2 medium green peppers, julienned
1 small onion, sliced
4 garlic cloves, minced, divided
1 tablespoon olive oil
2 cups cooked beef sirloin or round steak (3/4 pound), thinly sliced
1/2 teaspoon salt, optional
1/8 teaspoon pepper
1/4 cup butter, softened
4 French or Italian sandwich rolls, split and toasted

Steps:

  • In a large skillet, saute the green peppers, onion and half of the garlic in oil until vegetables are tender. Add steak, salt if desired and pepper; heat through. , Blend butter and remaining garlic; spread over cut side of rolls. Place steak mixture on bottom halves; replace roll tops.

2 boneless beef top loin steaks (1 inch thick and 8 ounces each)
1/4 teaspoon salt
1/8 teaspoon pepper
1 large sweet onion, thinly sliced
1 cup sliced fresh mushrooms
1 poblano pepper, thinly sliced
2 tablespoons plus 2 teaspoons butter, divided
2 tablespoons chopped onion
1 garlic clove, minced
1/2 cup heavy whipping cream
1 chipotle pepper in adobo sauce, minced
1/2 teaspoon ground cumin
1/4 teaspoon chicken bouillon granules
1 loaf (14 ounces) ciabatta bread
4 slices pepper jack cheese

Steps:

  • Sprinkle steaks with salt and pepper. Grill, covered, over medium heat or broil 3-4 in. from the heat for 7-9 minutes on each side or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°). Let stand for 5 minutes before slicing., Meanwhile, in a large skillet, saute sliced onion, mushrooms and poblano pepper in 2 tablespoons butter until tender. Remove from the heat; stir in sliced steak., In a small saucepan, saute chopped onion in remaining butter until tender. Add garlic; cook 1 minute longer. Stir in the cream, chipotle, cumin and bouillon; cook and stir until thickened., Cut ciabatta in half horizontally, then cut into four equal portions. Place cheese on bottom bread slices; top with steak mixture, chipotle cream sauce and remaining bread. Cook on a panini maker or indoor grill for 3-4 minutes or until bread is browned and cheese is melted.

1 tablespoon olive oil
1 medium onion, halved and sliced into 1/4-inch-thick wedges
1 red bell pepper (ribs and seeds removed), thinly sliced lengthwise
1 green bell pepper (ribs and seeds removed), thinly sliced lengthwise
Coarse salt and ground pepper
2 tablespoons red-wine vinegar
Reserved Chili-Rubbed Skirt Steak, very thinly sliced, or or 1 1/2 pounds cooked skirt steak
4 crusty Italian hero rolls (about 3 ounces each), split in half horizontally, insides torn out to form a hollow
6 ounces thinly sliced (about 10 slices) pepper Jack cheese

Steps:

  • Preheat broiler with rack 6 inches from heat. In a large skillet, heat oil over medium-high. Add onion and peppers; cook, stirring often, until softened and beginning to char, 10 minutes. Season with salt and pepper. Remove from heat; stir in vinegar and steak.
  • Place bottom halves of rolls on a large rimmed baking sheet; dividing evenly, top each with meat mixture, then cheese slices. Broil until cheese has melted, about 2 minutes. Remove from oven; transfer to a cutting board.

3 tablespoons olive oil
1 lb top sirloin steak, cut into bite size strips
1 medium onion, slivered
1 green pepper, cut into strips
1 garlic clove, crushed
6 hoagie rolls
1/4-1/2 cup olive oil
1 cup ripe tomatoes, chopped small

Steps:

  • Preheat the broiler or toaster oven.
  • Heat the 3 tablespoons olive oil in a large skillet over medium-high heat. Add beef strips to brown.
  • Add onion and pepper to beef. Saute until softened and brown around the edges, about 10 minutes.
  • Add garlic. Cook for one minute more.
  • Meanwhile, brush hoagie rolls with remaining olive oil and toast under the broiler.
  • Pile meat mixture on rolls, and top with chopped tomatoes. Yum!

Here is a regional spin on a steak and pepper sandwich. Flank steaks are cheap and easy to cook (I often find them reduced for quick sell so they are extra budget friendly) so I love using them for all kinds of dishes. This sandwich is great for lunch or dinner, and really takes little time to make. I did not use any condiments on our sandwiches but you could toss on whatever you like from mustard to Barbeque sauce. We topped it with provolone cheese since it plays well with the other flavors but you can play around how ever you like.

1 (2 -3 lb) flank steaks
1 tablespoon chili powder
1 tablespoon cumin
1 teaspoon garlic powder
1 teaspoon kosher salt
1 teaspoon pepper
4 tablespoons olive oil
3 bell peppers, sliced
1 onion, sliced
3 garlic cloves, minced
2 tablespoons brewed coffee
1 teaspoon brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon balsamic vinegar
salt (to taste)
ground pepper (to taste)

Steps:

  • Combine the cumin, chili powder, garlic powder, salt, and pepper to make a rub. Generously coat both sides of the flank steak.
  • Heat 3 tablespoons of the olive oil to a 12-inch skillet over medium-high heat. When the oil is shimmering add the flank steak and cook, roughly 8-9 minutes per side. Remove the steak to a cutting board and tent with foil and allow to rest.
  • Add the remaining 1 tablespoon of olive oil to the skillet, heat, and then add your peppers and onions. Cook until softened to desired tenderness.
  • Toss in the garlic and cook for 30 seconds. Combine the coffee, sugar, Worcestershire, and vinegar in the skillet with the peppers and onions. Salt and pper to taste. Reduce heat to a simmer and reduce for several minutes.
  • While the sauce is reducing, tip any juice collected around the meat into the skillet, then slice the steak very thin and against the grain. If it is still too pink for your liking you can toss it in with the peppers and onions to cook a while longer.
  • On a sub roll layer the meat and top with the pepper/onion mixture and top with your choice of cheese such as provolone.

Coffee Spice Rub, recipe follows
Smoky Tomato-Red Chile Salsa, recipe follows
1/4 cup ancho chile powder
1/4 cup finely ground espresso- roast coffee beans
2 tablespoons sweet paprika
2 tablespoons dark brown sugar
1 tablespoon dry mustard
1 tablespoon kosher salt
1 tablespoon freshly ground pepper
1 tablespoon dried oregano
1 tablespoon ground coriander
2 teaspoons ground ginger
2 teaspoons arbol chile powder
1/4 cup red wine vinegar
1/4 cup extra-virgin olive oil
2 teaspoons pureed chipotles in adobo sauce
3 large ripe tomatoes, diced
1 small red onion, halved and thinly sliced
1 serrano chile pepper, seeded and finely chopped
1/4 cup chopped fresh cilantro
2 teaspoons honey
Kosher salt and freshly ground pepper

Steps:

  • Season two 20-ounce boneless rib-eyes with salt and pepper and rub with Coffee Spice Rub on one side. Grill rub-side down over high heat, 4 to 5 minutes; flip, reduce the heat to medium or move the steaks to a cooler spot, cover and grill 8 to 10 more minutes (for medium-rare). Serve with Smoky Tomato-Red Chile Salsa.
  • Whisk all of the ingredients in a bowl.
  • Whisk the vinegar, olive oil and chipotle puree in a bowl. Add the remaining ingredients and toss. Season with salt and pepper.

1 lb boneless sirloin steak
1/2 teaspoon seasoning salt
1/2 teaspoon garlic pepper seasoning (you can substitute 1/4 tsp garlic powder and 1/4 tsp coarse ground pepper)
1/2 teaspoon chili powder
1/2 teaspoon dried oregano leaves
6 hoagie rolls
8 ounces salsa
1 medium avocado, sliced thin
6 slices colby-monterey jack cheese

Steps:

  • Heat grill to medium heat.
  • Sprinkle meat on both sides with salt, garlic pepper, chili powder and oregano.
  • Cover and grill meat 4-6 inches from heat for 8-9 minutes, turning once or twice, until desired doneness.
  • Split and toast buns on grill for last few minutes grilling.
  • Remove meat and slice across the grain into thin slices.
  • Spread 2 Tbsp of salsa on bottom of each roll, top with steak, cheese, avocado and top of rolls.
