SOUS VIDE PRIME RIB ROAST

5 -7 lb prime rib roast
1 cup unsalted butter, softened
6 cloves garlic, minced
2 Tbsp fresh rosemary, chopped
2 Tbsp fresh thyme, chopped
1 Tbsp salt
1 Tbsp Lawry's seasoning salt
1 Tbsp black pepper

Steps:

  • Set sous vide machine to 56C/133F.
  • Salt the rib roast to taste. Put the roast in a freezer bag, and remove the air through a vacuum sealer or the displacement method. Drop prime rib in the bath for 8 hours.
  • Mix together softened butter, garlic, rosemary, thyme, salt and Lawry's seasoning salt together in a bowl until the compound butter is spreadable.
  • Remove bag from bath and immediate transfer the roast into an ice bath Let t.he roast chill for 10 minutes. Remove bag from ice bath, take rib roast out of the bag and thoroughly pat dry.
  • Preheat oven for 475F. Evenly coat garlic herbed compound butter on the entire prime rib. Place rib roast on a baking rack pan and cook for 15 minutes. Check with a meat thermometer to ensure that the internal temperature is 110F or your desired serving temperature.
  • Remove rib roast from oven. Let rest for 5 minutes. If it is a bone-in roast, carefully carve off the bones making sure not to cut into the roast. Carve the prime rib into slabs and enjoy this heavenly piece of meat. *Pro tip - brush the excess butter and garlic mixture from the pan onto each piece before serving.

Super juicy, tender, and flavorful sous vide prime rib with a perfect temperature throughout the entire cross section of the roast. Serve with sauteed green beans, roasted or mashed potatoes, etc. A nice, creamy horseradish sauce is also delicious with prime rib.

1 (5 pound) three-bone standing rib roast, chine bone removed
2 tablespoons kosher salt, divided, or to taste
4 tablespoons unsalted butter, cut into 1/2-inch cubes
4 each fresh thyme sprigs
3 cloves garlic, crushed
1 tablespoon ground black pepper
flaky sea salt to taste
6 ounces fresh shiitake mushrooms, stemmed and coarsely chopped
1 cup dry red wine
2 cups beef broth

Steps:

  • Prepare a thermocirculator and water bath according to manufacturer's directions. Set thermocirculator to 135 degrees F (57 degrees C) and allow water bath to come up to temperature. Season rib roast evenly with 1 tablespoon salt and transfer to a large vacuum-sealable bag; arrange butter cubes, thyme sprigs, and crushed garlic around rib roast in bag.
  • Seal bag with a vacuum sealer according to manufacturer's directions. Transfer vacuum-sealed rib roast to warm water bath with thermocirculator, cover vessel with aluminum foil to reduce evaporation, and cook for 6 hours. Remove rib roast from bag; roast will be at 135 degrees F (57 degrees C) when pulled from water bath. Transfer to a rimmed sheet pan lined with paper towels and gently pat dry; reserve contents remaining in bag.
  • Preheat the oven to broil with an oven rack positioned about 10 inches below the heat source. Line a rimmed baking sheet with aluminum foil and fit with a wire rack.
  • Season rib roast evenly with remaining tablespoon salt and pepper and place on the prepared baking pan.
  • Cook rib roast in the preheated oven until fat cap is deeply caramelized, 8 to 10 minutes. Transfer rib roast to a large cutting board and let rest for 10 minutes before slicing against the grain into 1- to 1 1/2-inch thick slices; garnish sliced prime rib with flaky sea salt to taste.
  • While rib roast is in the oven, combine reserved contents from vacuum bag and mushrooms in a medium saucepan and cook over medium-high heat, stirring occasionally, until mushrooms are mostly tender and liquid has reduced completely, 8 to 10 minutes. Add wine and continue cooking, stirring occasionally, until wine is almost completely reduced, about 5 minutes. Add beef broth and continue cooking, stirring occasionally, until sauce is thick enough to coat the back of a spoon, about 15 minutes; remove thyme sprigs and discard. Season mushroom sauce to taste with salt and serve alongside sliced prime rib.

I love prime rib and I've tried several methods of cooking it. This Christmas I experimented with the sous vide method and there was not a disappointed person at dinner. Cooking meat using the sous vide way is excellent, and you will not be disappointed. But plan ahead, because this takes at least 24 hours. The seasoning measurements are approximate! You basically want to coat the roast with the dry seasonings. I didn't measure how much I used. As far as the sear, you can do it in the broiler, on the stove or on the grill. I explain the method I used, and it turned out amazingly well!

8 lbs standing rib roast, bones separated
1/4 cup McCormick's Montreal Brand steak seasoning
1/4 cup garlic powder
1/4 cup kosher salt
kitchen twine
2 tablespoons oil rendered from salt pork or 2 tablespoons other oil

Steps:

  • Bind rib roast with twine.
  • Doing one side at a time, coat each side with steak seasoning, then garlic powder, then salt.
  • Vacuum seal the roast.
  • Cook in 133 F water bath for 24-36 hours.
  • For the bones, repeat steps 2 and 3 and freeze for another time or cook right away at 133 F for 72 hours.
  • About an hour before you remove the roast from the bag, heat up a cast iron skillet in the oven at 400°F.
  • Remove roast from bath and bag. Reserve the liquid to use as an au jus later.
  • Pat the roast dry.
  • Move the cast iron skillet to the stove using mits, and turn the heat to medium high.
  • Add the oil to the skillet.
  • Sear each side of the roast for 2-3 minutes.

  • There is no need to let the roast rest. Enjoy! Reheat slices in zipper bags using the sous vide method too. This will avoid over cooking the meat when reheating.
