when i google "how to make powdered sour cream" i get a page to patent my idea. i think that's a bad sign. this is my logic, it may or may not work. if you try it let me know how it went! i would use pre-made powdered sour cream but it's about $35 plus shipping for one tin. i think not.

2 tablespoons powdered milk (or powdered buttermilk maybe?)
1/2 teaspoon white vinegar
1 tablespoon onion salt
1/2 tablespoon dill
2 tablespoons parmesan cheese (i'm thinking the powdered kraft type)

Steps:

  • stir all together.
  • adjust for taste and put in a shaker container.
  • add liberally to buttered popcorn, chips, crackers, whatever.

Simple and delicious! I usually put a layer of peeled baby carrots under the salmon, spray them with oil and season them with creole seasoning & garlic powder. Enjoy!

3 lbs fresh salmon fillets, boneless & skinless (frozen works too but cooks longer)
1 cup sour cream
1 onion, sliced very thin, recipe calls for grated
1 lemon, juice of
season salt, I use Tony Chachere's Creole
cooking spray

Steps:

  • Preheat oven to 400.
  • Spray baking sheet with 1/2" sides with oil.
  • Place Salmon on it or a bed of seasoned carrots and then Salmon.
  • Squeeze lemon juice over Salmon.
  • Sprinkle seasoned salt over Salmon.
  • Spread sour cream over Salmon.
  • Layer onions over sour cream (make sure your onions are sliced VERY thin or are grated so that they melt into the sour cream).
  • Bake 30 minutes to an hour (depending on if you're using frozen fish and carrots) until fish is tender and flakes easily. Sauce should be rich and slightly brown.

My recipe for a delicious non-vegetarian sour cream and onion party dip (most dips are already non-vegetarian, containing gelatin).

16 ounces sour cream
2 ounces softened cream cheese
2 tablespoons instant beef bouillon powder (or to taste)
2 tablespoons instant onion flakes
1 teaspoon onion powder
1/2 teaspoon sugar
1 dash white pepper
1 dash Worcestershire sauce
1 1/2 tablespoons dried chives (or dried dill)

Steps:

  • WHIP all ingredients except chives in a medium bowl using a hand-held mixer, on medium-low speed.
  • STIR in 1 1/2 tablespoons dried chives (or dried dill).
  • REFRIGERATE if desired while onion flakes soften up slightly (however, dip may be served immediately).
  • GARNISH as desired.
  • SERVE with your favorite dip chips or crackers and ENJOY!

I noticed most of the "homemade sour cream" recipes on this site are in fact homemade sour cream *substitutes* not real sour cream. This is a recipe for real homemade sour cream I found on motherearthnews.com. I haven't made it yet but I'll be trying it soon.

1 cup heavy cream
1/4 cup sour cream or 1/4 cup buttermilk

Steps:

  • In a screw-top jar or mason jar with lid, combine the heavy cream and sour cream (or buttermilk).
  • Shake the ingredients up a bit to thoroughly mix and let stand, covered, at room temperature for about 24 hours or until it becomes very thick.
  • If you want to make a lighter sour cream, substitute whole milk for 1/2 cup of the heavy cream.
  • You can store your sour cream in the refrigerator in the original jar you mixed it in (or use some other resealable container) for up to one week. Make sure that your sour cream is well chilled before using.
  • Makes 10 1/8-cup servings.
