CAROLINA SHRIMP SOUP

Fresh shrimp from the Carolina coast is one of our favorite foods. We add kale, garlic, red peppers and black-eyed peas to complete this wholesome, filling soup. -Mary Marlowe Leverette, Columbia, South Carolina

4 teaspoons olive oil, divided
1 pound uncooked shrimp (31-40 per pound), peeled and deveined
5 garlic cloves, minced
1 bunch kale, trimmed and coarsely chopped (about 16 cups)
1 medium sweet red pepper, cut into 3/4-inch pieces
3 cups reduced-sodium chicken broth
1 can (15-1/2 ounces) black-eyed peas, rinsed and drained
1/4 teaspoon salt
1/4 teaspoon pepper
Minced fresh chives, optional

Steps:

  • In a 6-qt. stockpot, heat 2 teaspoons oil over medium-high heat. Add shrimp; cook and stir 2 minutes. Add garlic; cook just until shrimp turn pink, 1-2 minutes longer. Remove from pot., In same pot, heat remaining oil over medium-high heat. Stir in kale and red pepper; cook, covered, until kale is tender, stirring occasionally, 8-10 minutes. Add broth; bring to a boil. Stir in peas, salt, pepper and shrimp; heat through. If desired, sprinkle servings with chives.

3/4 cup mayonnaise
3 tablespoons finely chopped dill pickles, plus 1 tsp. brine
1 small shallot, minced
1 tablespoon capers, rinsed and chopped fine
1/4 teaspoon pepper
1 cup panko breadcrumbs
1 1/4 lbs large shrimp, peeled, deveined and tails removed (26-30 count per pound and divided)
2 tablespoons mayonnaise
1/4 teaspoon pepper
1/8 teaspoon salt
1/8 teaspoon cayenne pepper
3 green onions, chopped fine
3 tablespoons vegetable oil
4 hamburger buns
4 leaves bibb lettuce

Steps:

  • For the tartar sauce: In a bowl, combine 3/4 cup mayonnaise, pickles plus brine, shallot, capers and 1/4 teaspoon pepper. Refrigerate until needed.
  • For the burgers: Pulse breadcrumbs in food processor until finely ground, about 15 pulses; transfer to shallow dish.
  • Place a third of shrimp (1 cup), 2 tablespoons mayonnaise, 1/4 teaspoon pepper, 1/8 teaspoon salt and cayenne in now-empty processor and pulse until shrimp are finely chopped, about 8 pulses. Add remaining shrimp (2 cups) to shrimp mixture in processor and pulse until coarsely chopped, about 4 pulses, scraping down sides of bowl as needed. Transfer shrimp mixture to bowl and stir in green onions.
  • Divide shrimp mixture into 4 (3/4-inch-thick) patties (about 1/2 cup each). Working with 1 patty at a time, dredge both sides of patties in breadcrumbs, pressing lightly to adhere; transfer to plate.
  • Heat oil in 12-inch nonstick skillet over medium heat until shimmering. Place patties in skillet and cook until golden brown on first side, 3 to 5 minutes. Carefully flip and continue to cook until shrimp registers 140 to 145 degrees and second side is golden brown, 3 to 5 minutes longer. Transfer burgers to paper towel-lined plate and let drain, about 30 seconds per side. Spread tartar sauce on bun bottoms, then place burgers and lettuce on top. Cover with bun tops.

6 plum tomatoes
1/4 cup olive oil
20 uncooked large shrimp, peeled, deveined, tails left intact
1 tablespoon minced shallot
1 tablespoon minced garlic
1/3 cup dry white wine
1/3 cup chopped fresh cilantro
2 tablespoons fresh lemon juice
1/2 cup whipping cream
6 tablespoons (3/4 stick) unsalted butter, cut into pieces
Salt and freshly ground pepper
12 ounces freshly cooked fettuccine

Steps:

  • Drop tomatoes in large saucepan of boiling water for 10 seconds. Transfer to bowl of cold water using slotted spoon. Drain. Pull off skins using small knife. Peel, seed and chop tomatoes. Heat oil in heavy large skillet over medium-high heat. Add shrimp and cook until just pink, turning occasionally, about 2 minutes. Transfer to platter. Tent with foil to keep warm. Add shallot and garlic to skillet and sauté 1 minute. Add tomatoes, wine, cilantro and lemon juice and cook until mixture is reduced by half, stirring frequently, about 2 minutes. Add cream and boil until mixture is reduced by half, stirring occasionally, about 3 minutes. Remove pan from heat. Add butter 1 piece at a time, whisking until melted. Season sauce with salt and pepper. Mound fettuccine on plates. Top with shrimp. Spoon sauce over.

1 cup uncooked stone-ground grits
1 large garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon pepper
4 cups water
2 cups shredded cheddar cheese
1/4 cup butter, cubed
1 pound peeled and deveined cooked shrimp (31-40 per pound)
2 medium tomatoes, seeded and finely chopped
4 green onions, finely chopped
2 tablespoons chopped fresh parsley
4 teaspoons lemon juice
2 to 3 teaspoons Cajun seasoning

Steps:

  • Place the first 5 ingredients in a 3-qt. slow cooker; stir to combine. Cook, covered, on high until water is absorbed and grits are tender, 2-1/2-3 hours, stirring every 45 minutes., Stir in cheese and butter until melted. Stir in remaining ingredients; cook, covered, on high until heated through, 15-30 minutes.

1 cup stone-ground white grits
5 cups water, plus more for soaking grits
Coarse salt and freshly ground pepper
2 1/2 ounces mild cheddar cheese, grated (about 2/3 cup)
1 tablespoon unsalted butter
2 slices thick-cut bacon (2 ounces), chopped into 1/4-inch pieces
1 garlic clove, minced
1/4 medium onion, finely chopped
1/4 green bell pepper, finely chopped
1 pound medium shrimp, peeled and deveined
Coarse salt and freshly ground pepper
1 tablespoon safflower oil
1 tablespoon all-purpose flour
3/4 cup homemade or store-bought low-sodium chicken stock
1 tablespoon fresh lemon juice

Steps:

  • Make the grits: Place grits in a bowl, and cover with cold water by about 3 inches. Stir grits so that bits of husk rise to the top; pour off top layer of water. Strain through a fine sieve, and transfer to a medium saucepan. Gradually whisk in 5 cups water and 1 teaspoon salt. Bring to a simmer, whisking, until beginning to thicken. Reduce heat, and simmer gently, stirring occasionally and scraping bottom and sides of pan with a wooden spoon, until thick and creamy, about 45 minutes. Remove from heat. Let stand, covered, for 30 minutes or up to 1 hour.
  • Meanwhile, make the shrimp: Cook bacon in a large skillet over medium heat until beginning to crisp, about 5 minutes; transfer to a plate using a slotted spoon. Cook garlic, onion, and bell pepper in bacon fat, stirring occasionally, until just tender but not browned, 2 to 3 minutes.
  • Season shrimp on both sides with salt and pepper. Raise heat to medium-high; push vegetables to edge of skillet. Add oil, and heat until shimmering. Sear shrimp in a single layer for 2 minutes. Flip, and sear for 1 minute. Push shrimp to edge of skillet; sprinkle flour into center. Cook, stirring flour into vegetable-shrimp mixture, for 2 minutes. Add stock. Simmer, stirring, until sauce thickens, about 2 minutes. Add lemon juice, and stir in reserved bacon. Season with salt and pepper.
  • Just before serving, heat grits over medium-low. Stir in cheese and butter; season with salt and pepper. Serve shrimp over grits on warmed plates.
