I like to serve this pesto over butter gnocchi with an extra sprinkle of Parmesan cheese. Gnocchi are light little potato dumplings, which are available in Italian grocery stores and cook up in mere minutes. The pesto is also delicious tossed with penne pasta or in one of these recipes using pesto. -Sue Jurack, Mequon, Wisconsin

Number Of Ingredients 7

3/4 cup loosely packed basil leaves
2 tablespoons pine nuts or sunflower kernels
1 garlic clove, peeled
1/2 teaspoon salt
1/8 teaspoon pepper
1/3 cup olive oil
1/3 cup grated Parmesan cheese

Steps:

  • Place the first five ingredients in a small food processor; pulse until chopped. Continue processing while gradually adding oil in a steady stream. Add cheese; pulse just until blended. Cover and freeze for up to 3 months.

Number Of Ingredients 10

1 cup ziti pasta
4 ounces fat free cream cheese (Neufchatel)
1 tablespoon minced jalapeno
1 -2 tablespoon minced cilantro
1 teaspoon garlic, minced
3 tablespoons green onions, chopped
1/2 cup spinach, chopped and cooked
1/4 cup 2% low-fat milk
1 tablespoon low-fat sour cream
salt

Steps:

  • In a bowl, bring cream cheese to room temperature to soften.
  • Add minced jalapeños, cilantro, garlic, green onions chopped, spinach, milk, sour cream, and pinch of salt.
  • Mix well.
  • Warm over *low heat* while cooking pasta.
  • DO NOT BOIL or BURN!
  • Cook pasta al dente; drain and let it cool a bit.
  • Add to cream cheese sauce and mix well.
  • Serve sprinkle with more cilantro, if desired.

2 cups fresh basil, coarsely chopped
1/2 cup fresh cilantro, chopped
4 garlic cloves, minced
6 tomatillos, husked and cut into fourths
1 -2 jalapeno, seeded
1/2 cup grated parmesan cheese
1/2 cup feta cheese, crumbled
1/2 cup toasted pine nuts
1/2 cup toasted walnuts, chopped
1 tablespoon lemon juice
1/2 cup olive oil
2 teaspoons seasoning salt

Steps:

  • In a food processor, combine all ingredients and process to desired consistency. Coat a thin layer of olive oil on top of mixture to keep sauce from darkening once refrigerated. Serve over pasta, grilled chicken, etc.
