Different from any other bbq sauce, this white bbq sauce (aka Alabama white sauce) uses mayo as a base, along with vinegar, sugars and spices. A southern favorite!

ALABAMA-STYLE WHITE BARBECUE SAUCE
This incredibly easy-to-make Alabama white barbecue sauce was invented in 1925 by Robert 'Big Bob' Gibson at Big Bob Gibson's Bar-B-Q restaurant, in Decatur. Don't let this mixture's appearance stop you from trying what is a devastatingly delicious marinade, basting sauce, and serving sauce.

SOUTHERN WHITE BARBECUE SAUCE
This recipe is from Jean Anderson and her book "A Love Affair with Southern Cooking" literally bring tears to my eyes because she really loves Southern cooking and it shows through history, personal experiences, stories, etc. It's like reading a novel and so full of passion and love for cooking. According to her not many Southerners beyond northern Alabama know this sauce. It is used to marinate everything from chicken to fish. Also can be used as a dip for fresh veggies and in my case used as a dip for cracked crab and chilled cooked shrimp. Speak of delish! I had this sauce with Dungeness crab, coleslaw recipe from Dinosaur BBQ and gruner veltliner wine. Perfect.

Steps:
- Gently bring 500ml whole milk to the boil in a small saucepan with 1 halved onion, studded with 1 bay leaf and 2 cloves. Turn off the heat and leave to infuse for 20 mins.
- Melt 50g butter in another saucepan, then add 50g plain flour. Stir continuously until a paste forms - this is called a roux. Continue cooking for 2 mins.
- Remove the onion, bay and cloves from the milk with a slotted spoon and discard. Add the infused milk to the roux gradually, stirring as you go, until you get a smooth sauce. Cook for 5-10 mins, stirring continuously, until the sauce has thickened. Season to taste.
