This extra crispy fried fish recipe is one of my go-tos whenever I have family and friends over for a visit and to share a good meal. You can also use this on shrimp, but here in Savannah, our favorite fish to fry are whiting and flounder. The batter is light and flavorful and the fish is perfect as an accompaniment to any vegetable or as a sandwich. I like to add a dash of hot sauce and have yellow mustard on hand for dipping.

1/3 cup rice flour
1 1/2 teaspoons Creole seasoning
1/4 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon smoked paprika
1 cup yellow cornmeal
1 1/2 cups vegetable oil or peanut oil
4 fish fillets, such as whiting or flounder, 6 to 8 ounces each
Hot sauce, to taste

Steps:

  • In a medium bowl, combine the rice flour, Creole seasoning, black pepper, garlic powder smoked paprika and yellow cornmeal, and whisk together until evenly mixed. Add the seasoned cornmeal to a large piece of wax paper.
  • Heat the oil in a large, deep cast-iron skillet until at least 325 degrees F (or add a few drops of cornmeal and if it sizzles, it's ready to start frying).
  • Rinse off the fish fillets and place in a large baking dish. Shake a few drops of hot sauce on both sides of 2 of the fish fillets, then coat both sides with the seasoned cornmeal. Fry the coated fillets in the hot oil, without turning, until the edges turn brown, about 4 minutes. Flip over and fry about another 4 minutes. Drain on a paper towel or wire rack. Repeat the coating and frying with the remaining 2 fillets.

This recipe works well with any light white fish fillet. It works better with something that isn't as dense as cod or haddock. Better with flounder, snapper, grouper, etc. I have come to love using pecan meal when breading chicken or fish....pick it up for nothing where they sell pecans. It's basically the dust they have leftover when chopping pecans for sale or recipes. Adds tons of flavor and makes my life easier!

1 cup(s) all-purpose flour
1/2 - 3/4 teaspoon(s) salt, depending on your taste
1/4 teaspoon(s) black pepper, freshly ground
1 1/2 cup(s) finely chopped pecans (i buy pecan meal...almost like flour)
1 1/2 cup(s) soft breadcrumbs
1 1/2 pound(s) fish fillets, cut into four portions (flounder, red snapper, grouper, .....a nice white mild fish)
2 large eggs, beaten
3 tablespoon(s) butter, melted
3 tablespoon(s) vegetable oil

Steps:

  • Combine flour, salt, and pepper in a shallow dish; stir well and set aside.
  • Combine pecan meal and fresh breadcrumbs (not dry) in a shallow dish; stir well and set aside.
  • Dredge fillets in flour mixture, dip into beaten egg, and then coat with the pecan mixture.
  • Fry fillets in hot butter and vegetable oil in a large skillet over medium heat for 3 to 4 minutes on each side or until the fish flakes easily with a fork. Drain well.

Pair this cornmeal-coated fish with Garden Coleslaw (page 75) and Green Beans and Corn (page 236) for a healthy southern meal.

Yield Serves 4; 3 ounces fish per serving

Number Of Ingredients 10

Cooking spray
1/2 cup fat-free milk
4 drops red hot-pepper sauce
1/2 cup yellow cornmeal
1/4 cup finely snipped fresh parsley
1 teaspoon dried tarragon, crumbled
1/2 teaspoon pepper
1/4 teaspoon cayenne
4 mild white fish fillets (about 4 ounces each), rinsed
1 medium lemon, cut into 4 wedges (optional)

Steps:

  • Preheat the oven to 450°F. Lightly spray a 13 x 9 x 2-inch glass baking dish with cooking spray. Set aside.
  • In a medium shallow dish, stir together the milk and hot-pepper sauce.
  • In a separate medium shallow dish, stir together the cornmeal, parsley, tarragon, pepper, and cayenne.
  • Set the shallow dishes and baking dish in a row, assembly-line fashion. Dip a fillet in the milk mixture, turning to coat and letting any excess drip off. Dip in the cornmeal mixture, turning to coat and gently shaking off any excess. Transfer to the baking dish. Repeat with the remaining fillets.
  • Bake for 15 to 17 minutes, or until the fish flakes easily when tested with a fork. Serve with the lemon wedges to squeeze over the fish.

  • Dredge the fillets in the breading mixture one at a time. Place the coated fillets on a parchment lined baking sheet. Let them sit for 10-15 minutes. Heat oil in a large skillet over medium heat to 350 degrees Fahrenheit. Fill the pan with the vegetable oil halfway.*See notes. Fry the fillets in batches but do not crowd the pan. Cook for 3-4 minutes on each side. Drain on a paper towel. Serve immediately since the crispiness won't last very long!
