slow simmer.
- Prepare Velveeta Shells & Cheese according to package directions. Add beef mixture and enjoy!

SOUTHWEST BEEF SHELLS
This recipe was given to me years ago in a recipe swap by my Aunt Shirley. It won 2nd place in the 1995 Mississippi Beef Cook-Off. I use medium or hot picante sauce because we like ours a little hotter. You can also use less cheese and ground turkey and it's just as fabulous. It is an easy recipe and we have it with some great jalapeno cheese bread!

Steps:
- Cook shells in 3 qts. boiling water for 12 minutes, stirring often. Drain. Rinse with cold water; drain well.
- Heat skillet over high heat. Add oil and brown beef until no longer pink. Remove from heat; pour off drippings.
- Add all other ingredients to the meat except picante sauce.
- Spread 1/4 cup picante sauce in bottom of 9x13 inch casserole.
- Stuff shells with a spoonful or so of meat mixture and place on sauce. Any extra meat mixture may be placed on top.
- Pour remaining picante sauce over shells. (May be frozen. Thaw completely before baking).
- Bake covered in a pre-heated 375 degree oven for 30 minutes or until hot in center.
- Serve shells with sprinkling of cheese and fresh cilantro.
