A wonderful baked chicken recipe that's quick and easy! Using just a few handy ingredients, create a delicious main dish, that also makes great leftovers - if there are any! Serve with a salad and pasta or rice for a quick, scrumptious dinner.

2 tablespoons olive oil
1 clove garlic, minced
1 cup dry bread crumbs
⅔ cup grated Parmesan cheese
1 teaspoon dried basil leaves
¼ teaspoon ground black pepper
6 skinless, boneless chicken breast halves

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a bowl, blend the olive oil and garlic. In a separate bowl, mix the bread crumbs, Parmesan cheese, basil, and pepper. Dip each chicken breast in the oil mixture, then in the bread crumb mixture. Arrange the coated chicken breasts in the prepared baking dish, and top with any remaining bread crumb mixture.
  • Bake 30 minutes in the preheated oven, or until chicken is no longer pink and juices run clear.

Buttery, baked chicken with a garlic parmesan breading. A simple butter mixture bakes into the garlic parmesan chicken to keep it tender.

6 boneless skinless chicken breast halves
1/4 cup butter ((for melting in the pan))
1/2 cup dry bread crumbs
1/2 cup grated Parmesan cheese
2 teaspoons parsley
1/2 teaspoon salt
1/8 teaspoon pepper
1/4 cup milk
1/4 cup butter ((melted))
2 cloves garlic ((minced))
2 tablespoons lemon juice
Paprika

Steps:

  • The chicken breasts we used were large (3 chicken breasts = 2 1/3 pounds). If the chicken breasts you are using are also large cut them in half to get 6 pieces.
  • Place the chicken breasts in a zippered bag. Use the side of a meat tenderizer to pound the chicken breasts to 1/2" thickness throughout so they cook evenly.
  • Preheat the oven to 350 degrees. Place 1/4 cup butter in a 9x13 pan and place it in the oven for the butter to melt while the oven heats.
  • In a bowl, mix the breadcrumbs, cheese, parsley, salt and pepper. Place milk in another shallow bowl.
  • Dip chicken in milk, then roll it in the crumb mixture.
  • Place chicken in the baking dish with the melted butter.
  • Combine the butter, garlic and lemon juice and drizzle over the chicken, then sprinkle on the paprika.
  • Cover the pan loosely with foil and bake for 20 minutes.
  • Uncover the pan, turn the chicken and bake uncovered for an additional 15 minutes. The baking time will depend on the thickness of the chicken, so be sure to check it to make sure it is thoroughly cooked. The internal temperature should be 165 degrees Fahrenheit.

4 skinless, boneless chicken breast halves
salt to taste
¾ cup bread crumbs
½ cup Parmesan cheese
1 teaspoon dried basil
¼ teaspoon ground black pepper
2 tablespoons olive oil
1 tablespoon crushed garlic

Steps:

  • Season chicken breasts with a little salt.
  • Mix bread crumbs, Parmesan cheese, basil, and pepper in a bowl.
  • Heat olive oil and garlic in a skillet over medium heat until fragrant, 1 to 2 minutes.
  • Dip chicken breasts in the garlic oil, then into the bread crumb-Parmesan mixture. Place chicken in a baking dish.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

6 boneless skinless chicken breast halves
1 1/2 teaspoons fresh rosemary, minced or 1/2 teaspoon dried rosemary
2 garlic cloves, minced
1/2 teaspoon fresh ground black pepper
1/2 teaspoon salt
2 tablespoons extra virgin olive oil
4 -6 tablespoons white wine (optional)
1/4 cup balsamic vinegar

Steps:

  • Rinse the chicken and pat dry. Combine the rosemary, garlic, pepper, and salt in a small bowl and mix well. Place chicken in a large bowl. Drizzle with the oil, and rub with the spice mixture. Cover and refrigerate overnight.
  • Preheat oven to 450. Spray a heavy roasting pan or iron skillet with cooking spray. Place chicken in pan and bake for 10 minute Turn chicken over. If drippings begin to stick to the pan, stir in 3-4 Tbs water or wine if using.
  • Bake about 10 min til thermometer registers 160 and juices run clear. If the pan is dry, stir in another 1-2 Tbs of water or wine to loosen the drippings. Drizzle the vinegar over the chicken in the pan.
  • Transfer the chicken to plates. Stir the liquid in the pan and drizzle over the chicken.
